14 dried lasagna noodles
2 tablespoon olive oil, divided
1.5 cup finely chopped carrots (3 medium)
2 cup finely chopped zucchini (1 medium)
4 cloves garlic, minced
3 cup sliced fresh mushrooms (8 ounces)
2 6 ounce package prewashed baby spinach
2 tablespoon snipped fresh basil
1 egg, lightly beaten
1 15 ounce carton ricotta cheese
0.333 cup finely shredded Parmesan cheese
0.5 teaspoon salt
0.25 teaspoon ground black pepper
1 26 ounce jar tomato-and-basil pasta sauce (2-1/2 cups)
2 cup shredded Italian Fontina or mozzarella cheese (8 ounces)
Rosemary sprigs (optional)

Steps:

  • Preheat oven to 375 degrees F. Cook lasagna noodles according to package directions. Drain noodles; rinse with cold water. Drain again; set aside.
  • Meanwhile, in a large skillet, heat 1 tablespoon of the olive oil over medium-high heat. Add carrots, zucchini, and half of the garlic. Cook and stir about 5 minutes or until vegetables are crisp-tender. Transfer vegetable mixture to a bowl. Add the remaining oil to the same skillet and heat over medium-high heat. Add mushrooms and remaining garlic. Cook and stir about 5 minutes or until tender. Gradually add spinach. Cook and stir for 1 to 2 minutes or until spinach is wilted. Using a slotted spoon, transfer spinach-mushroom mixture from skillet to a bowl. Stir basil into spinach-mushroom mixture; set aside.
  • In a small bowl, stir together egg, ricotta cheese, Parmesan cheese, salt, and pepper. Set aside.
  • To assemble pie, in the bottom of a 9x3-inch springform pan, spread 1/2 cup of the pasta sauce. Arrange three to four of the cooked noodles over the sauce, trimming and overlapping as necessary to cover sauce with one layer. Top with half of the spinach-mushroom mixture. Spoon half of the ricotta cheese mixture over spinach mixture. Top with another layer of noodles. Spread with half of the remaining pasta sauce. Top with all of the vegetable mixture. Sprinkle with half the Fontina cheese. Top with another layer of noodles. Layer with remaining spinach-mushroom mixture and remaining ricotta cheese mixture. Top with another layer of noodles (may have extra noodles) and remaining sauce. Gently press down pie with the back of a spatula.
  • Place springform pan on a foil-lined baking sheet. Bake for 45 minutes. Sprinkle with remaining Fontina cheese; bake about 15 minutes more or until heated through. Cover and let stand on a wire rack for 15 minutes before serving. Carefully remove side of pan. To serve, cut into wedges. If desired, garnish with rosemary sprigs. Makes 10 servings.

I just love lasagna! This one is great - it's loaded with vegetables... and cheese! I love the spinach in this dish! I adapted this from a recipe from BH&G Biggest Book of Italian Recipes. I made it as directed in the recipe (in a spingform pan - which looks great when you have company over!) but you can bake it in a 13x9 baking dish.

2 tablespoons olive oil
3 medium carrots, finely chopped
1 medium zucchini, finely chopped (2 cups)
1 red pepper, finely chopped
4 garlic cloves, minced
3 cups sliced fresh mushrooms
2 (6 ounce) packages prewashed Baby Spinach
2 tablespoons snipped fresh basil
1 beaten egg
1 (15 ounce) carton low-fat ricotta cheese
1/3 cup finely shredded parmesan cheese
1 (26 ounce) jar tomato and basil pasta sauce
14 dried lasagna noodles
2 cups shredded lowfat mozzarella cheese

Steps:

  • Preheat oven to 375°F
  • Cook lasagna noodles according to package directions. Drain lasagna noodles; rinse with cold water and drain well. Lay noodles in a single layer on a sheet of foil.
  • In a large skillet, heat 1 tablespoon of the oil over medium-high heat. Add carrots, zucchini, red pepper and half of the garlic. Cook and stir for about 5 minutes or until crisp tender. Transfer to a bowl. Heat remaining oil in the same skillet. Add mushrooms and remaining garlic. Cook and stir about 5 minutes or until tender. Gradually add spinach. Cook and stir for 1 to 2 minutes or until spinach is wilted. Using a slotted spoon, transfer spinach mixture to medium bowl; stir in basil.
  • In a bowl, combine egg, ricotta, parmesan, salt and black pepper.
  • To assemble pie, spread 1/2 cup of the pasta sauce in the bottom of a 9-inch sprinform pan. Arrange three to four of the lasagna noodles over the sauce, trimming and overlapping as necessary to cover sauce with one layer. Top with half of the spinach mixture. Top with half of the ricotta mixture. Top with another layer of noodles. Spread with half of the remaining pasta sauce. Top with all of the zucchini-carrot mixture. Sprinkle with half of the mozzarella cheese. Top with another layer of the lasagna noodles. Layer with remaining spinach mixture and ricotta mixture. Top with another layer of noodles and remaining sauce (you may have extra noodles). Gently press down pie with back of spatula.
  • Place springform pan on a foil-lined baking sheet. Bake for about 1 hour or until heated through, topping with remaining mozzarella cheese for the last 15 minutes of baking. Cover and let stand on a wire rack for 15 minutes before serving. Carefully remove side of springform pan.

We could find no precedent for this particular recipe and had to rely on Barbara to give us a few clues as to its origin: "As a young homemaker on a tight budget, I became very inventive when it came to stretching a pound of meat to feed my family. This recipe was a spin-off of the Michigan Pasty, a ground beef, potato, and onion combination wrapped in pie crust. My first version did not include a crust. I cooked the ingredients in an electric fry pan and served it from the pan. Some time later, I decided to change its presentation and piled the browned and partially cooked ingredients into a pie plate, added a top crust, and baked it. My creation became Mile High Bologna Pie. When my daughter-in-law asked me how to make this dish, I knew my son, who is fussy about his food, really liked it." 1 lb bologna, deli, peeled and cut into 1/2-inch thick rounds
1 onion, small, halved and sliced thin
2 potatoes, large russet, peeled, halved lengthwise, and sliced thin

Steps:

  • Adjust an oven rack to the middle position.
  • Preheat oven to 425 degrees Fahrenheit.
  • Heat 1 Tablespoon oil in a large nonstick skillet until shimmering.
  • Working in two batches, cook the bologna in a large skillet over medium heat until lightly browned on both sides, about 6 minutes.
  • Transfer to a large plate.
  • Heat the remaining 1 Tablespoon oil in the now-empty skillet until shimmering.
  • Cook the onion until softened, about 3 minutes.
  • Add the potatoes and carrots and cook, tossing occasionally, until just beginning to brown, about 8 minutes.
  • Add the garlic and cook until fragrant, about 30 seconds.
  • Stir in the water, cover, and cook until the potatoes and carrots are just tender, about 15 minutes.
  • Stir in the peas and season to taste with salt and pepper.
  • Let the vegetables cool until just warm, about 30 minutes.
  • Spoon the vegetables into the pie shell.
  • Arrange the bologna over the top of the vegetables.
  • Top with the remaining chilled circle of dough and crimp the edges as desired.
  • Cut four 2-inch slits in the top of the dough; brush top with beaten egg.
  • Bake until the crust is golden brown, about 30 minutes.
  • Let cool for 5 minutes.
  • Serve, drizzling ketchup over the top.

1/4 cup parmesan cheese, grated
1 lb lean ground beef, browned and drained
1 teaspoon dried oregano

1 (6 ounce) can tomato paste
1/2 cup mozzarella cheese, shredded
1 cup milk
2/3 cup Bisquick baking mix
2 eggs
1 teaspoon salt
1/4 teaspoon ground black pepper
1/2 cup mozzarella cheese, shredded

Steps:

  • Preheat oven to 400F (205C).
  • Grease 10" pie plate.
  • Layer cottage cheese and Parmesan cheese in plate.
  • Mix beef, herbs, tomato paste and Mozarella cheese.
  • Spoon beef mixture on top.
  • Beat milk, eggs, salt and pepper in blender on HIGH until smooth (about 1 minute).
  • Pour into plate.
  • Bake at 400F (205C) for 30 to 35 minutes or unril knife inserted in center comes out clean.
  • Sprinkle with Mozzarella cheese.

2 tablespoons olive oil
1 large onion, grated
2 -3 garlic cloves, grated
1 lb ground sirloin
2 cups beef stock
1 (28 ounce) can san marzano tomatoes
1 (15 ounce) can crushed tomatoes
3 -4 basil leaves, torn
salt and pepper
4 tablespoons butter
4 tablespoons flour
1 quart milk
fresh nutmeg
2 (8 ounce) boxes no-boil lasagna noodles
2 cups gratd parmesan cheese
1/2 cup provolone cheese, grated
parsley, chopped, for garnish

Steps:

  • Preheat oven 375 degrees.
  • Heat oil in large skilled med. low, cook onion and garlic about 10 min, till tender.
  • Turn heat up to med. high, brown beef, add beef stock, basil and tomatoes breaking up with potato masher or wooden spoon. Season with salt and pepper. Bring to bubble, reduce heat and simmer 5 minute.
  • Make a white or beshemel sauce in a saucepan: melt butter, stir in flour, whisk in milk. Cook over med. high till thick, stirring. Season with salt, pepper and nutmeg.
  • Layer Lasagna in loaf pans for the mile high effect. Meat sauce, Lasagna, white sauce and a handful of cheese, repeat till its a mile high!
  • Cover with aluminum foil, place pans on baking sheet, Bake 30 minutes Uncover Bake15 more minutes.
  • Notes: Sometimes I half this for my small family and only make 1 loaf pan. I have used dry seasoning, but I'm sure fresh are better. I also just use ground beef and my own canned tomatoes. Sometimes I add cottage cheese just sprinkled on. I really think the white sauce makes it good though!

1 1/4 cups all-purpose flour, plus more for dusting
1 tablespoon sugar
1/2 teaspoon salt
2 tablespoons cold vegetable shortening
6 tablespoons cold unsalted butter, cut into small pieces
1 teaspoon apple cider vinegar
3 to 4 tablespoons ice water
4 large egg yolks
1 1/4 cups sugar
5 tablespoons cornstarch
1/2 teaspoon salt
1 1/2 cups water
1 tablespoon finely grated lemon zest, plus 1/2 cup lemon juice (from 2 to 3 lemons)
3 tablespoons unsalted butter
5 large egg whites
1/2 teaspoon cream of tartar
1/2 cup sugar

Steps:

  • Make the crust: Pulse the flour, sugar and salt in a food processor. Add the shortening and pulse a few times until combined. Add the butter and pulse just until coarse crumbs form. Add the vinegar and 3 tablespoons ice water; pulse until the dough comes together but is slightly crumbly. Pinch the dough - if it's too crumbly, pulse in more ice water 1 teaspoon at a time. Turn out the dough onto a large sheet of plastic wrap. Wrap the dough, then flatten into a disk. Refrigerate until firm, at least 1 hour or overnight.
  • On a lightly floured surface, roll out the dough into a 13-inch round. Ease into a 9-inch pie plate. Fold the overhanging dough under itself, then crimp the edges. Refrigerate the crust until firm, at least 1 hour.
  • Preheat the oven to 375˚ F. Prick the bottom of the crust with a fork, line with parchment paper and fill with pie weights or dried beans. Place the crust on a rimmed baking sheet and bake until golden brown around the edges, about 15 minutes. Remove the parchment and weights and continue baking until the crust is a deep golden brown on the bottom, 20 to 30 more minutes. Remove from the oven and let cool while preparing the filling but leave the oven on.
  • Make the filling: Whisk the egg yolks in a medium bowl until smooth; set aside. Whisk the sugar, cornstarch and salt in a medium saucepan to combine. Whisk in the water and lemon juice and turn the heat to medium. Bring to a gentle simmer and cook, whisking, until thickened, about 5 minutes. Slowly whisk about one-quarter of the sugar mixture into the egg yolks. Whisk in another one-quarter of the sugar mixture until smooth, then pour the mixture back into the saucepan. Continue cooking, whisking constantly to keep the egg yolks from scrambling, about 1 more minute. Stir in the butter and lemon zest until the butter melts; remove from the heat.
  • Immediately make the meringue while the filling is still hot: Combine the egg whites and cream of tartar in a large bowl and beat with a mixer on medium-high speed until soft peaks form, 1 to 2 minutes. Very slowly beat in the sugar; continue beating until firm glossy peaks form, about 4 minutes more (do not overbeat). Give the lemon filling a quick stir, then pour into the crust. Immediately spread the meringue on top of the hot filling, spreading it all the way to the crust; use the back of a spoon to make swoops and peaks. Bake until the meringue is golden brown in spots, 5 to 7 minutes; do not overbake to avoid weeping.
  • Remove the pie to a rack and let cool 1 hour, then refrigerate until completely cooled before slicing, about 4 hours.

1 large onion grated
2 cloves garlic grated, (up to 3)
1 pound ground sirloin
2 cups Beef stock
1 28-oz can San Marzano tomatoes
1 15-oz crushed tomatoes
3 basil leaves torn, (up to 4)
Salt and fresh ground pepper
4 tablespoons Butter
4 tablespoons Flour
1 quart milk
fresh nutmeg grated
2 boxes boxes oven-ready lasagna noodles (use 1 box per loaf pan)
2 cups grated Parmigiano Reggiano cheese divided
1/2 cup Provolone cheese grated
Parsley chopped for garnish

Steps:

  • Preheat oven to 375F. Place a large skillet over medium-low heat with 2 turns of the pan of EVOO, about 2 tablespoons. Cook the onion and the garlic, stirring frequently, until tender, about 10 minutes. Turn the heat under the skillet up to medium-high and add the beef to the pan. Cook it through, stirring frequently and breaking the meat up with a wooden spoon or potato masher. Add the beef stock, tomatoes and basil to the pot and season with salt and freshly ground black pepper. Mash the tomatoes up with the potato masher or wooden spoon, bring the sauce up to a bubble, then reduce the heat to low and simmer until thickened, about 5 minutes. While the red sauce is simmering, place a medium-size pot over medium heat and melt the butter. Sprinkle the flour over the melted butter and cook the mixture for about 1 minute. Whisk the milk slowly into the butter-flour mixture and cook until thickened. Season the white sauce with salt, freshly ground pepper and the nutmeg. Cover two loaf pans with a layer of foil for easy removal from the pan. Ladle about 1 cup of the red sauce into the bottom of the first lined loaf pan. Put down a layer of lasagna noodles, then top them with about a cup of white sauce and a handful of Parmigiano Reggiano (about 1/4 cup). Continue building the lasagna, alternating layers of noodle, red sauce, noodle, white sauce and cheese, until all the noodles are covered. End the lasagna on a layer of red sauce and top it off with the grated provolone and some Parmigiano-Reggiano. Repeat this process with the other loaf pan and the remaining sauce. Cover the pans with aluminum foil and bake for 30 minutes. Remove the foil and bake another 15 minutes until the noodles are tender and the cheese is melted and golden brown. Remove the pans from the oven and let cool for 15-20 minutes to let the lasagna set. Pull the lasagna out of the pans by the edges of the foil, pull the foil down from around the lasagna and cut with a serrated knife. Garnish each slice with fresh parsley.

I spent this past Thanksgiving in the mile-high city of Denver with my daughter and her boyfriend, just the three of us. Her boyfriend is from the South and he requested two items, Spinach Madeline and Pecan Pie. This is a simple and delicious pecan pie - I should have made two!

1 unbaked 9-inch pie crust
3 eggs
1 cup sugar
2/3 cup Dark Karo syrup
2 tablespoons butter, melted
1 teaspoon vanilla
1 tablespoon brandy
1/4 teaspoon salt
1 3/4 cups pecan pieces

Steps:

  • Preheat oven to 400°. Lightly beat eggs and add all remaining ingredients except pecans, stirring to blend well.
  • Add pecan pieces to the mixture and toss to coat thoroughly. Pour into unbaked pie shell and cover piecrust rim with shield or foil and bake at 400° for 10 minutes .
  • Reduce oven temperature to 350° for 30-35 minutes or until knife inserted into the middle comes out clean. Remove shield to allow crust to brown about 5 minutes before removing from oven.
  • Remove from oven, let cool on rack and serve as desired.
