Ingredients in a marinade can be varied, but it is important to use wine, vinegar, lemon juice, or some acidic liquid to break down the connective tissues. This process will make the steak more tender. Remaining marinade ingredients add flavor. Use a good-quality olive oil or walnut oil; add good-quality wine or vinegar and a combination of fresh and dried herbs, seasonings, garlic and soy sauce to make a flavorful marinade.

1 teaspoon sugar
1 tablespoon Worcestershire sauce

Steps:

  • Place all ingredients in glass screw-top jar; shake vigorously.
  • Arrange meat in shallow glass dish; pierce with a fork.
  • Pour marinade over meat; turn to coat.
  • Cover and refrigerate several hours or overnight, turning meat occasionally.
  • Remove meat from marinade; pat dry.
  • Remove any pieces of spices or herbs that may stick to meat.
  • This recipe is a steak marinade, but the ingredients can be adapted for other meats using the same techniques.

  • Marinade for 1/2 to 1 hour.
  • Remove and pat dry.
  • Discard garlic. Place steaks on a hot charcoal or gas grill and cook until rare to medium.

  • Preheat broiler. Place steak on a broiler pan; sprinkle with pepper. Broil 4 in. from heat 7 minutes. Meanwhile, mix vinegar and steak sauce., Turn steak; drizzle with 1 tablespoon vinegar mixture. 2 ½ cups apple cider vinegar
3 eggs
1 ½ cups all-purpose flour
1 cup oil for frying

Steps:

  • Pound steaks using a meat mallet to tenderize. Place in a shallow glass dish, and pour the vinegar over the steaks so that they are covered. Refrigerate for 30 to 45 minutes to marinate.

2 3/4-inch-thick boneless rib eye steaks or other tender beefsteaks (about 6 ounces each)
3 teaspoons olive oil
1/3 cup chopped shallots
2 teaspoons chopped fresh rosemary
3 tablespoons balsamic vinegar

Steps:

  • Sprinkle steaks with salt and generous amount of pepper. Rub 1 teaspoon oil over bottom of heavy medium skillet. Heat skillet over medium-high heat. Add steaks to skillet and cook to desired doneness, about 4 minutes per side for rare. Using tongs, transfer steaks to plate; tent with foil to keep warm.
  • Add remaining 2 teaspoons oil to same skillet. Reduce heat to medium-low.
