Tempura-Fried Soft-Shell Crab Sandwiches with Tartar Sauce Slaw and Crispy Old Bay Chips image

1/2 cup finely diced cornichons
1/2 cup mayonnaise
2 tablespoons capers, drained
1 tablespoon Dijon mustard
Pinch sugar
Juice of 1/2 lemon
1/4 Spanish onion, grated
Kosher salt and freshly ground black pepper
1/2 small head white cabbage, shredded
1 bag potato chips, such as Lay's or Kettle
1 tablespoon seafood seasoning, such as Old Bay
Canola oil, for deep-frying
3 cups rice flour
Kosher salt and freshly ground black pepper
Few dashes hot sauce, optional
4 soft-shell crabs, cleaned
4 soft potato buns
2 heirloom tomatoes, sliced

Steps:

  • For the tartar sauce slaw: Whisk together the cornichons, mayonnaise, capers, mustard, sugar, lemon juice, onion and some salt and pepper in a large bowl. Add the cabbage and toss to coat. Cover and refrigerate for 30 minutes.
  • For the Old Bay potato chips: Meanwhile, preheat the oven to 300 degrees F. Spread the potato chips in an even layer on a baking sheet and bake, just to warm, 2 minutes. Put the Old Bay in a small mesh strainer and tap evenly over the chips; toss the chips lightly.
  • For the soft-shell crabs: Set a rack in a baking sheet. Heat 3 to 4 inches of oil in a Dutch oven over medium heat until it registers 375 degrees F on a deep-frying thermometer. Whisk together 2 cups of the rice flour and 2 cups water until smooth, then season with salt and pepper and some hot sauce if using.
  • Put the remaining 1 cup rice flour in a shallow dish and season with some salt and pepper. Sprinkle the crabs with salt and pepper.
  • Dredge 2 crabs in flour and tap off the excess. Dip in the tempura batter, letting any excess run off. Fry until golden brown, crispy and just cooked through, turning occasionally, about 5 minutes. Drain on the rack. Repeat with the remaining 2 crabs.
  • For the sandwiches: Put some of the slaw on the bottom of each bun and top with a fried crab. Add a bit more slaw and a tomato slice and top with chips. Close sandwiches with the tops of the buns and serve immediately.

1 cup chopped seeded plum tomatoes (about 8 ounces)
1 1/2 tablespoons olive oil
3/4 cup chopped white onion
2 garlic cloves, chopped
1/2 cup chopped pitted green olives
2 pickled jalapeño chiles, chopped
1/2 teaspoon dried marjoram
1/4 teaspoon dried thyme
1/4 teaspoon dried oregano
1 1/2 cups shredded fresh crabmeat
2 tablespoons chopped fresh Italian parsley
Dough
2 cups freshly ground corn masa dough for tortillas (about 17 ounces)
2 tablespoons lard or solid vegetable shortening
1/4 cup all purpose flour
1 teaspoon baking powder
3/4 teaspoon salt
Warm water
Vegetable oil (for frying)

Steps:

  • For filling:
  • Puree tomatoes in blender. Heat oil in large skillet over medium-high heat. Add onion and sauté until beginning to brown, about 6 minutes. Add garlic and sauté 30 seconds. Mix in olives, chiles, and dried herbs, then tomato puree. Reduce heat to medium. Simmer until most liquid is absorbed, stirring occasionally, about 5 minutes. Remove from heat. Mix in crab and parsley; season with salt.
  • For dough:
  • Combine fresh masa or masa harina mixture, lard, flour, baking powder, and salt in large bowl. Knead well, adding warm water by tablespoonfuls as needed until dough is soft but not sticky. Divide into 12 balls. Place on sheet of foil. Cover with plastic wrap.
  • Cut out two 8-inch rounds from heavy-duty resealable plastic bag. Place 1 plastic round on bottom half of tortilla press. Place 1 dough round in center and top with second plastic round. Close tortilla press, pressing dough to 5-inch round. Peel off top plastic. Spoon 1 heaping tablespoon filling onto half of dough. Using plastic as aid, fold dough over filling, peel back plastic, and seal edges. Flip turnover onto hand; peel off bottom plastic. Place turnover on foil-lined sheet. Repeat with remaining dough and filling.
  • Pour enough oil into large skillet to reach depth of 3/4 inch. Attach deep-fry thermometer and heat oil to 375°F. Fry 3 turnovers at a time until deep golden brown, about 2 minutes per side. Transfer to paper towels to drain. Arrange turnovers on platter and serve.

fine dry breadcrumb
6 1/2 ounces crabmeat
1/2 cup milk
2 tablespoons flour
1 tablespoon butter
2 beaten eggs
1/2 teaspoon onion, minced
1/2 teaspoon finely chopped parsley
1/2 teaspoon mustard
1/2 teaspoon Worcestershire sauce
1 teaspoon salt
1 dash pepper

Steps:

  • Melt the butter, and blend in the flour, then milk.
  • Cook until thickened, stir continuously.
  • Cut the crabmeat into small pieces, removing fiber.
  • Combine crabmeat with the spices, onion, parsley, and Worcestershire to cream sauce.
  • Lightly sprinkle the breadcrumbs on bottom of pan.
  • Spread the mixture in pan and chill for 1/2 hour.
  • When chilled, mold the mixture into small balls and roll in fine bread crumbs.
  • Then dip in beaten egg, and re-coat in crumbs.
  • Fry in deep fat about 350F, or until lightly browned.
  • Drain on paper towels, stick tooth-picks in and serve!

⅓ cup panko bread crumbs
1 large egg, beaten
3 tablespoons chopped fresh parsley
2 tablespoons mayonnaise
2 teaspoons seafood seasoning (such as Old Bay®)
1 teaspoon yellow mustard
½ pound cooked lump crabmeat, drained
¼ cup panko bread crumbs, or as needed
2 tablespoons coconut oil
½ cup mayonnaise
1 canned chipotle pepper in adobo sauce
1 tablespoon adobo sauce from chipotle peppers
1 tablespoon lemon juice

Steps:

  • Mix 1/3 cup panko, egg, parsley, mayonnaise, seafood seasoning, and mustard together in a medium bowl. Gently fold in crabmeat. Form into 4 patties and coat with remaining panko.
  • Heat coconut oil in a nonstick skillet over medium-high heat. Fry patties until crispy, flipping once, about 12 minutes total.
  • While patties cook, prepare the sauce: Combine mayonnaise, chipotle pepper, adobo sauce, and lemon juice in the bowl of a food processor; process until smooth.
  • Serve crab cakes with sauce on the side.

8 imitation crab sticks
3 eggs
2 tablespoons milk
1 1/2 cups panko breadcrumbs
1 cup all-purpose flour
vegetable oil (for deep frying)

Steps:

  • Heat vegetable oil to 350 degrees.
  • Unwrap crabsticks and line them on foil or a plate.
  • Whisk together eggs and milk to create egg wash.
  • Dredge crab stick in flour; one at a time. (Coat evevly).
  • Then dredge the crabstick in egg wash. (coat evenly).
  • Now roll the crabstick in the panko breadcrumbs until completely covered.
  • Repeat steps 4 thru 6 for about two or three more crabsticks.
  • Deep fry at 350 degrees for about 2 minutes, turning over once. (Do not overcook, as the crab meat will begin to separate into strips.).
  • While these are cooking, prepare the remaining crabsticks.
  • NOTE: Do not overcrowd or cook all at once. Fry in batches for best results.

1 (6 ounce) can crabmeat, drained
1 (4 1/4 ounce) can baby shrimp, drained
1 (6 ounce) can anchovies, drained
1 (17 1/3 ounce) package pepperidge farm frozen puff pastry sheets (2 sheets)
1 egg
oil, for frying
1 tablespoon dijon-style mustard
1/2 tablespoon Worcestershire sauce
1 1/2 tablespoons cream cheese
1 dash garlic powder
1 dash salt
1 dash pepper
1 dash chili powder

Steps:

  • Thaw puff pastry and roll each sheet to a rectangle, 6-by-8-inches.
  • Cut each sheet into 6 even squares.
  • In a bowl, combine Crab Meat, Tiny Shrimp and Anchovies, with dijon-sytle mustard, worcestershire sauce, cream cheese and garlic powder to a smooth filling.
  • Add salt, pepper and chili powder.
  • Place one sixth of the filling onto each pastry square.
  • Beat egg.
  • Brush edges of dough with egg.
  • Fold half the dough over to form triangles.
  • With a fork, seal edges.
  • Fill a fryer or heavy saucepan 2/3 full with oil.
  • Heat oil until it reaches 365 degrees to 370 degrees.
  • Add turnovers, a few at a time, and fry until they are golden brown, crispy and heated through.
  • Turn with slotted spoon while frying.
  • Drain on paper towels.
