CURRIED SHRIMP
This is a curried dish that is made from coriander and cumin as the curry. Substitute curry powder if you are unable to get these spices. It also uses hot fresh peppers which can be either red or green, jalapeno or serrano. This goes great with Saffron Rice.

Steps:
- Peel and devein shrimp. Heat butter in a skillet over medium heat. Add onion and jalapeno pepper and saute until softened, about 3 minutes. Add shrimp, salt and pepper to taste. Cook, stirring often, about 3 more minutes. Season with cardamom and cumin and stir. Add in the lime juice, sour cream, and yogurt. Bring to a gentle boil, stirring. Sprinkle with chopped cilantro and serve.

I got this YEARS ago from a magazine running a 5 meals in 5 hours article. I LOVE this dish. I think it was the first time I'd ever had curry and I've been hooked ever since.

Steps:
- If turkey is frozen, let it thaw overnight in the refrigerator.
- For filling, in a 10-inch skillet cook turkey and onion till turkey is brown.
- Drain off any fat.
- Stir in the green pepper, carrot, raisins, curry powder, salt cumin and pepper, cover and simmer 10 minutes.
- If necessary, remove cover and cook over high heat 3 to 4 minutes or till liquid is evaporated.
- Spoon filling into a bowl and let cool.
- Let frozen pie crusts stand at room temperature while the filling cools.
- To assemble turnovers, unfold/unroll/roll-out pie crusts; sprinkle with flour.
- Place crusts, floured side down, on a baking sheet.
- Spread half of the filling over half of each crust, leaving a 1-inch edge along the outside.
- Moisten edge with water.
- Gently lift and fold other half of pie crust over filling.
- Seal and flute edges.
- Wrap each turnover separately in foil; seal, label, and freeze.
- SERVE IMMEDIATELY: Brush turnovers with beaten egg.
- Cut slits in dough to let steam escape.
- Bake in a 375°F oven about 25 minutes or till golden brown and heated through.
- Serve as above with yogurt, sour cream and/or chutney.
- If frozen plan to cook for 40 to 45.

Steps:
- Stir fry chicken and shrimps in hot oil for 1 minute. Add water chestnuts, mushrooms and cilantro. Add seasonings. Cook for another minute. Set aside to cool.
- Flatten each biscuit to make a 3 inch circle. Place 1 tablespoon of chicken filling in center of each circle. Fold to make a half moon; pinch edges to seal.
- Bake on ungreased cookie sheet at 375°F for 10 minutes or until golden.

Steps:
- Thaw puff pastry and roll each sheet to a rectangle, 6-by-8-inches.
- Cut each sheet into 6 even squares.
- In a bowl, combine Crab Meat, Tiny Shrimp and Anchovies, with dijon-sytle mustard, worcestershire sauce, cream cheese and garlic powder to a smooth filling.
- Add salt, pepper and chili powder.
- Place one sixth of the filling onto each pastry square.
- Beat egg.
- Brush edges of dough with egg.
- Fold half the dough over to form triangles.
- With a fork, seal edges.
- Fill a fryer or heavy saucepan 2/3 full with oil.
- Heat oil until it reaches 365 degrees to 370 degrees.
- Add turnovers, a few at a time, and fry until they are golden brown, crispy and heated through.
- Turn with slotted spoon while frying.
- Drain on paper towels.
