BEEF AND GUINNESS CASSEROLE WITH NOODLES



Beef and Guinness Casserole with Noodles image

Note: This recipe calls for the beef to marinate overnight, so please plan accordingly.

Number Of Ingredients 15

2 pounds chuck roast, cut into eight pieces
1 bottle Guinness
2 tablespoons brown sugar
1 teaspoon dry thyme
2 bay leaves
1 tablespoon minced garlic
3 cups onion, large dice
1 pound carrots, peeled and quartered
3 tablespoons butter, softened
3 tablespoons flour
1 teaspoon dry mustard powder
½ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
½ teaspoon gravy seasoning, such as Kitchen Bouquet
8 ounces dry egg noodles (we used the dumpling size)

Steps:

  • In a gallon zipper seal bag, place beef, beer, brown sugar, thyme and bay. Seal and marinate overnight.
  • Three hours before dinner, preheat oven to 325 degrees and in a 2 quart casserole dish, place mixture from bag including all liquid, garlic, onions and carrots. Mix to combine.
  • Cover with parchment and foil and cook for three hours.
  • While beef is cooking, in a small bowl, mix butter, flour, mustard powder, salt and pepper. Set aside.
  • After three hours remove beef from oven.
  • Cook noodles according to package directions while making gravy.
  • Place a strainer over a medium sauce pan and pour beef liquid to drain into pan. Place solids back in casserole dish. Heat beef liquid to hot. Microwave butter and flour mixture, also to hot (necessary to avoid lumps).
  • With a wire whip, add hot butter and flour mixture to hot liquid and stir to combine to make the gravy. Add gravy seasoning and stir.
  • Place strainer back over dish with meat and pour sauce through strainer back over meat and stir to mix in.
  • Serve in a family-style bowl over the cooked noodles.

This is something I came up with when I needed something fast to feed my kids and I didn't have many resources in the kitchen. I got 4 stars from 2 kids and 5 stars from another, so that constitutes a "keeper" for me. Hope it makes your life a little easier too...It's a "homemade" taste from convenience items.

8 ounces medium egg noodles, cooked and drained
12 ounces roast beef, with gravy (either leftover or canned Hormel brand)
1 (10 3/4 ounce) can Campbell's Cream of Chicken Soup
6 ounces whole milk
1/4 cup beef broth
2 tablespoons dried parsley flakes
1/8 teaspoon onion powder
salt & pepper
1/2 cup seasoned bread crumbs

Steps:

  • Preheat oven to 350 degrees.
  • In a well-buttered 2 quart casserole, pour cooked and drained noodles.
  • Mix soup, milk, beef broth and onion powder together until smooth, add to noodles and stir.
  • Add roast beef with gravy, and mix thoroughly.
  • Salt and pepper to taste.
  • Sprinkle dried parsley flakes evenly on top.
  • Sprinkle the top with the bread crumbs.
  • Bake, uncovered, in a 350 degree oven for 30 minutes.

One of my family's all-time favorite meals! This is a definite crowd-pleaser. I make this dish all the time when we have our friends over for dinner. It's always a big hit!

1 1/2 lbs ground beef
1 onion, chopped
1 (8 ounce) package medium egg noodles
1 (8 ounce) can tomato sauce
1 (10 3/4 ounce) can cream of mushroom soup
8 ounces shredded sharp cheddar cheese, divided

Steps:

  • Preheat oven to 350.
  • Brown ground beef and onion, drain.
  • Cook and drain egg noodles.
  • Combine beef mixture and egg noodles in a pot and add tomato sauce, cream of mushroom soup, and 3/4 of the cheese. Stir until cheese is melted.
  • Pour mixture into casserole dish. Top with remaining cheese.
  • Bake for 25-30 minutes, until cheese is melted and bubbly.

A cousin brought this over to my family during a funeral. Let me first say that I DO NOT like casseroles!! Being hungry, I thought I'd at least, give it a try. This is fantastic! It looks rather bland, but has wonderful flavors. It can be doubled easily too.

1 lb ground beef
1 (10 ounce) can cream of mushroom soup
1 (4 ounce) can mushrooms, drained
6 ounces med.wide egg noodles
1 (14 ounce) can green beans, french cut or 1 (14 ounce) can corn
1 medium onion, diced
1 teaspoon garlic, minced
1 1/2 teaspoons seasoning salt (Lawry's)
0.5 (10 ounce) can milk (use soup can)
pepper (to taste)

Steps:

  • Brown beef in skillet with onion, garlic, seasoned salt and pepper.
  • Cook noodles.
  • Drain meat and mix with cooked and drained noodles, soup, ½ soup can of milk, drained green beans (or drained corn).
  • Put into a 9x9 casserole dish (if doubled use a 9x13) and bake, uncovered at 350°F for 30-45 minutes.
  • Refrigerate any leftovers.

1 kg blade steak
1/4 cup oil
4 onions
1 tablespoon garlic, minced
4 tablespoons flour
2 cups Guinness stout
2 cups beef stock
4 slices bacon, chopped
1/4 teaspoon dried thyme
1 orange, rind pared only

Steps:

  • Cut steak into 5cm pieces. Heat oil in a large frying pan and brown over a moderately high heat until well browned. Transfer to casserole dish.
  • Peel and quarter the onions and break into "petals", add to the pan and cook them for about 3 minutes, then add the garlic and cook for one more minute.
  • Sprinkle the flour over the onion and stir well to coat the onions in the oil.
  • Gradually pour in the stout and beef stock and bring to the boil to make a smooth sauce.
  • Pour over the meat in the casserole dish, then stir in the bacon, thyme and orange rind.
  • Cook at 160 C for 1 1/2 - 2 hours or until the meat is tender.
  • Serve with mashed potatoes.

This is a great "do ahead" casserole. Make it the day before or in the morning and just pop it in the oven for 1/2 hour before dinner. Not only that it tastes good.

1 (5 ounce) package egg noodles (whatever type you prefer)
1 tablespoon butter
1 1/2 lbs lean ground beef
salt and pepper
1 teaspoon dried basil
1 (8 ounce) can Italian-style tomato sauce
8 ounces 2% fat cottage cheese
1 cup light sour cream
6 green onions, chopped
3/4 cup sharp cheddar cheese, grated

Steps:

  • Cook the noodles until just tender, drain, rinse with cold water, drain well and set aside.
  • In a large skillet melt the butter.
  • Add beef and fry until well cooked and crumbly.
  • Stir in salt pepper, basil and tomato sauce.
  • In a large bowl combine the noodles, cottage cheese, green onions and sour cream.
  • Preheat oven to 350°F.
  • Butter a casserole dish (8-inch square).
  • Put in half on the noodle mixture.
  • Top with half of the beef.
  • Add last half of noodles and top with the remaining beef.
  • Sprinkle with the cheddar cheese.
  • Bake uncovered, 30 minutes or until bubbly and the cheese has melted.

I've been making this for years and have forgotten where it came from, but I know that now it's got my own personal recipe additions of more of everything. It's become the favourite of my children and their friends...and their friends.

1 lb minced beef
1 cup tomato sauce (or combination of sauces to taste)
2 teaspoons mixed herbs
3 cups grated cheddar cheese
2 beef bouillon cubes (equivalent to two teaspoons beef stock powder)
2 tablespoons cornflour (mixed in sufficient water to make a paste)
2 cups water
salt
fresh ground black pepper
1 dash olive oil or 1 dash preferred oil
salt and pepper
300 g egg noodles, fetteccine or linguine (I prefer egg noodles)

Steps:

  • Boil egg noodles (fetteccine or linguine) in water until al dente.
  • Rinse, drain and leave.
  • Brown minced beef in oil, stirring regularly.
  • Add crushed stock cubes (or powder).
  • Add water.
  • Stir in tomato sauce.
  • Add mixed herbs.
  • Stir in salt and pepper to taste.
  • Stir in corn flour paste until mixture combines and thickens.
  • Simmer for 5 minutes.
  • Stir, then take from heat.
  • In a large oblong or square casserole dish, spread half the noodles.
  • Spoon, spread and cover the noodles with half the meat mixture.
  • Spread half the grated cheese over the meat mixture.
  • Repeat a noodle, meat and cheese layer.
  • Bake in medium oven (180C degrees or 350F degrees) 'till browned.
  • Take from oven, cut into meal portions and serve with fresh salad and crusty bread.
  • Can be made before hand and heated when the hordes arrive for their favourite meal.
