ASIAN PASTA SALAD WITH PEANUTS



Asian Pasta Salad with peanuts image

This Asian Pasta Salad is made with angel-hair pasta, peanuts, cilantro, red peppers, edamame and green onions. You'll get all the great Asian flavors with sesame oil, soy and teriyaki sauce. Crushed red pepper flakes add just a kick of heat.

1/4 cup avocado oil
1/2 cup sesame oil
1 1/2 teaspoon crushed red pepper flakes
1/2 cup agave liquid
1/3 cup soy sauce (low sodium)
1/3 cup teriyaki sauce
16 ounces angel hair pasta
3/4 cup red bell pepper (diced)
1 cup shelled edamame (if frozen, thaw )
1 bunch cilantro (chopped)
1/2 cup green onions (chopped)
1 cup cocktail peanuts (dry roasted and salted)
toasted sesame seeds sprinkled on top

Steps:

  • Combine oils and crushed red pepper flakes and heat over low heat for about 5 minutes. You can strain out the red pepper flakes if you are sensitive to a little extra heat. Leave them in for full flavor. Set aside in refrigerator while prepping other steps.
  • Combine agave, soy sauce, and teriyaki sauce. Set aside in refrigerator while prepping other steps.
  • Cook pasta according to package directions. Do not overcook! Remove from heat, drain, and run under cold water. Set aside.
  • While water is boiling you can get started on the vegetables. (Just watch your time if the pasta has started boiling. If only takes 3 minutes.) Dice red bell pepper. Chop green onions, and cilantro. Set aside.
  • Add cooked cooled pasta, chopped peppers, edamame, cilantro, green onions, and peanuts to a large bowl.
  • Pour cooled oil mixture and soy sauce/teriyaki mixture on top. Toss together.

One 8-ounce bag julienne/fine-cut carrots (about 1 1/2 cups)
One 6-ounce bag baby sweet peppers, seeded and sliced thinly into rings (about 1 cup)
One 4-ounce bag bean sprouts (about 1 cup)
3 English cucumbers, halved, seeds removed and sliced
3 scallions, sliced
Up to 1 bunch fresh cilantro, chopped
1/2 head or more napa cabbage, sliced
1/2 head or more purple cabbage, sliced
1/2 bunch kale, leaves torn off the stalks and shredded
2 cups peanuts, chopped
1/2 cup olive oil
1/3 cup low-sodium soy sauce
1/4 cup oyster sauce
1/4 cup rice wine vinegar
1/4 cup brown sugar
3 tablespoons chopped fresh ginger
2 tablespoons sesame oil
2 to 3 cloves garlic, chopped

Steps:

  • For the salad: Bring a pot of water to a boil. Cook the spaghetti to al dente according to the package directions. Drain, rinse and let cool.
  • Mix together the cooked spaghetti, carrots, peppers, bean sprouts, cucumbers, scallions, cilantro, napa cabbage, purple cabbage and kale. Add the peanuts and toss together.
  • For the dressing: Whisk together the olive oil, soy sauce, oyster sauce, rice wine vinegar, brown sugar, ginger, sesame oil and garlic in a medium bowl.
  • Pour the dressing over the salad and mix together with tongs or your hands. If the salad seems a little dry, just mix up a little more of the wet ingredients of the dressing and throw it in. It's a very organic process.
  • Transfer to a large platter and serve.

This is the most absolutely wonderful salad! It's perfect to serve at any dinner party. If you want more heat then increase the cayenne pepper. The green beans can be substituted with fresh snow peas. Plan ahead the noodles have to be chilled for 2 hours. If you want to make this into a main dish throw in some cooked chicken or shrimp. Prep time includes chilling time.

1 lb linguine (broken in half)
6 tablespoons sesame oil
5 tablespoons honey
5 tablespoons soy sauce
5 tablespoons balsamic vinegar

3 large red bell peppers, seeded and sliced very thin
3 cups fresh green beans, ends trimmed and cut in half
1 large sweet onion, thinly sliced

  • Cook the pasta in a large pot of boiling salted water until only JUST firm-tender; drain VERY well, and transfer to a large bowl.

  • Mix half of the dressing into the pasta; toss well to coat.
  • Cover the pasta and chill for 2 hours (or more).

1 cup fresh orange juice

1/2 teaspoon garlic powder

Pasta with an Asian twist. I know it sounds weird to use Italian pasta with an Asian sauce, but trust me it totally works. This is a great base to add all sorts of veggies and proteins too. I usually do it with snow peas, broccoli and tofu but feel free to experiment. If you are adding a lot you might want to increase the sauce a bit though.

As far as the fish sauce goes, its one of those things that on its own, not so good, but add it to something, and it really brings up the flavor. Enjoy.
