1 cup brown sugar
1 tablespoon vegetable oil
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Prepare an 8-inch square baking dish with cooking spray.
  • Spread oats into the prepared baking dish.
  • Beat milk, eggs, brown sugar, vegetable oil, vanilla extract, cinnamon, and salt together in a large bowl until smooth; pour over oats.
  • Bake in preheated oven until oats are softened and mixture thickened, 50 to 55 minutes.

1 medium banana (smashed (about 1/2 cup))
1/4 cup brown sugar (packed)
1 tablespoon vanilla extract
2 1/2 teaspoons cinnamon (divided)
1/2 teaspoon salt
2 teaspoons baking powder
3 cups old fashioned oats
1 cup milk (cow's milk or non-dairy)
1 tablespoon granulated sugar

Steps:

  • Preheat oven to 350°F. Spray an 11x7 or a 9x13 pan with nonstick cooking spray.
  • Whisk eggs, mashed banana, brown sugar, and vanilla until smooth. Stir in 2 teaspoons cinnamon, salt, and baking powder. Stir in oats and milk. Spread in prepared pan.
  • Stir 1 tablespoon granulated sugar and remaining 1/2 teaspoon cinnamon. Sprinkle over unbaked oatmeal. Bake for 28-34 minutes until oatmeal is browned and not jiggly in the center. Cool slightly before serving. Serve with syrup and/or fruit or vanilla yogurt.
  • Store in refrigerator up to 2 days. You can also portion and freeze for quick morning breakfasts!

1/2 cup maple syrup
1 1/2 cups whole milk
2 large eggs
1 teaspoon vanilla extract
1 1/2 teaspoons baking powder

Steps:

  • Heat oven to 350 degrees. Butter a 9X9 inch baking pan and set aside.
  • To a large mixing bowl, add cool melted butter and maple syrup. Whisk together until smooth. Pour in milk and add eggs. Whisk together. Add in baking powder, cinnamon, and vanilla. Mix until well blended.

I used Craisins and frozen raspberries often. This is another recipe from the wall of our old house. Which means, I have no idea where it came from after 7 years. I'm posting these because they are my favorites if they made it to the wall. As one reviewer said, it holds well in the fridge, because I usually make mine on a Sunday night, then the kids have something hearty and warm in the morning before the mad dash to school!
