TARKA DHAL

tarka dhal image

Tarka dhal is a delicious complement to any Indian meal. It also makes a great main for any vegan Indian menu. If you can't get the curry leaves, just leave them out.

Time 55m

Number Of Ingredients 15

1 cup masoor dahl
3 1/2 cups water (plus more as needed)
1/2 tsp turmeric
1 tsp salt
3 tbsp oil (vegetable or other neutral oil)
1 onion (finely diced)
2 kashmiri chilies (optional)
1 tsp mustard seed
1 tsp cumin seed
4 green chilies (de-seeded and chopped)
10 or so fresh curry leaves
1 tsp dried methi ( - dried fenugreek leaves)
1 tbsp tomato paste ( in 2 Tbsp water or some fresh tomato, diced)
1 tbsp lemon juice ( - about 1/6 of a lemon)
handful of cilantro (chopped)

Steps:

  • Combine the masoor lentils, water and turmeric.
  • Bring to a lively simmer uncovered. Uncovered is key. I've had lentils boil over on me more times than I can count. Now I start them uncovered. Problem solved.
  • Once the lentils come to a simmer, reduce heat to low and cover.
  • Cook lentils until they completely break down into a creamy consistency. You will not be able to discern individual lentils. This should take somewhere around 40 minutes.
  • Add the salt. You will adjust the seasoning at the end.
  • Heat the oil over medium heat.
  • Add the kashmiri chilies if using. Cook until the edged just start to bubble.
  • Flip the kashmiri chilies. Add the mustard seeds and cumin seed and fry briefly. They should crackle a bit and dance around.
  • Turn the heat down a bit and add onion. Cook until the onions are translucent.
  • Add the green chilies, curry leaves and methi and continue to cook for around 2 minutes.
  • Stir in the tomato paste or fresh tomatoes if using. Cook for 20-30 seconds then add the tarka to the dahl..
  • Stir to thoroughly combine.
  • Adjust consistency to your taste with little bit of water (I like it a bit runny).
  • Add the cilantro and lemon juice to taste.
  • Adjust salt. Around a half a tsp give or take. Creep up on it. You can add salt. You can't take it away.
  • Enjoy.

LENTIL DHAL WITH ROASTED GARLIC

Lentil Dhal With Roasted Garlic image

This is a variation of Tarka Dahl, a North Indian dish of yellow lentils seasoned with garlic and spiced oil. Although this recipe contains a whole head of garlic, do not be concerned about the garlic being overpowering - it acquires a lovely mellow flavour when roasted. I find it quite delicious. In regard to spiciness, though, to my taste this recipe is quite mild - next time I will include the white inner flesh and seeds of the chili, but you can remove these if you prefer. Incidentally, if you ever take a mouthful of something that is overwhelmingly hot, don't rush for water - the best remedy is milk, vinegar, or alcohol! Accompany this dish with rice or Indian bread, and a vegetable dish.

Time 1h20m

Yield 4-6 serving(s)

Number Of Ingredients 22

1 head garlic
2 tablespoons extra virgin olive oil, plus extra for brushing and drizzling
2 tablespoons ghee or 2 tablespoons butter
1 onion, chopped
2 fresh green chilies, seeded (optional)
1 tablespoon chopped fresh gingerroot
8 ounces split yellow lentils (Toor dhal, Chana dhal, or split yellow peas) or 8 ounces split red lentils (Masoor dhal)
3 3/4 cups water
1 teaspoon ground cumin
1 teaspoon ground coriander
2 tomatoes, peeled and diced
1 -2 teaspoon lemon juice
salt & freshly ground black pepper, to taste
3 tablespoons fresh cilantro, to garnish
2 tablespoons peanut oil or 2 tablespoons other vegetable oil
4 -5 asian shallots, peeled and sliced
2 garlic cloves, thinly sliced
1 tablespoon ghee or 1 tablespoon butter
1 teaspoon cumin seed
1 teaspoon brown mustard seeds
3 -4 dried red chilies
8 -10 fresh curry leaves (or you can use frozen, but not dried)

Steps:

  • Place the whole head of garlic in an oiled roasting tin - I used a little pannacotta mould that the garlic could sit snugly in - and drizzle a little olive oil over the garlic. Pop the garlic in a preheated 350F (180C) oven, and roast it for 30 minutes.
  • Meanwhile, wash and drain the lentils, and then place them in a large, heavy-bottomed, preferably non-stick pan, with the 3 ¾ cups of water. Bring to the boil, then reduce heat to a simmer, partially covering the pan with its lid. Stirring occasionally, allow the lentils to simmer for about 35 minutes, or until the mixture starts to take the appearance of very thick soup. You may need to add some water to the pan, from time to time, as it evaporates and the mixture starts to look dry.
  • Once you have the lentils on to cook, melt the ghee or butter in a small to medium skillet, and cook the onion, fresh chilies and ginger over low heat, stirring from time to time, until golden - about 10 minutes. Just as the lentils are becoming tender, add the onion mixture to the lentils and stir to combine. Then allow the lentils to finish cooking. Give the skillet a bit of a wipe with kitchen paper, as you will use it again shortly.
  • At about this time, the garlic should be soft and tender. Remove it from the oven and let it cool - roasted garlic can be extremely hot, so take care. Cut off the top third of the head, and holding the garlic over a small bowl, squeeze and otherwise dig out the flesh from each clove. Next, mash the garlic with the 2 tablespoons olive oil.
  • Add the roasted garlic puree, ground cumin and ground coriander to the lentil mixture, and season with salt and pepper to taste. Cook for 10 minutes, stirring frequently, then add the diced tomatoes and a little lemon juice, to taste. Mix thoroughly, then reduce the heat while you prepare the spice mix.
  • Heat the oil in the skillet and fry the sliced shallots until quite crispy and brown. Add the garlic and cook until it just colours slightly - overcooked garlic gets bitter. Remove this mixture from the pan and set it aside.
  • Melt the ghee or butter in the same pan, and fry the cumin and mustard seeds until the mustard seeds start popping. Stir in the dried chilies, curry leaves and the shallot mixture, then tip it all into the lentils and swirl it around.
  • Garnish the dhal with the fresh cilantro and serve immediately.

TARKA DHAL

Tarka dhal image

Make a simple and healthy storecupboard supper like this easy dhal when you're cooking on a budget. To keep it vegan, use vegetable oil rather than ghee

Provided by Simon Richards

Categories     Dinner, Main course, Supper

Time 1h10m

Number Of Ingredients 8

200g red lentils
2 tbsp ghee, or vegetable oil if you're vegan
1 small onion, finely chopped
3 garlic cloves, finely chopped
¼ tsp turmeric
½ tsp garam masala
coriander, to serve
1 small tomato, chopped

Steps:

  • Rinse the lentils several times until the water runs clear, then tip into a saucepan with 1 litre water and a pinch of salt. Bring to the boil, then reduce the heat and simmer for 25 mins, skimming the froth from the top. Cover with a lid and cook for a further 40 mins, stirring occasionally, until it's a thick, soupy consistency.
  • While the lentils are cooking, heat the ghee or oil in a non-stick frying pan over a medium heat, then fry the onion and garlic until the onion is softened, so around 8 mins. Add the turmeric and garam masala, then cook for a further minute. Set aside.
  • Tip the lentils into bowls and spoon half the onion mixture on top. Top with the coriander and tomato to serve.

  • Select the Sauté setting on the Instant Pot and let the pot heat up for a few minutes before adding the 2 teaspoons of coconut oil, followed by the onion and a pinch of salt. Cook until the onion is translucent, 3-4 minutes.
  • Add the garlic, ginger, and serrano peppers, and cook for 60 to 90 seconds, stirring frequently to prevent sticking. Add the turmeric, coriander, garam masala, chile powder (if using), and 1 teaspoon kosher salt. Stir vigorously for 30 seconds until very aromatic. Pour in the 2 tablespoons water and stir to incorporate (this prevents the spices from drying out and burning).
  • Select the Cancel setting and pour in the water, using a wooden spoon to scrape up any browned bits on the bottom of the pot. Add the soaked and drained lentils, and stir to combine.
