Steps:
- PRE-HEAT OVEN TO 325.
- IN A LARGE ROASTING PAN,COVER BOTTOM WITH OLIVE OIL.
- IN CENTER OF ROASTER PLACE 2 SPRIGS OF FRESH ROSEMARY,TWO GARLIC CLOVES CRUSHED.
- TWO SMALL SLICES GINGER.
- PLACE THE LEG OF LAMB ON TOP OF THE HERBS.
- PEPPER LEG AND COVER LEG WITH WHITE GRAPE JELLY THOROUGHLY.
- PLACE IN OVEN AND ROAST 30minutes PER POUND.
- OR UNTIL IT COMES AWAY FROM BONE AND IS NICE AND DARK.
- WHEN COOKED REMOVE LEG AND SET ASIDE TO COOL SLIGHTLY FOR SLICING.
- WITH THE WONDERFUL AROMATIC DRIPPINGS REMOVE EXCESS FAT AND THE HERB REMAINS IN THE BOTTOM OF ROASTER.
- BOIL YOUR KETTLE AND ADD JUST ENOUGH WATER TO MAKE A LOVELY DARK GRAVY.
- YOU WILL NOT BELIEVE THE FLAVOUR OF THE GRAPE AND HERBS.
- YUM.
- SUGGESTED ACCOMPANYING VEGGIES.
- ROASTED SQUASH.
- GREEN BEANS WITH SLICED ALMONDS AND MUSHROOMS.
- IF YOU DO NOT PREFER THE SQUASH THEN ROAST THEN HALF POTATOES PAR BOIL AND ADD TO LEG FOR LAST 30 MINUTES THEY ARE EQUALLY AS ENJOYABLE.

- I USE YOUNG LAMB AND MAKE SURE IT IS WELL TRIMMED OF FAT.

Steps:
- Heat the oil in a large pan, add the onion and lamb, then quickly fry until the lamb is lightly browned.
- Add the sweet potatoes and spices, then mix well. Pour in 425ml boiling water and the tomato purée, then bring to the boil.
- Cover and simmer for 15 mins until sweet potatoes and lamb are tender, adding the dates for the final 10 mins. Sprinkle with coriander and serve with couscous.

AROMATIC LEG OF LAMB
This recipe is one I found in "Good Housekeeping" magazine a good while ago. It gives a subtle flavor to the lamb and, to my way of thinking, is simply excellent.

Steps:
- Rub the lamb with the cut side of the garlic cloves.
- Discard garlic.
- In a mortar with pestle, crush fennel, cumin, and coriander seeds.
- (Or, place seeds in a heavy weight plastic bag; use rolling pin to crush the seeds) In a small bowl combine crushed seeds with Olive Oil and salt Using your hands rub the lamb with the crushed seed mixture Place lamb on BBQ over medium heat.
- Cook 15-20 minutes (for medium-rare) turning occasionally.
- Or cook until it reaches your preferred doneness.
- Thickness of butterflied lamb will vary throughout: cut off sections of lamb as they are cooked to your liking and keep warm.
- If desired serve with lemon wedges.
CRISPY AROMATIC LAMB

- Preheat the Oven to 150c/fan 120c/gas 2
- lightly oil a roast tin with a little oil
- place the shoulder of lamb into the roasting tin & spread half of the jar of Chinese 5 spice paste over the shoulder
- cook for approx 2 1/2 hours then turn over & cover the side of the shoulder with the remaining paste
- roast for approx another 2 1/2 hours, this is rather general as you can keep this in the oven all day in a low oven and the fat from the Shoulder will melt into the meat & keep it moist for several hours.
- serve with, if you have them, chinese pancakes or tortilla wraps, hoisin sauce, sliced spring onions, cucumber & spredded lettuce. Enjoy
