This cheeseburger casserole was my favorite dish my mom made while I was growing up, and now it is my husband's favorite. With crisp Tater Tots® and ooey-gooey Cheddar cheese, how can you go wrong?

1 large onion, chopped into 1-inch pieces
butter-flavored cooking spray (such as Pam®)
2 pounds ground beef
2 (10.75 ounce) cans condensed golden mushroom soup (such as Campbell's®)
3 cups shredded sharp Cheddar cheese
1 (32 ounce) package frozen bite-size potato nuggets (such as Tater Tots®)

Steps:

  • Place onion in a microwave-safe bowl and cover with water. Microwave on High until soft, 7 to 8 minutes. Drain.
  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch casserole dish with cooking spray.
  • Cook and stir ground beef in a large nonstick skillet over medium-high heat until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Transfer beef to the prepared casserole dish and spread onion pieces evenly over top. Spread soup over the onions and sprinkle Cheddar cheese evenly over soup. Layer frozen potato nuggets in rows on top of the cheese.
  • Bake in the preheated oven for 20 minutes. Lightly spray the potato nuggets with cooking spray, and bake until cooked through and crunchy, about 10 minutes more.

Tater Tots™ casserole meets Bisquick™ in this Impossibly Easy Cheeseburger Pie-and it's a match made in comfort-food heaven. Hearty, family friendly and easy to make, this casserole is freezable and feeds a crowd. Serve with ketchup, mustard and pickles for extra cheeseburger flavor.

1 1/2 cups chopped onion (1 1/2 medium)
1 1/2 teaspoons salt
1/2 teaspoon pepper
3 cups shredded Cheddar cheese (12 oz)
3/4 cup Original Bisquick™ mix
1 1/2 cups milk
3 eggs, beaten
1 bag (32 oz) Ore-Ida™ Tater Tots™ frozen potatoes

Steps:

  • Heat oven to 400°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In 12-inch nonstick skillet, cook beef and onion over medium-high heat 8 to 10 minutes, stirring frequently, until beef is brown; drain. Stir in salt and pepper. Spread in dish. Sprinkle with 2 cups of the cheese.
  • In medium bowl, stir Bisquick™ mix, milk and eggs with whisk until blended. Pour into baking dish. Arrange frozen potatoes on top of casserole.
  • Bake 40 to 45 minutes or until potatoes are browned. Sprinkle evenly with remaining 1 cup cheese; bake 3 to 5 minutes or until cheese is melted and knife inserted in center comes out clean (165°F in center). Let stand 10 minutes before serving.
  • To make ahead: Cook beef mixture; spread in baking dish. Refrigerate uncovered 30 minutes. Sprinkle with 2 cups of the cheese; pour Bisquick™ mixture over top. Cover and refrigerate overnight. To bake: Heat oven to 400°F. Uncover casserole; arrange frozen potatoes on top. Bake and top with cheese as directed.

1/2 cup sour cream
1 bag (32 oz) Ore-Ida™ Tater Tots™ frozen potatoes
4 slices cooked bacon, coarsely chopped
2 cups shredded Cheddar cheese (8 oz)
1/4 cup chopped green onions

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In 10-inch nonstick skillet, cook beef and onion over medium-high heat 7 to 9 minutes, stirring frequently, until brown; drain, and return to skillet. Stir in seasoning, soup and sour cream; stir to blend completely.
  • Place half of the frozen potatoes in single layer in baking dish. Spoon beef mixture on top. Top with half of the chopped bacon, 1 cup of the Cheddar cheese, the remaining frozen potatoes, then remaining 1 cup cheese.
  • Bake 40 minutes; top with remaining chopped bacon. Bake 5 to 10 minutes or until casserole edges are bubbly and potatoes are lightly browned. Sprinkle with green onions.

1 pound lean ground beef
1/3 cup diced yellow or sweet onion
2/3 cup ketchup
2 tablespoons yellow mustard
2 tablespoons dill or sweet pickle relish
½ teaspoon salt
2 tablespoons butter
2 tablespoons all-purpose flour
1 1/2 cups milk
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 cups shredded cheddar cheese, divided
1 (32 ounce) bag tater tots

Steps:

  • Preheat oven to 350°F. Butter a 2-quart casserole dish, or spray with nonstick cooking spray.
  • In a large skillet over medium heat, cook beef and onion stirring occasionally, until beef is brown; drain.
  • Stir in ketchup, mustard, relish and ½ teaspoon salt. Taste and adjust seasoning as needed. Spoon mixture into prepared casserole dish and smooth into an even layer.
  • In a medium saucepan over medium heat, melt butter completely. Slowly whisk in the flour until smooth. Continue to whisk while cooking the roux until it is golden brown.
  • Slowly whisk in the milk, taking care to fully incorporate it with the roux. Keep whisking until the sauce is thick and bubbling; about 5 minutes. Stir in ¼ teaspoon salt and pepper.
  • Remove the pan from heat and whisk in 1 1/2 cups of cheese until it is completely melted and the sauce is smooth.
  • Evenly pour the sauce over the meat mixture.
  • Arrange the frozen tater tots in an even layer over the cheese sauce. You may have extra tots.
  • Bake in preheated oven for 35 minutes. Remove from oven and sprinkle remaining cheese over the top. Return to the oven for an additional 5 minutes, or until the cheese is melted.
  • If desired, sprinkle with fresh Italian parsley just before serving.

1 teaspoon cornstarch
1 12-ounce can evaporated milk
Kosher salt and freshly ground pepper
1 tablespoon unsalted butter
1 pound ground beef sirloin

1 32-ounce bag frozen potato tots
Ketchup, yellow mustard, dill pickle chips and toasted sesame seeds, for serving

Steps:

  • Make the cheese sauce: Toss the cheese and cornstarch together in a bowl until totally coated. Set a medium saucepan over low heat. Add the evaporated milk. Once the milk is warm, whisk in the cheese mixture and cook, stirring constantly, until all the cheese is melted and the sauce is silky and smooth, about 5 minutes. Season with salt and pepper.
  • Cook the beef: Heat a large skillet over medium-high heat. Add the butter and ground beef and cook, stirring, until the exterior is caramelized and the inside is just cooked through, about 10 minutes. Season with salt and pepper and keep warm over low heat.
