1/2 cup butter or 1/2 cup margarine, softened
1 cup brown sugar, firmly packed
2 eggs
1 teaspoon vanilla
2 cups all-purpose flour
1/2 cup wheat germ, unsweetened and toasted
1/2 teaspoon salt
1/2 teaspoon nutmeg
1/4 teaspoon baking soda
1 1/2 cups pitted dates, lightly packed
1/2 cup water
2 tablespoons honey
1/2 teaspoon vanilla

Steps:

  • COOKIE DOUGH: In a large bowl of an electric mixer, beat butter and sugar until creamy; beat in eggs and vanilla.
  • In another bowl, stir together flour, wheat germ, salt, nutmeg, and baking soda; gradually add to butter mixture, blending thoroughly.
  • Cover dough tightly with plastic wrap and refrigerate until easy to handle (at least 2 hours) for up to 3 days. Meanwhile, prepare date filling.
  • DATE FILLING: In a small pan, combine all the ingredients except the vanilla. Cook over medium heat, stirring and mashing with a spooon, until mixture is thick and smooth. Stir in vanilla.
  • Let cool; then cover and refrigerate.
  • COOKIE ASSEMBLY: Preheat oven to 350°F.
  • Take out 1/3 of the dough, leaving remaining dough in the refrigerator. On a well-floured board, roll out dough to 1/16-inch thickness; cut out with a 3-inch cookie cutter. Repeat with remaining dough, rolling and cutting one portion at a time.
  • Place half the cookies slightly apart on greased baking sheets; spoon a heaping teaspoonful of filling into each. Cover each with another cookie and press edges together with a floured fork. Decoratively slash top, if desired.
  • Bake in a 350°F oven for 12 to 15 minutes or until lightly browned. Transfer to racks and let cool. Store airtight.

Adapted from a recipe by poush at allrecipes.com. A crispy cookie shell, a sweet date filling, and maple icing make these unique treats. Use more or less icing, depending on how sweet you like it.

2 cups all-purpose flour
2 tablespoons confectioners' sugar
1 cup butter, softened
2 1/4 cups chopped pitted dates
1/2 cup orange juice
1/2 cup water
3/4 cup packed brown sugar
1/4 teaspoon salt
1 teaspoon vanilla extract
1/4 cup butter
2 1/4 cups confectioners' sugar
2 tablespoons milk
1 teaspoon maple extract

Steps:

  • Preheat oven to 325°F.
  • Sift together flour and 2 tablespoons confectioners' sugar in a bowl. Using a pastry blender or two knives, cut in 1 cup butter; knead until well blended. Form dough into 3/4 inch balls. Press evenly into 1 1/2 inch tart molds, pressing up the sides to form a shell. Bake in preheated oven until pale gold, about 16 minutes. Let shells cool in the pan. Gently loosen and remove them from pan using a knife.
  • Combine dates, orange juice, water, brown sugar, and salt in a saucepan. Bring to a gentle boil and cook for about 10 minutes, stirring constantly. Mash dates with a fork as they cook. Remove from heat and stir in vanilla. Allow mixture to cool before spooning into tart shells.
  • Cream 1/4 cup butter in a small bowl with an electric mixer. Gradually add 1 cup of the sugar while continuing to mix. Add the milk, remaining 1 1/4 cups sugar, and maple extract. Beat at high speed until smooth. Icing should be thick enough to pipe. Spoon mixture into pastry bag with a small round or star-shaped tip. Pipe a swirl of icing on each tart.

  • Let the butter thaw briefly at room temperature, about 5-10 minutes. (Alternatively, if all you have is refrigerated butter, pop it in the freezer for 30 minutes prior to making the crust.) In a large bowl, combine the flour, salt, and sugar, and mix until well-combined. Using the coarsest holes on a box grater, grate the slightly-thawed (or slightly-frozen) butter into the flour, then mix gently with your fingers to incorporate it into the flour, just until the butter forms pea-sized clumps. Whisk the creme fraiche and two tablespoons of the ice water together in a small bowl. Drizzle the mixture over the flour mixture and stir with a wooden spoon until the mixture comes together into a pebbly, shaggy dough. If the mixture holds together when squeezed, it has enough moisture. If not, add more of the ice water, a tablespoon at a time, until it does. Gather the dough into a disk, wrap it tightly in plastic wrap, and place in the refrigerator to chill for at least an hour.
  • Preheat the oven to 400 degrees F. Roll out the pie crust to about 1/8″ in thickness, the thinner the better. Use a 4-inch biscuit cutter to cut circles in the dough, then gently transfer them one-by-one to a standard-size muffin tin and press them into the wells. Re-roll the scraps as needed. You should be able to get about 10 to 12 dough circles. Once all the muffin wells are filled, place the tray in the freezer to chill the shells while you make the filling.
  • It couldn’t be easier — just whisk together the brown sugar, maple syrup, egg, melted butter, salt, and vanilla (if using) until well-combined. Chop the dates if you haven’t already. Remove the shells from the freezer, place a few date pieces in each muffin well, then drop about two tablespoons of filling into each tart, leaving at least 1/4-inch of the crust visible to prevent overfilling.
  • Bake for about 15 minutes, until tops are bubbling vigorously and pale golden, and crusts are golden-brown on the edges. Allow to cool slightly, then run a paring knife around the edges to loosen the tarts if the filling has overflowed, remove and enjoy. Tarts freeze very well for at least a few months (and, like Sydney suggests, they’re even better out of the freezer).
