Red Velvet Poke Cake is made with red velvet cake mix with a creamy cheesecake filling and topped with whipped topping and crushed Oreos.

15.25 ounce box red velvet cake mix
(ingredients needed to make cake - eggs, oil & water)
2 (3.4 ounce) boxes instant Cheesecake-flavored pudding
4 cups milk
8 ounce tub frozen whipped topping (COOL WHIP) (thawed)
10 Oreo cookies, (crushed (optional))

Steps:

  • Prepare cake mix according to package directions for a 9x13 cake. Once cake comes out of the oven, allow it to cool for just a couple of minutes.
  • Then, with a wooden spoon handle, a spatula handle, or some other similarly-sized object, begin poking holes in the warm cake. You want the holes to be BIG so that the pudding has plenty of room to get down in there. Be sure to poke right down to the bottom of the cake.
  • In a medium bowl, whisk together pudding mix with 4 cups of milk. Whisk until all the lumps are gone.
  • Pour pudding over cake. Taking care to pour it right into the holes as much as possible.
  • Spread it all out and using the back of the spoon, gently push pudding down into the holes.
  • Put the cake into the fridge to set and cool (about 2 hours).
  • Once your cake has completely cooled, spread on whipped topping. Spread it out evenly over the pudding layer.
  • Spread crushed Oreos onto the top of the cake.

280g golden caster sugar
175g butter , softened
3 large eggs
280g self-raising flour
75g cocoa powder
150ml buttermilk
1 tsp white wine vinegar
85g full-fat cream cheese
75g puréed raspberry , sieved to remove seeds
¼ tsp red food gel
150g punnet raspberry , optional
200g icing sugar
50g butter , softened
140g cream cheese

Steps:

  • Heat oven to 180C/160C fan/gas 4. Grease and line the bases of 2 x 20cm sandwich tins with baking parchment. Using an electric hand whisk, beat together the caster sugar and butter until light and fluffy. Add the eggs one at a time, beating well between each addition.
  • Sieve the flour and cocoa powder into a bowl. Add half to the egg mixture and fold in carefully. Mix together the buttermilk, vinegar, cream cheese, raspberry purée and food gel. Fold half the buttermilk mixture into the cake batter and repeat the process with both the flour mixture and buttermilk mixture.
  • Spoon the combined mixtures into your prepared tins and cook for about 25-30 mins, until an inserted skewer comes out clean. Leave to cool for 10 mins before turning out onto a wire rack.
  • For the frosting, mix together the icing sugar and butter until soft and creamy, then stir in the cream cheese. Sandwich the cooled cakes together with half of the frosting, adding 150g fresh raspberries if you like, then spread the remaining frosting over the top. Will keep for up to 3 days in a cool place.

From my test kitchen. Less ingredients than some red velvet cake recipes call for, an inexpensive, yummy and moist version. Perfect if it's your first time trying the red velvet cake.

1 (15 ounce) box of duncan hines' red velvet cake mix
3 1/2 ounces white chocolate pudding mix or 3 1/2 ounces regular chocolate instant pudding
1 (14 ounce) can condensed milk
1 cup oil
3 large eggs
1 (12 ounce) can Coke
1 (8 ounce) container whipped topping, thawed
8 ounces cream cheese, softened
1 (14 ounce) can sweetened condensed milk
2 tablespoons butter, melted (optional)

Steps:

  • Mix all cake ingredients except milk.
  • Bake according to box directions.
  • Immediately after removing from oven, poke holes over the cake (with a chopstick or similar tool) and slowly pour condensed milk over the top of the cake, let it be absorbed.
  • Let the cake cool.
  • While the cake cools hand-mix all frosting ingredients.
  • If the cake is completely cool, frost the cake and refrigerate.

This is another version of "poke-cake" recipes. We like to make this in summer when the raspberry supply is plentiful. Note: Cooking time includes the 1-hour cooling time and 2 hours in the refrigerator before serving.

1 (18 ounce) box white cake mix with pudding
1 1/4 cups water
1/3 cup vegetable oil
3 egg whites
1 (3 ounce) box raspberry Jell-O gelatin, 4 serving size
1 cup boiling water
1/2 cup cold water
2 cups frozen whipped topping, thawed
fresh raspberry (to garnish)

Steps:

  • Heat oven to 350 degrees. Grease bottom only of 13x9-inch pan with shortening or cooking spray. Make cake mix as directed on box, using water, oil and egg whites. Pour into pan.
  • Bake 28-33 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour.
  • Pierce cake every 1/2 inch with fork. In small bowl, stir gelatin and boiling water until smooth; stir in cold water. Pour over cake. Run knife around side of pan to loosen cake. Refrigerate 2 hours. Spread whipped topping over top of cake; garnish with raspberries. Store covered in refrigerator.
  • *You can also make this a strawberry poke cake by substituting strawberry gelatin for the raspberry, and garnishing with fresh strawberries*.

A delicious sounding variation on the Red Velvet Cake. I had never heard of Red Velvet Cake until I visited my husband's relatives in Chicago. (They even have Duncan Hienz Red Velvet Cake Mix there). It a traditional holiday cake in their family and since I tried it I have been on a quest for the best recipe. This is my latest contender gleaned from the pages of Cooking Light.

3 cups sifted cake flour
2 tablespoons unsweetened cocoa
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 2/3 cups granulated sugar
1/2 cup butter, softened
4 large egg whites
2 cups fat-free buttermilk
1 (1 ounce) bottle red food coloring
1 teaspoon vanilla extract
7 ounces low-fat cream cheese
1 teaspoon vanilla extract
2 3/4 cups powdered sugar
1/2 cup seedless raspberry jam

Steps:

  • Preheat oven to 350°F Coat 2 (9-inch) round cake pans with cooking spray and line bottoms of pans with wax paper or parchment paper.
  • Measure out 3 cups cake flour by spooning into measuring cup and leveling with a knife.
  • Combine flour, cocoa, baking soda, baking powder and salt.
  • Set aside.
  • In another bowl, beat granulated sugar and butter with a mixer at medium speed for 4 minutes or until well blended.
  • Add egg whites to sugar mixture, beat at medium speed for 5 minutes or until fluffy.
  • Combine buttermilk, food coloring, and 1 teaspoon vanilla in a small bowl, stirring well with a whisk.
  • Add flour mixture to sugar mixture alternately with buttermilk mixture, beginning and ending with flour mixture; mix just until moistened.

  • Tap pans sharply on counter to remove any large air bubbles.
  • Bake at 350°F for 28 minutes or until a wooden pick inserted in center comes out clean (do not overbake).
  • Cool in pans 10 minutes; remove from pans and cool completely on wire racks.
  • For frosting: Combine cream cheese and 1 teaspoon vanilla in a medium bowl.
  • Beat with a mixer at high speed for 3 minutes or until fluffy.
  • Add powdered sugar and beat at low speed just until blended.
  • To assemble cake: Place 1 cake layer on plate; spread with jam; top with second cake layer.
  • Spread frosting over top and sides of cake.
  • Store cake loosely covered in refrigerator.

Spread it out evenly over the pudding layer. If you haven't done so already, crush your Oreo cookies. I just place mine in a ziploc bag and crush them with a rolling pin. Leave some of the pieces big. It's nice to have a bit of a crunch when you eat the cake. Spread crushed Oreos onto the top of the cake. You can do this part immediately before serving the cake if you like. This will ensure the cookie bits are crunchy when you serve it. This cake needs to be kept refrigerated.
