DEEP DISH SAUSAGE & CHEESE QUICHE

Deep Dish Sausage & Cheese Quiche image

Brunch is served! Deep Dish Sausage and Cheese Quiche is filled with sausage crumbles and sharp cheddar, which makes a hearty bite for breakfast and beyond.A frozen, unbaked deep dish pie shell can replace the scratch-made crust. This recipe can also be varied with whatever shredded cheese you have on hand.

Provided by Heather Baird

Categories     Breakfast

Time 45m

Number Of Ingredients 14

1 1/2 cups all-purpose flour
1/2 teaspoon fine grain salt
1/2 cup unsalted butter (cold)
5 tablespoons ice water
1 lb. ground pork breakfast sausage
1/2 cup finely chopped onion
1/3 cup chopped green bell pepper
1 1/2 cups shredded extra-sharp cheddar
1 tablespoon all-purpose flour
3 eggs
1 cup evaporated milk
1 tablespoon chopped flat-leaf parsley
1/8 teaspoon fine grain salt (2 pinches)
1/4 teaspoon freshly ground pepper

Steps:

  • In the bowl of a food processor, add the flour and fine grain salt. Pulse to combine. Cube the butter and add it on top of the flour. Pulse 2-3 times until roughly incorporated and large chunks of butter remain. Continue to pulse as you add the tablespoons of water. Pulse until the mixture forms a rough dough to one side of the bowl.
  • Turn the dough out onto a piece of parchment paper and top with a second piece. Roll to a rough 12-inch circle. Remove the top piece of parchment paper and pick up the crust by the paper and invert onto a 9- inch deep dish pie pan. Remove the paper and press the crust into the pan. Fold under the excess dough at the edges and crimp. Transfer to the freezer while you prep the filling.
  • Preheat the oven to 350F.
  • Brown the sausage in a large skillet over medium-high heat. Stir constantly while cooking until well done, about 8 minutes. Remove sausage to a paper towel-lined plate reserving 1 tablespoon of the drippings in the pan.
  • Sauté the onion and bell pepper over medium-high heat until the onions are translucent and the pepper is tender. Let cool slightly. Remove the pie crust from the freezer and place on a baking sheet.
  • In a large bowl, combine the sausage, onion and pepper, sharp cheddar, and all-purpose flour. Toss to combine. Spoon this mixture into the pie crust.
  • In a separate bowl, whisk together the eggs, milk, parsley, salt, and pepper. Pour over the sausage mixture. The egg mixture will disappear to the bottom of the pan - this is normal.
  • Bake for 30-35 minutes, or until golden brown and set. Cool slightly.
  • Slices can be served warm or chilled, but I prefer this hearty sausage quiche warmed.

SAUSAGE & VEGGIE QUICHE RECIPE BY TASTY

Sausage & Veggie Quiche Recipe by Tasty image

Here's what you need: chicken sausage, onion, mushroom, fresh spinach, salt, black pepper, eggs, milk, premade pie crust, parmesan cheese

Provided by Jordan Kenna

Categories     Dinner

Yield 6 servings

Number Of Ingredients 10

½ lb chicken sausage
½ cup onion, chopped
½ cup mushroom, chopped
4 oz fresh spinach, chopped
½ teaspoon salt
½ teaspoon black pepper
6 eggs
1 cup milk
1 premade pie crust, thawed
parmesan cheese, grated

Steps:

  • Cook sausage over medium-high until lightly browned, about 5-7 minutes, being sure to break up the meat into a fine mince.
  • Remove cooked sausage from pan and wipe away excess fat with a paper towel.
  • Add onion and sauté until softened and translucent, about 2 to 3 minutes. Add mushrooms, salt, and pepper and continue to cook for an additional 2-3 minutes.
  • Add chopped spinach and cook until wilted and no extra liquid has accumulated in the bottom of the pan.
  • NOTE: Do your best to use the excessive moisture of the spinach and mushrooms to deglaze the bottom of the pan, scraping away any browned bits from cooking the sausage earlier.
  • Preheat oven to 350˚F (180˚C).
  • Once cooked, remove the spinach and mushroom mixture from the pan and combine it with the reserved cooked sausage. Stir to mix evenly.
  • Combine eggs and milk. Lightly whisk until just combined.
  • Add sausage and spinach mixture to the bottom of a prepared 9-inch (23cm) pie crust, making sure to spread it evenly.
  • Pour in beaten eggs to fill the rest of the pie crust and top with a generous sprinkle of parmesan cheese.
  • Bake at 350˚F (180˚C) for 25 minutes or until the eggs are set and the top is lightly browned. Allow to cool for 10 minutes before slicing and serving.
  • Enjoy!

SAUSAGE AND SPINACH QUICHE

Sausage and Spinach Quiche image

This is my favorite, I make it at least weekly. Good flavorful sausage is key, I like the regular jimmy dean. This recipe is for two pies because I make two at once. They go fast, freeze well, and that means less dishes later.

Provided by celestial_star03

Categories     Breakfast

Time 1h5m

Yield 2 Pies, 16 serving(s)

Number Of Ingredients 8

2 deep dish pie shells
16 ounces jimmy dean sausage
8 eggs
3/4 cup half-and-half
8 ounces frozen spinach, boxed
2 cups fiesta shredded cheese
1/2 teaspoon salt
1 teaspoon pepper

Steps:

  • Cook sausage till browned, breaking it up as you go, drain on paper towels and set aside.
  • Thaw spinach in microwave or if you are cooking fresh you will need almost double. I like the finely chopped that is in a box for 1.00.
  • Get out your pie crusts and line the bottoms with half the spinach, and sausage each.
  • In a larger bowl combine all of the cheese but a handful, the eggs, half and half, salt, and pepper.
  • Pour half of the mixture into each shell and sprinkle the remaining handful of cheese over both.
  • Bake at 350 about 40-45 minutes. You can do a toothpick test, try not to overbake, your eggs won't be as fluffy.
  • if your pie crusts are browning too fast you can cover them in foil just not the whole pie, you want a pretty light golden top and the air to make it rise.
  • Serve warm. You can make the pies the night before and bake in the morning or they do reheat well. If you are freezing let it cool completely then portion out and wrap each slice individually or wrap the whole thing and freeze.

DEEP DISH QUICHE WITH GARNISHES

Deep Dish Quiche with Garnishes image

You can totally eat this simple quiche on its own (the crème fraîche and chives keep it from being boring). But things really start to get interesting when you garnish it with lots of salty/saucy/creamy and fresh toppings, and it turns into a fun party trick for your next brunch.

Yield Makes one 9" quiche

Number Of Ingredients 11

1 full recipe Our Favorite Pie Dough
All-purpose flour (for surface)
2 shallots, finely chopped
2 Tbsp. extra-virgin olive oil
1 1/2 tsp. kosher salt, divided
1 Tbsp. finely chopped chives
8 large eggs
1 3/4 cups half-and-half
1/2 tsp. freshly ground black pepper
1 cup crème fraîche, plus more for serving
Braised Leeks, Peas, and Lettuce, prosciutto or other cured meat and/or salmon, green goddess dressing, avocado, baby greens, and lemon wedges (for serving)

Steps:

  • Roll dough to a 15" round on a lightly floured work surface; trim edges. Fit dough into a 9" springform pan, letting dough fold over itself slightly around the edges so that it creates a gently pleated, rippled effect (the dough will extend above top of pan). Place pan on a rimmed baking sheet. Chill 1 hour, or freeze 20 minutes.
  • Preheat oven to 350°F. Dock bottom surface of dough with a fork. Line dough with parchment paper or foil, then fill with dried beans or baking weights. Bake crust on baking sheet until top edge is golden, about 30 minutes. Using parchment, lift out beans, then continue to bake until surface of crust is set and lightly browned and feels dry, 35-40 minutes more. Transfer pan to a wire rack and let cool.
  • While crust cools, reduce oven temperature to 325°F. Cook shallots, oil, and 1/2 tsp. salt in a small skillet over medium-low heat, stirring often, until tender and translucent, about 5 minutes. Remove from heat and stir in chives. Spoon filling into cooled crust.
  • Vigorously whisk eggs in a large bowl or glass measuring cup. Whisk in half-and-half, pepper, 1 cup crème fraîche, and remaining 1 tsp. salt until combined. Pour custard over filling. Bake quiche until filling is puffed, set, and golden, 60-75 minutes. Transfer pan to a wire rack and let cool at least 1 hour. Release springform, then lift quiche off base using parchment overhang and transfer to a platter or cutting board.
  • Serve with braised vegetables, prosciutto, crème fraîche, green goddess dressing, avocado, greens, and lemon wedges alongside for guests to dress their quiche as desired.
  • Do Ahead: Crust can be baked 1 day ahead. Store uncovered at room temperature. Quiche can be made 6 hours ahead. Store uncovered at room temperature. Quiche can also be made 1 day ahead; cover and chill overnight. Bring to room temperature 2 hours before serving.
