DEEP DISH PEACH STREUSEL PIE
This is VERY loosely based on some of the pie instructions in How to Cook Everything. I've done a lot of adjusting and tweaking. A food processor is used to make the pie dough. I like the filling with all brown sugar, but you can substitute all white sugar, or use a combination. The topping is best with brown sugar. I prefer walnuts for the topping, but any kind of nut is okay. Note: after some experimentation, I've adjusted the streusel.

Steps:
- For streusel topping:
- Stir flour, oats, sugar, and salt in medium bowl. Add butter; rub in with fingertips until mixture holds together in moist clumps. Mix in pecans. DO AHEAD: Can be made 1 day ahead. Cover; chill.
- For crust:
- Blend flour, sugar, and salt in processor 5 seconds. Add butter and shortening. Using on/off turns, blend until mixture resembles very coarse meal. Drizzle 3 1/2 tablespoons water over. Blend until moist clumps form, adding more water by teaspoonfuls if dry. Gather dough into ball; flatten into disk. Wrap; chill at least 1 hour. DO AHEAD: Can be made 1 day ahead. Keep chilled. If necessary, soften dough slightly at room temperature before rolling out.
- Roll out dough on floured work surface to 14-inch round; transfer to 9-inch deep-dish pie plate. Cut off all but 1/2 inch overhang. Fold overhang in; crimp edge. Chill crust.
- For filling:
- Stir sugar and next 4 ingredients in large bowl. Mix in lemon juice, then peaches; toss. Let stand at least 20 minutes, tossing occasionally.
- Set rack at lowest position in oven. Slide foil-lined baking sheet under rack onto oven floor (to catch any drips). Preheat oven to 400°F. Spoon filling into crust. Scatter topping over, breaking up large clumps.
- Bake pie 30 minutes. Reduce oven to 350°F; bake until juices bubble thickly and topping is golden, covering edges with foil if browning too quickly, about 1 hour. Cool on rack at least 1 1/2 hours. Serve warm or at room temperature.
DEEP DISH PEACH PIE
This pie slices beautifully and has a delicious peach filling, but the real star is the crust -- crisp, crunchy and perfectly sweet.

Steps:
- For the crust: Put the flour, granulated sugar and salt in the bowl of a food processor and pulse to combine. Add the shortening and pulse until it looks like cornmeal. Add the butter and pulse until the butter is about the size of a pea. Add 4 tablespoon ice water and pulse until the dough starts to come together but is still crumbly (add the remaining tablespoon water if necessary). Divide the dough into 2 pieces, one made from a third of the dough and the other from the remaining two-thirds of the dough. Form each into a disc and wrap in plastic. Refrigerate for 30 minutes or up to overnight.
- For the peach filling: Combine the peach wedges, light brown sugar, quick-cooking tapioca, cinnamon, vanilla extract, nutmeg, salt and lemon juice in a large bowl and toss to coat. Set aside.
- Lightly butter an 8-inch springform pan. On a lightly floured surface, roll the larger piece of dough into a 14-inch circle, about 1/4-inch thick.
- Roll the dough onto a rolling pin, then unroll it into the pan, patting it in gently, leaving a 1-inch overhang. Pour in the filling.
- Roll out the other piece of dough into a 10-inch circle about 1/8-inch thick and place it over the filling; press the crust edges together and trim any excess, leaving a 1-inch overhang. Roll up or pinch the overhang to seal.
- Place a foil-lined baking sheet on a rack in the lower third of the oven and preheat to 450 degrees F. Wrap an oiled, wide band of foil around the edge of the pan like a collar to protect the crust. Make slashes in the top of the crust and chill the pie 30 minutes.
- Place the pie on the foil-lined baking sheet and immediately reduce the oven to 400 degrees F. Bake the pie for 1 hour. Remove the foil band, brush the crust with heavy cream and sprinkle with some granulated sugar. Continue to bake until golden brown, about 45 minutes more. Let cool 1 hour, then carefully remove the edge of the pan. Let cool completely, about 1 more hour, before slicing.

- Test for sweetness. If the peaches are at the height of the season, they should not need additional sugar. If they are still a bit tart and crunchy, add another ⅓ - ½ cup of sugar.
- Remove the two pie crust discs from the refrigerator and let warm for 10 minutes or until pliable.
- Using a rolling pin, flatten the disc of dough into a 9” circle (see video for my personal technique) and then roll out into a 13” circle being careful to keep the dough from splitting along the edges.

- In a food processor, pulse the flour with the salt. Add the butter pieces, pulse 6-8 times until the largest butter pieces are the size of peas. Drizzle in the ice water, a tablespoon at a time, just until the dough just begins to come together. For me this took 7 T.
- Preheat oven to 425F. In a very large bowl, mix together the peaches, sugar, cornstarch, lemon zest, lemon juice, nutmeg, vanilla, and salt. Taste to see if you would like to add more sugar. Set aside while preparing the crumble.
- Whisk together the flour, sugar, cinnamon, ginger, and salt. Using fingertips, mix in the butter until the mixture comes together and looks like it has clumps of crumble.

- In a food processor, combine the flour with the salt and pulse to blend. Add the butter and shortening and pulse until the mixture resembles coarse meal. Sprinkle the ice water over the mixture and pulse just until a dough starts to form. Scrape the dough out onto a work surface, gather up any crumbs and knead gently just until the dough comes together. Pat the dough into a disk, wrap in plastic and refrigerate until firm, about 1 hour.
- In the food processor, combine the flour with the brown sugar, granulated sugar, candied ginger and salt. Pulse until the ginger is very finely chopped. Add the butter and pulse until moist crumbs form. Transfer the crumbs to a bowl, pressing some into clumps. Refrigerate the streusel.
- In a large bowl, toss the sliced peaches with the lemon juice and almond extract. In a small bowl, whisk the brown sugar with the granulated sugar, flour, ginger and salt. Add the dry ingredients to the peaches and toss well. Scrape the fruit into the pie shell and scatter the streusel evenly on top.

- Make crust: In a food processor pulse flour, salt, cinnamon and sugar. Add butter and shortening; pulse until mixture resembles bread crumbs. Beat yolks with 1/4 cup ice water and pour onto flour mixture. Pulse until dough just comes together into a ball (add more ice water, 1 tsp. at a time, if dough is too dry). Flatten dough into a disk, wrap in plastic and chill for at least 30 minutes.
- Make filling: Bring a pot of water to a boil and have ready a bowl of ice water. With a knife make a few slits in skin of each peach. Drop peaches into boiling water for 1 minute, then plunge into ice water. Remove peaches from water and slip off skins. Quarter each peach, remove pit, and cut each quarter in half. Toss peaches with remaining filling ingredients. Let stand for 20 minutes, stirring occasionally.
- Preheat oven to 400°F. Line a baking sheet with foil. Divide dough in half. On a lightly floured surface, roll out half of pastry to an 11-inch circle. Cut a 1-inch-wide strip from outer edge of pastry. Place trimmed pastry circle in a deep-dish 9-inch pie plate. Brush edge with water and place pastry strip on edge, pressing to seal. Fill with peach mixture. Place remaining pastry over pie dish. Press pastry together, trim any excess and crimp edges together to seal.
- Brush top of pie with beaten egg white and sprinkle with sugar. Make a few slits in top crust to allow steam to escape. Place pie on lined baking sheet.

- Roll out 1 of the pie crust discs into a rectangle large enough to fit a 9x13-inch baking dish with about 1 inch overhang. It's not an exact science here, though in theory it's easier to roll dough into a rectangle than a circle.
- Drape the crust into the pan and refrigerate for 30 minutes or freeze for 15 minutes. (Keep the second half of the pie crust refrigerated for the time being.)

- First, blanch the peaches to remove the skins. Bring a large pot of water to a boil. Have a large bowl of ice water ready nearby. Once the water in the pot boils, gently lower your peaches into the water. Let them sit in there for a couple of minutes, then remove them and plunge them immediately into the ice water bath. This will do 2 things — stop the peaches from cooking, and help the skins slide right off without effort.
