Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine the egg, milk, cheese, breadcrumbs and salt. Add the ground beef, mixing well, and form this mixture into six to eight miniature meatloaves. Place these in a lightly greased 9x13 inch baking dish.
- In a separate small bowl, combine the ketchup, brown sugar and mustard. Stir thoroughly and spread over each meatloaf.
- Bake, uncovered, at 350 degrees F (175 degrees C) for 45 minutes.

MINI CHEDDAR MEATLOAVES
These are so good, everyone loves these, even my grandpa who doesn't like cheese on or in anything, he couldn't even taste it! The sauce is so good! This has become my main meatloaf recipe! I got this from a Ground Beef Cookbook.

Steps:
- In a bowl beat eggs and milk, stir in cheese, oats, onion, and salt.
- Crumble beef over mixture and mix well.
- Shape into 8 loaves place in 13x9x2 baking dish, I normally make my loaves bigger and can get about 4-5.
- In separate bowl, combine ketchup, brown sugar, and mustard, Mix well.
- The original recipe says to spoon over loafs and bake 45 minutes or until no longer pink and meat thermometer reads 160 degrees, uncovered at 350 degrees. However, I bake mine without the sauce until the last 10 minutes or so and then spoon the mixture over the loaves, replacing them back in oven to finish cooking.

HEALTHY MINI CHEESY MEATLOAVES
We sneak spinach and cilantro into these beef-and-turkey loaves with a tomato-and-Cheddar topping.

Steps:
- Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
- Combine the spinach, cilantro and garlic in a food processor and pulse until finely chopped. Transfer to a medium bowl. Add the ground beef, ground turkey, milk, breadcrumbs, chili powder, egg, 2 teaspoons of the Worcestershire, 1/2 teaspoon salt and a few grinds of pepper. Combine the mixture well with your hands.
- Whisk the vinegar and the remaining 2 teaspoons Worcestershire together. Divide and pat the meat mixture evenly into four 1-inch-thick football shapes. Arrange on the prepared baking sheet. Top each meatloaf with 3 slices of tomato and drizzle with some of the vinegar-Worcestershire sauce. Bake until the meatloaves reach an internal temperature of 165 degrees F, 18 to 20 minutes. Drizzle with more vinegar-Worcestershire sauce and top each with the Cheddar and continue to bake until the cheese is melted, about 2 minutes more. Blot the bottom of each meatloaf on a paper towel to remove excess moisture. Serve with a salad if you?d like.
MINI CHEDDAR MEATLOAVES
Steps:
- 1. Coat 13 x 9 inch baking dish with nonstick cooking spray, set aside.
- 2. Combine milk, egg and salt in large bowl; whisk to mix well. Add beef, cheese, onion and oats/corn flakes; mix well. Share mixture into 9 loaves, using scant 1/2 cup mixture for each; place in prepared dish.
- 3. Combine ketchup, brown sugar and mustard in small bowl; stir to mix well. Spoon over meatloaves. Cover and refrigerate overnight (I skip this step most of the time).
- 4. Preheat oven to 350 degrees F. Bake, uncovered, for 40 to 45 minutes or until loaves are cooked through. ***Let meatloaves stand at room temperature for 30 minutes before putting in oven if baking dish is not safe for refrigerator to oven use.

- Preheat oven to 450 degrees, with racks in upper and lower thirds. Brush a rimmed baking sheet with oil. In a small bowl, mix together 2 tablespoons mustard and ketchup.
- In a medium bowl, combine beef, egg, panko, 1/2 cup cheddar, 1/2 teaspoon salt, and teaspoon pepper. Form into four 2-by-4-inch loaves; place on baking sheet. Brush with mustard mixture; top with remaining 1/2 cup cheddar. On another rimmed baking sheet, toss potatoes with 1 tablespoon oil; season with salt and pepper.
- Transfer meatloaves to upper rack of oven, and place potatoes on lower rack. Bake until loaves are cooked through, 15 to 20 minutes, rotating sheets after 10 minutes. Remove loaves from oven; continue to roast potatoes until tender, about 5 minutes.
- Meanwhile, in a large bowl, whisk together remaining tablespoon oil, remaining teaspoon mustard, and vinegar; season with salt and pepper. Add lettuce to bowl, and toss. Serve meatloaves with potatoes and salad.

- Heat a skillet over medium high heat. Add fresh breadcrumbs, cook 3 minutes or until toasted, stirring frequently.
- While the breadcrumbs cook, heat a large skillet over medium high heat. Coat the pan with cooking spray. Add the onion and garlic; saute 3 minutes.
