DARK CHOCOLATE RASPBERRY FONDUE

Steps:
- In fondue pot or 2-quart saucepan, mix whipping cream, raspberry preserves and honey. Heat over warm/simmer setting or medium-low heat, stirring occasionally, just until bubbles rise to surface (do not boil).
- Add chocolate; stir with wire whisk until melted. Keep warm over warm/simmer setting. (If using saucepan, pour into fondue pot and keep warm over warm/simmer setting.) Serve with dippers.

- In a large saucepan, combine the first 5 ingredients. Cook over low heat until caramels, chips and butter are melted, about 15 minutes. Stir until smooth. , Transfer to a 1-1/2-qt. slow cooker or fondue pot. Serve warm with pound cake or fruit.

DARK CHOCOLATE RASPBERRY FONDUE
I whipped this up for a recent get-together I had with a bunch of ladies. It was such a hit that I decided it would be worth writing down (oro just putting on here) so I could keep up with it to make it again. We served this with rice krispie treats, jumbo marshmallows, pretzels, pound cake, and fruit for dippers.

Steps:
- Break chocolate into pieces into medium bowl.
- Add cream (start with 1/2 c and if you want more after it's all melted, then you may add more. you don't want it too thin!) and raspberry puree. Microwave on med-high (i do 70% power on my microwave) for 1 1/2 minutes. Stir.
- Microwave approx 1 1/2 minutes more or until chocolate mixture is melted and smooth.
- Stir in jam. (and more cream, if desired).
- Place in a fondue pot and serve with dippers of your choice.
- (Can be stored in freezer up to 2 weeks or can be refrigerated for 1 week before serving).

My sister made this during my visit. I'm not a chocolate lover but this was delicious! We ate it with sliced apples, bananas, strawberries, crisp cookies, pretzels, and cubed poundcake! My times are probably off as I've never prepared this myself ... just enjoyed my sister's efforts :)

- In large saucepan over medium heat, combine cream and butter.
- Bring to a simmer, stirring constantly.
- Remove from heat.
- Add morsels. Stir until melted and smooth.
- Cool slightly. Then transfer to a fondue pot or ceramic bowl.
- Serve immediately.
- TO REHEAT: Reheat in microwave, 30 seconds, stir -- another 30 seconds, stir -- repeat until heated. Do not microwave for a longer time; you may burn the fondue.

CHOCOLATE RASPBERRY FONDUE

- Break up chocolate bar and place into a medium bowl.
- Add cream and puree (or juice). Microwave on High for 1 1/2 minutes, stir, Microwave about 1 minute longer or until chocolate is completely melted and mixture is smooth.
- Stir in Chambord.
- Transfer chocolate to 6-8 individual ramekins, such as small souffle dishes.
- Arrange on plates with dippers.
- Serve with toothpicks or small forks.
- (Or set up in a fondue kit if you have one).
WHITE CHOCOLATE RASPBERRY SWIRL FONDUE
White chocolate fondue with a swirl of raspberry puree. Serve with tart fruits to balance the sweetness of the white chocolate. Strawberries, peaches, pineapple and not-too-sweet cookies like biscotti.

- Set aside 1/3 of the raspberries for dipping into the finished fondue. In a blender puree the remaining raspberries. Strain the puree through a fine meshed wire sieve into a small bowl. Discard the seeds. Set the puree aside.
- In a medium, heavy-bottomed saucepan, bring the cream to a simmer over medium heat and add the white chocolate. Let stand until the chocolate softens, about 3 minutes. Whisk until smooth.
- Transfer the fondue to a ceramic fondue pot and keep warm over a burner. Drizzle the raspberry puree over the fondue. Swirl a knife through the puree to create a marble effect.

- 1. In a medium microwave bowl, combine the chocolate, cream and raspberries. Microwave on medium-high in 30 second intervals, stirring after each time, until mixture is smooth. Stir in the jelly. Add more cream if the mixture seems too thick for dipping. Pour into serving bowl or fondue pot to serve.
- 2. You can dip pieces of fruit or cubed cake in this decadent fondue. Of course, if you use cake, it's no longer going to be gluten-free!
