A friend gave me this recipe many years ago, and it's since become a family favorite. I love the aroma of these cookies as they're baking.

1 cup shortening
1 cup sugar
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
3 cups old-fashioned oats
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1/2 cup chopped walnuts
1/2 cup golden raisins

Steps:

  • In a large bowl, cream shortening and sugars until light and fluffy. Beat in eggs and vanilla. Combine the oats, flour, baking soda and salt; gradually add to creamed mixture and mix well. Stir in walnuts and raisins., Drop by tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 375° for 10-12 minutes or until golden brown. Remove to wire racks to cool.

3 cups all-purpose flour
1 tsp baking soda
1 tsp Kosher salt
1 cup butter (at room temperature)
1 cup cane sugar
½ cup of packed light brown sugar
3 eggs (at room temperature)
1 tsp vanilla
1 ½ cups roughly chopped pecans (toasted)
1 ½ cups chopped pitted dates

Steps:

  • Preheat oven to 350ºF. Line baking sheets with parchment paper.
  • In a medium bowl combine the flour, baking soda, and salt.
  • In the bowl of an electric mixer, beat the butter, granulated sugar and brown sugar until well combined, about 2 minutes.
  • Add the eggs one at a time, then add the vanilla. Gradually add the flour mixture. Mix on low speed until the flour is well incorporated. Stir in the pecans and dates.
  • If time permits, cover the dough with plastic and chill for 2 hours or overnight. This allows the cookies to be thicker more chewy.
  • Scoop the chilled dough using a spring-loaded cookie scoop onto the prepared baking sheet, leaving about 2 inches between each cookie. It should make about 48 cookies
  • Bake 8-11 minutes, or until golden brown and cookie is puffed.
  • Cool for 5 minutes before removing to wire racks to cool completely.

⅓ cup boiling water
2 cups dates, pitted and chopped
½ cup shortening
1 cup white sugar
⅛ teaspoon ground cinnamon
¾ teaspoon salt
⅛ teaspoon ground nutmeg
2 eggs
1 cup all-purpose flour
¼ teaspoon baking soda
½ cup chopped walnuts
¼ cup confectioners' sugar

Steps:

  • In a small bowl, pour boiling water over dates, and set aside to cool. Preheat oven to 325 degrees F (165 degrees C). Grease a 10x10 inch baking pan.
  • In a medium bowl, cream together the shortening and white sugar. Add eggs, one at a time, beating after each addition. Add the dates, including any water; mix well. Sift together the flour, cinnamon, nutmeg, and baking soda; stir into the date mixture. Then stir in the nuts.
  • Spread the mixture evenly into the prepared 10x10 inch pan, and bake for 45 minutes in the preheated oven. When cool, cut into bars, and roll each bar in confectioners' sugar.

2/3 cup packed dark brown sugar
6 tablespoons unsalted butter, at room temperature
1 large egg

3/4 cup whole wheat pastry flour or white whole wheat flour

1/2 teaspoon ground cinnamon
1/4 teaspoon fine salt
3/4 cup chopped pitted dates

Steps:

  • Position racks in the upper and lower thirds of the oven and preheat the oven to 350 degrees F.
  • Spread the oats out on a baking sheet and bake until light golden brown, 10 to 12 minutes. Reserve 1/4 cup of the oats for sprinkling and transfer the remaining oats to a medium mixing bowl to cool. Line two baking sheets with parchment paper.
  • In the bowl of a stand mixer fitted with the paddle attachment, beat the sugar and butter on medium-high speed until lighter in color and slightly fluffy, about 5 minutes, scraping down the sides of the bowl several times. Beat in the egg and vanilla until very fluffy, 2 to 3 minutes more.
  • In the mixing bowl with the cooled oats, add the flour, cinnamon, baking powder and salt, and mix to combine. Reduce the mixer speed to low, then add the flour mixture to the butter and beat until just combined. Stir in the dates and chocolate by hand.
  • Drop level tablespoons of the dough on the baking sheets, leaving at least 1-inch of space around each cookie, about 30 cookies total. Sprinkle the cookies with the reserved toasted oats. Bake until the cookies are lightly golden, 12 to 15 minutes. Cool the cookies for 5 minutes on the baking sheets, then transfer to cooling racks to cool completely.

In making cookies for Christmas I was trying to keep in mind what I had in my cabinets (instead of running out for more supplies). I found a recipe in the "More With Less" cookbook that looked interesting. I adapted it pretty heavily based on what I had. These are soft cookies that spread a ton while baking. They are a little crumbly but had a lovely soft, almost old fashioned molasses type taste. Sucanat is unrefined sugar. It has a lovely taste and more redeeming social value then refined sugar. If you don't have it, though, brown sugar would be a fine replacement.

  • Bake for 10-12 minutes or until slightly browned.
  • Immediately remove from pans onto a rack to cool.

DIRECTIONS

Steps:

  • 1. Preheat oven to 325 degrees and grease well, 4 cookie sheets.
  • 2. In a medium bowl, cream the butter and sugars together well. Then beat in the eggs one at a time. Stir in vanilla.
  • 3. In another bowl, combine flour, baking soda, salt and cinnamon; stir this into the butter/sugar mixture. Mix in the oats, dates and nuts. Dried cranberries (or cherries) are optional, but good in this recipe. Cover with plastic wrap and chill for at least an hour, two is better.
  • 4. Roll dough into walnut-sized balls and place 2-inches apart on the cookie sheets. Flatten each cookie slightly with a large fork dipped in water. Sprinkle each cookie with a pinch of granulated sugar.
  • 5. Bake for 12 minutes, turning sheets once at about 8 minutes. Cookies will not look done. Immediately upon removing from oven, sprinkle cookies lightly with a little sugar (optional). Allow cookies to cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.

  • Add the oats and work into th batter. Finally, add the nuts, dates, and raisins. Using a spring form scoop, dollop the batter on to a parchment-lined cookie sheet.
  • Do not crowd cookies giving about 2-3" space between each. Bake in preheated 350 oven about 10 minutes. Repeat with all the batter. Let cool and eat.

1/2 tsp. baking soda
1/4 tsp. salt
1 cup quick oats
1 cup packed brown sugar
1/2 cup sugar
1 cup butter (softened)
2 Tbsp. honey
2 tsp. vanilla extract
2 large eggs
1 1/2 cups diced Sunsweet Dates
1/2 cup pecans (chopped)

Steps:

  • Preheat oven to 300ºF.
  • In a medium bowl, combine flour, soda, salt and oats. Mix with a wire whisk and set aside.
  • In an electric mixer bowl, combine sugars and mix to combine. Add in butter and blend until a creamy, grainy paste.
  • Scrape down sides of bowl then add honey, vanilla and eggs. Mix at medium speed until light and fluffy.
  • Add the flour mixture, dates and pecans and blend at low speed until just combined. Don't overmix!

4 oz medjool dates (110g, pitted weight - around 1/2 cup, well packed (see notes re alternative))
2 oz unsalted butter (1/2 stick/55g, softened to room temperature and cut into chunks)
1/2 egg (beaten)
1/3 cup all purpose flour (46g plain flour)
1/2 cup oats (45g, old fashioned rather than quick)
1/4 tsp baking soda (bicarbonate of soda)
1/4 tsp cinnamon

Steps:

  • Preheat the oven to 350F/175C.
  • Roughly chop the dates and blend with the butter and egg (food processor works well).
  • Add the remaining ingredients and either pulse a few times if using a food processor or stir until combined. If using food processor, you may need to stir at the end to get everything well-mixed.
  • Take spoonfuls and roll slightly in your hand then put on a baking tray and flatten slightly.

1 1/2 cups water
1 cup all-purpose flour
3/4 cup packed brown sugar (light or dark)
1 tsp. ground cinnamon

8 Tbsp. unsalted butter; cut into cubes
1/2 tsp. vanilla extract
1 1/2 cups quick cooking oats
1 Tbsp. water

Steps:

  • Place the dates and water in a medium saucepan and bring to a boil over medium heat. Once the water starts to boil, reduce the heat and bring to a simmer, stirring occasionally until the water has thickened and the liquid is absorbed, about 20 minutes.
  • Preheat the oven to 350 degrees F. Line a 13 x 9 inch baking dish with parchment paper and lightly grease. Set aside.
  • In the bowl of a food processor, pulse together the flour, brown sugar, cinnamon, salt and baking soda until combined. Add the butter and continue to process until the mixture resembles coarse sand. Add in the oats and water and pulse until combined.
  • Press half of the oat mixture onto the bottom of the prepared baking dish with a spatula or your hands. Bake for 10 minutes or until lightly browned.
  • Spread the date mixture over the partially baked crust and then sprinkle the remainder oat mixture over the dates. Lightly press down. Bake for 30-35 minutes or until the tops of the crust is a light golden brown. Let cool completely and then slice into bars or squares. Enjoy!

Number Of Ingredients 10

8 tablespoons (1 stick/​115 g) unsalted butter, at room temperature
¼ cup (50 g) granulated sugar
½ cup packed (105 g) dark brown sugar
½ teaspoon kosher salt
1 teaspoon baking soda
½ teaspoon ground cinnamon
1 large egg
¾ cup (100 g) Sonora wheat flour, or any other heirloom wheat flour
¾ cup (80 g) old-​fashioned rolled oats
1 cup (145 g) chopped pitted Medjool dates (about 16 )

Steps:

  • In a stand mixer fitted with a paddle attachment, cream the butter and both sugars at medium speed until smooth, about 3 minutes. Add the salt, baking soda, and cinnamon and mix until well combined, 1 minute. Add the egg and mix for another minute. Add the flour and oats and mix on low speed until combined. Finally, add the dates in two additions to make sure they're distributed evenly throughout. The dough will be very soft at this point.
  • Transfer the dough to a sheet of parchment paper or plastic wrap. Flatten into a disk with your hands, then wrap tightly and refrigerate for at least 30 minutes (and up to 2 days)-​chilled dough will be much easier to handle.
  • Place two racks in the middle positions and preheat the oven to 350ºF. Line two baking sheets with parchment paper.
  • Divide the dough into 16 equal portions, about 1½ ounces (45 g) each. Working quickly so that the dough doesn't warm up, shape each portion into a ball with your hands. You can freeze the cookie dough balls for up to 2 weeks in a freezer bag to be baked from frozen at a later time. Place cookies on the prepared baking sheets, at least 3 inches apart to prevent the cookies from touching as they spread when they bake. Bake for 10 minutes, rotate the baking sheets and switch their positions in the oven, and bake for another 6 to 8 minutes, until the edges are brown and the middle is golden. Rotating and switching the sheets halfway through the baking process will ensure that the cookies bake evenly. Let the cookies cool completely on the baking sheets. The cookies keep well for a couple of days stored in an airtight container.

Steps:

  • In a mixing bowl with an electric mixer, combine the shortening, butter, and sugar. Beat until light and fluffy.
  • Beat in vanilla and egg, beating until well blended.
  • Sift flour and salt; add to creamed mixture, mixing well.
  • Stir in dates and walnuts. Shape dough into two 2-inch rolls; wrap in wax paper and chill overnight.
  • Slice chilled cookie dough into 1/8 inch slices; bake on greased baking sheets at 375 F for 8 to 10 minutes.
