ULTIMATE BANGERS AND MASH

- Preheat the oven to 400 degrees F.
- Make the onion gravy in advance. See our recipe for the BEST onion gravy.
- To Make the Mash: Place the potatoes in a pot of water and add the salt. Bring to a boil, lower the heat to a steady simmer and cook for about 15-20 minutes or until they potatoes are just tender when pierced with a knife. Be careful not to over-boil them. Thoroughly drain the potatoes and place them back in the empty pot set over very low heat just to maintain warmth. If using a ricer or food mill (this creates the most optimal texture), run the potatoes through it now while they're hot. If using a hand masher mash the potatoes while they're hot. (Avoid using an electric mixer or food processor. See blog post for explanation.) Mash the potatoes until fluffy and you've reached the desired degree of smoothness. Be careful not to over-mash or the potatoes will become gluey. Use a spoon to stir in the butter. Once melted stir in the hot milk gradually, allowing time for the potatoes to absorb the liquid after each addition. Add more hot milk as needed to achieve desired consistency. Season with salt and pepper to taste.
- To Prepare the Sausages: While the potatoes are boiling place the sausages in a baking dish with a little oil and roast the sausages for about 10 minutes on each side or until nicely browned. (Alternatively you can fry the sausages but baking them creates an especially nice crispy outer shell with a juicy interior.) For sausage-making enthusiasts we highly recommend our Homemade British Bangers.
- To serve, place a mound of mashed potatoes on each plate, lay the sausages on the mashed potatoes and top with onion gravy. Peas are a traditional side.

MASHED CHEESY POTATOES & GRAVY
These are VERY CHEESY MASHED POTATOES! Be warned: there's so much cheese. In the best way possible.

- Put the potatoes in a pot with salted water to cover. Bring to a simmer over medium heat and cook until tender all the way through, about 10 minutes. Drain.
- Combine the butter, heavy cream and 1 1/2 teaspoons salt in the same pot you cooked the potatoes in and melt over low heat. Use a masher to puree the potatoes right back into the pot while still hot. Stir in the sour cream. Add large handfuls of cheese and stir and fold the potatoes over themselves until the cheese melts, then add another handful. If it gets too thick and hard to stir before you've added all the cheese, add a few tablespoons of additional cream. Season with salt and pepper. Serve and add the Gravy on top.
- Heat the drippings in a small saucepan (or the meatloaf pan) over medium heat. Whisk in the flour until smooth. Cook and stir until lightly toasted, 1 to 2 minutes. Stir in the thyme. Whisk in the beef stock until smooth. Bring to a simmer over medium heat and stir in the Worcestershire. Simmer until thickened, 4 to 5 minutes. Season with salt and pepper.

- Season chuck roast with salt and black pepper; sear in a large, deep skillet or Dutch oven over medium heat until browned, about 10 minutes per side.
- Pour beef broth and water into the skillet with roast. Arrange onion wedges and garlic cloves around the meat. Spread carrots atop roast and place sprig of rosemary atop carrots. Turn heat to medium-low and simmer until tender, about 6 hours.
- Cover potatoes with water in a large pot and bring to a boil; reduce heat to low and simmer until tender, about 30 minutes. Drain. Mash potatoes with butter and half the evaporated milk until smooth; slowly mash remaining evaporated milk into potatoes to achieve the desired consistency. Season with salt.
- Remove 1 or 2 cloves of garlic from skillet and mash cloves on top of the roast; serve with mashed potatoes.

- For Mashed Potatoes:.
- Cook the potatoes in a large pot of boiling salted water for 15 to 20 minutes, until very tender.
- Meanwhile, heat the butter and half-and-half in a small saucepan.
- Drain the potatoes.
- While still hot, place the potatoes in the bowl of an electric mixer fitted with the paddle attachment.
- With the mixer on low speed, slowly add the hot half-and-half mixture, the sour cream, 2 teaspoons salt, and the pepper.
- Mix until the potatoes are mashed but not completely smooth.
- Serve hot with gravy on the side.
- For Gravy:.
- In a large (10- to 12-inch) sauté pan, cook the butter and onions on medium-low heat for 12 to 15 minutes, until the onions are lightly browned.
- Don't rush this step; it makes all the difference when the onions are well cooked.
- Sprinkle the flour into the pan, whisk in, then add the salt and pepper.
- Cook for 2 to 3 minutes.
- Add the hot chicken stock and Cognac, and cook uncovered for 4 to 5 minutes, until thickened.
- Add the cream, if desired, and serve.

- Place potatoes in a Dutch oven; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, until tender, 15-20 minutes. Drain, reserving 1 cup cooking water. Add water, olive oil, garlic and parsley to pan. With a mixer, beat potatoes until light and fluffy, 3-5 minutes. Season with 1/2 teaspoon salt and 1/4 teaspoon pepper. BEEF AND POTATOES WITH LEFTOVER GRAVY
Whenever I make a pot roast or brisket, I always have gravy leftover, and I LOATHE to throw away this flavorful liquid. Both my mother and my father-in-law make a great beef/potato dish, so, with theirs in mind, I came up with this. If you don't have enough gravy, add a little broth of your choice. Adjust meat/potato ratio based on your dietary preferences - I'll probably use less potato next time.

Steps:
- Remove any vegetables from the gravy and reserve.
- In a large skillet, combine potatoes and gravy/broth.
- Bring to boil.
- Reduce heat to medium.
- Cover the pan tightly; keep it covered between steps to preserve the moisture.
- Simmer for 15-20 minutes, until potatoes are almost ready.
- Use this time to prepare your beef - chop (if using steak/roast) and clean off as much fat as possible.
- Remove potatoes to a bowl, taking care to leave the leftover liquid in the pan.
- Add wine and deglaze.
- Add beef, stirring to coat with the sauce.
- Reduce heat to medium-low, and simmer for 30 minutes
- Add potatoes back to the pan, stir.
- Simmer for another 10-15 minutes.
- (Add vegetables from the gravy - I had mushrooms in mine).
- Reduce heat to low, and simmer until ready to serve; add more broth/wine if the pan is too dry.
- Slice english cucumbers into 3-4" "sticks", and serve on the side. For a bit more bite, use pickles instead.

- Fry the onions in a hot dry skillet, sprinkle with the sugar or sweetener and cook until the onions start to brown. Add margarine and cook until they are tender, stir occasionally.
- Remove from heat.
- Spray a shallow baking dish with veggie oil and spread half the mashed potatoes on the bottom, then the meat, onions, peas and gravy. Cover with the remaining mashed potatoes, sprinkle with the Parmesan. Bake in a 375 F oven for 35 minutes. Sprinkle with paprika and serve.

- Set instant pot/pressure cooker to saute. Salt and pepper the meat generously all over. Drizzle oil in the pot and add meat chunks, allowing to brown for 2-3 minutes, then flip over and sear on the other side for 2-3 minutes. Sprinkle onion soup mix over the meat, add potatoes and broth.
