Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Arrange the apricots in a 9x12-inch baking dish and sprinkle with white sugar. Mix together brown sugar and flour in a bowl; cut in the butter with a pastry cutter until the mixture resembles coarse crumbs. Lightly stir in the rolled oats and spoon the mixture over the apricots.
- Bake in the preheated oven until the fruit is soft and the topping is browned and crisp, 35 to 40 minutes.

OATMEAL FRUIT CRISP
This is a fast dessert recipe that lets you use up apples, pears, berries you have on hand. It is good to use up fresh fruit in season like apples and rhubarb. You can also use frozen sliced fruit - it doesn't need to be thawed before baking. This is a tried and true recipe made many times - Canadian Comfort Food for those long cold winters!

- Preheat oven to 375°F.
- Slice apples in large greased large casserole dish. You can leave them unpeeled or peeled as you wish.
- Combine dry ingredients, then cut in margarine until crumbly. Put over fruit and cook for approximately 35 to 45 minutes until fruit is cooked through. Check with a knife - if the fruit is soft and the oatmeal crisp is brown, it is done.
- You can substitue diced rhubarb, pears, berries like saskatoons or blueberries for part or all of the apples. You may want to sprinkle a bit of cornstarch over top before you put the oatmeal over top to thicken the fruit as it cooks. Apples don't need thickening, but berries and pears are juicier.
- Serve warm with vanilla ice cream.
APRICOT CRUMBLE WITH OATMEAL TOPPING
Because apricots bake so quickly (the crumble needs only 20 minutes in a 400-degree oven) it's important to bake the topping for this crisp ahead.

- First make the topping. Preheat the oven to 350 degrees. Cover a baking sheet with parchment. Place the oats, rice flour, whole-wheat flour or ground flaxseeds, turbinado sugar, salt and nutmeg in a food processor fitted with the steel blade and pulse several times to combine. Add the butter and pulse until the butter is evenly distributed throughout the grain mix. The mixture should have a crumbly consistency.
- Spread the topping over the parchment-covered baking sheet in an even layer. Place in the oven and bake 10 minutes. Rotate the pan, stir the mixture, and bake another 10 minutes, until nicely browned. Remove from the heat and allow to cool. You can keep this in an airtight container or freezer bag in the freezer for several weeks.
- Raise the oven heat to 400 degrees. In a large bowl, toss together the apricots, honey or agave nectar, cinnamon, cornstarch, slivered almonds, vanilla and almond extract. Cover and let sit for 15 minutes.
- Butter a 2-quart baking dish. Scrape the fruit and all of the juice in the bowl into the baking dish. Spread the crumble topping over the apricots in an even layer. Bake 20 minutes, or until the fruit is bubbling and the topping is nicely browned. Remove from the heat and allow to cool for at least 10 minutes before serving.

- For topping:
- Mix flour, oats, brown sugar, cinnamon, and salt in medium bowl. Add butter and rub in with fingertips until mixture comes together in moist clumps. Stir in walnuts.
- Do ahead: Can be made 1 day ahead. Cover and chill.
- For filling:
- Position rack in center of oven and preheat to 350°F. Mix sugar, cornstarch, cinnamon, and salt in large bowl. Add apricots and toss to coat. Transfer apricot mixture to 11x7x2-inch glass baking dish. Sprinkle topping over.
- Bake crisp until filling is bubbling around edges and topping is crisp and golden, about 1 hour. Cool at least 20 minutes. Serve warm with ice cream.

- Preheat oven to 350 degrees. In a medium bowl, combine oats, flour, baking powder, and salt; set aside.
- In the bowl of an electric mixer, cream butter and sugars on medium speed until smooth; beat in egg and vanilla. With mixer on low speed, add oat mixture, and mix until just combined. Stir in apricots and almonds by hand.
- Divide dough into 12 pieces, and roll into balls. Place balls 3 to 4 inches apart on baking sheets. Using your fingers, flatten balls to about a 3/4-inch thickness.
- Bake cookies until edges begin to brown, 25 to 30 minutes. Let cool 5 minutes on baking sheet, then transfer to a wire rack to cool completely.

OATMEAL SCONES WITH DRIED APRICOTS AND CRANBERRIES
I found this recipe on the New York Daily News website. One of the reasons I like this recipe so much is that it uses the food processor, which combines the scone dough beautifully. If you don't have a food processor you can use your hands, and I can guarantee a good workout in the process. Another reason I like this recipe is because it uses dried cranberries (craisins). I love these little babies.

- Adjust the oven rack to center position and heat oven to 375 degrees.
- Spread the oats in an even layer onto a jelly roll pan or cookie sheet.
- Place in the oven and toast until golden brown and fragrant, about 8 to 10 minutes.
- Remove from the oven and cool completely.
- Wipe the sheet, line with some parchment paper and increase oven temperature to 400 degrees.
- Place the flour, sugar, baking powder, baking soda and salt in the bowl of a food processor fitted with a steel blade.
- Blend briefly to combine.
- Evenly distribute the butter over the dry ingredients and process for a half-dozen 1-second pulses.
- Add the oats and fruit and pulse an additional 6 times, or until the largest piece of butter is about the size of a pea.
- Transfer to a large bowl.
- Stir the buttermilk and egg together in a small bowl or large measuring cup until well-combined.
- Add the mixture to the dry ingredients and mix with a fork or rubber spatula until dough begins to form large wet clumps.
- Turn onto the countertop and knead by hand, incorporating any dry floury bits until it comes together into a rough, sticky ball.
- Pat down into a 6- to 7-inch disk and cut into 8 wedges.
- Transfer the scones onto a prepared baking sheet and bake until dark golden brown, about 15 minutes.
- Cool on a rack for at least 10 minutes before serving.
