Steps:
- Unplug the bread machine and remove the bread pan.
- Soften the butter in a microwave.
- Lightly beat the eggs.
- Add milk, butter, eggs and then the rest of the ingredients into the bread pan.
- Place the bread pan back into the bread machine and then plug in the bread machine.
- Enter the bread machine settings (Sweet Quick Bread, Light Color) and press the start button. FYI - Before making this recipe, please read the tips section below for more information regarding the sweet quick bread setting used to make cornbreads. The setting may be called "quick bread", "quick bread/cake", "cake", etc. However, some manufacturers use the "quick bread" setting are for rapid sandwich-type breads that use yeast (and not for quick breads such as cornbread that use baking powder/soda). Therefore, this setting can be very confusing... but the tips section below will help you to find the right setting to use on your machine. You need to enter the correct cornbread setting used by your SPECIFIC bread machine model or the cornbread could be under or overcooked.
- When the bread machine has finished baking the cornbread, unplug your bread machine. Remove the bread pan and place the bread pan on a wooden cutting board. Let the bread stay within the bread pan for 10 minutes before you remove it from the bread pan. Use oven mitts when removing the bread pan because it will be very hot!
- After removing the cornbread from the bread pan, place the bread on a cooling rack. Use oven mitts when removing the bread. Let the cornbread cool down for 60+ minutes or it will be more likely to break/crumble when cut into slices.
- Don't forget to remove the mixing paddle if it is stuck in the bread. Use oven mitts as the mixing paddle could be hot.

CLASSIC CORNBREAD
Matt and Amy Bell, owners of the restaurant South on Main, usually avoid cooking contests. But the cornbread festival was different. "It's more of a community project than a competition," Matt says. "And it's directly outside the restaurant." The pair won the traditional category with their classic cornbread, a recipe developed by Amy's grandmother Nellie Mae. "You don't dare mess with family recipes," Matt says. "And if you do, you better make sure they can't tell."

SWEET CORNBREAD (BREAD MACHINE)
This tastes like the cornbread my gramma and mom make that's why I like it. It's a sweet cornbread but because you use brown sugar (we prefer dark brown.) it's a 'richer' sweet then white sugar...hope that makes sense! You can add corn to it if you wish. This is bread machine compatible to! Just follow your machines directions for the correct order of ingredients.

Steps:
- BREAD MACHINE: Add all ingredients to your bread machine pan in the order directed by your machines manual. I cook on the 'Quick Bread' setting also set for a 'medium' crust. Have been told that is equivalent to 'Cake' setting set for 'light' crust on some machines.
- OVEN BAKE: Preheat oven to 350F (177C). Mix all ingredients together in a bowl. Add corn last (if using) and mix in by hand. Pour equally into two loaf pans and bake for 25 minutes or until a toothpick inserted near the center comes out clean.
- This makes a 2 pound loaf for bread machine.

PORTUGUESE CORNMEAL BREAD
This deceptively simple loaf is inspired by the Portuguese bread known as pao de milho or broa. Sprinkling the top of the bread with water just before baking creates steam and ensures a crisp, toothsome crust.

Sprinkle generously with cornmeal and flour to ensure an even coating. With lightly oiled hands, punch down dough, pour out onto a clean work surface, and shape into a ball. Transfer to Dutch oven; lightly sprinkle top with more cornmeal and flour. Cover Dutch oven with plastic wrap and letrise at room temperature until doubled in volume, 1 1/2 to 2 hours.

Uncover and continue baking until a thermometer inserted into center of loaf registers 190 degrees to 200 degrees, about 15 minutes more. PORTUGUESE CORN BREAD FOR THE BREAD MACHINE (BROA)
Based on a recipe from Madge Rosenberg's delightful cookbook, The Best Bread Machine Cookbook Ever - Ethnic Breads. She says, "Light, grainy broa partners chili or a spicy stew or thick soup. Smear a fresh or toasted slice with butter or soft avocado and/or tomato, or ladle a fish stew over toasted broa." The default measurements are for a small 1 pound loaf; I have placed measurements for a large 1 ½ pound loaf in parentheses. Your bread machine may have a basic bread cycle much quicker than the 4 hour one I reference under the cook time. My photo shows it buttered with honey.

- In a large bowl, mix 2 1/2 cups of the flour, the cornmeal, salt, and yeast. Add the butter and use a mixer to blend in the butter. Slowly add in the warm water and the molasses, stirring carefully. Add 1/2 cup additional flour, and then, using a mixer, beat at medium speed for two minutes. Stir in approximately four more cups of flour (you will need to work it in with your hands at this point) to make a stiff dough.
- Turn out the dough onto a floured board and knead until smooth and elastic for approximately 8 to 10 minutes. Grease a large bowl with butter and place the dough in the bowl. Turn the dough so that all sides are coated. Cover with a towel and let rise in a warm place for one hour, until doubled in bulk.
- Punch the dough down and divide it in half. Roll each half out on a floured board into an approximately 14x9" rectangle. Roll up the rectangle and place it in a greased 9x5x3" loaf pan. Repeat with the other half of dough. Cover with a towel and let rise again, until doubled in bulk, approximately 45 minutes. Melt the 1 tablespoon of butter and brush it over the top of the loaves.
- Bake the loaves at 375 for approximately 45 minutes. The bread should be medium brown and crispy on top, and should make a hollow sound when tapped. Cool on wire racks. Serve warm with butter. Makes two loaves
