1 cup long-grain brown rice
2 tablespoons olive oil
1 tablespoon curry powder
Coarse salt
Ground pepper
1/4 cup fresh lime juice
1 cup halved red seedless grapes
1/2 cup chopped fresh mint
1/3 cup chopped roasted cashews

Steps:

  • Rinse rice in a sieve until water runs clear. In a medium saucepan, heat 1 tablespoon olive oil over medium-high heat. Add curry powder; cook 30 seconds. Stir in rice, 2 1/2 cups water, 1 teaspoon salt, and 1/4 teaspoon ground pepper.
  • Bring to a boil; reduce heat. Cover; simmer gently until rice is tender and has absorbed liquid, about 1 hour. Remove from heat; steam, covered, 10 minutes.
  • Fluff rice with a fork; transfer to a shallow bowl. Stir in lime juice and remaining tablespoon olive oil; season with more salt and pepper. Refrigerate until cool, about 1 hour.
  • Stir in grapes, mint, and cashews.

One 3- to 4-pound roast chicken, home roasted or store-bought, recipe follows
3/4 cup golden raisins, plus more for garnish
1/2 cup slivered almonds, plus more for garnish
4 scallions, sliced
3 stalks celery, sliced
1/2 cup mayonnaise
1/2 cup plain Greek yogurt
1/4 cup heavy cream
3 tablespoons curry powder
2 tablespoons chopped fresh cilantro
1 tablespoon sugar
Kosher salt and freshly ground black pepper
One 3- to 4-pound chicken
Olive oil, for drizzling
Kosher salt and freshly ground black pepper

Steps:

  • Cut the roast chicken into small pieces and discard the skin and bones. Put the chicken, raisins, almonds, scallions and celery in a large bowl. In another bowl, mix the mayonnaise, yogurt, cream, curry powder, cilantro, sugar and some salt and pepper. Pour the dressing over the salad ingredients and gently toss to combine. Taste and adjust the seasoning. Allow to chill for several hours (or even overnight).
  • Before serving, garnish with more raisins and slivered almonds. Serve on a bed of lettuce or in a sandwich.
  • Preheat the oven to 400 degrees F.
  • Put the chicken in a roasting pan, drizzle with olive oil and sprinkle generously with salt and pepper. Roast until the juices run clear, about 1 hour 15 minutes. Let cool completely before using for chicken salad.

1 tbsp olive or rapeseed oil
1 onion , chopped
2 tbsp mild curry paste (we used korma paste)
1 tsp ground turmeric
300g basmati rice
50g raisins
1 chicken or vegetable stock cube
3 eggs
small bunch of coriander , leaves picked
30g flaked almonds , toasted
2 carrots , grated or finely shredded
½ cucumber , sliced

Steps:

  • Heat the oil in a large pan and cook the onion for 8-10 mins until soft and just turning golden. Boil the kettle. Stir the curry paste, ground turmeric, rice and raisins into the onions. Crumble over the stock cube and pour over enough boiled water from the kettle to cover the rice by ½cm (about 1 litre). Season with some salt. Bring to a gentle simmer, then cover the pan, reduce the heat to its lowest setting and cook for 2 mins more. Without taking off the lid, remove from the heat and leave to steam for 15 mins. This will give you perfect, fluffy rice.
  • Meanwhile, bring another pan of water to the boil and cook the eggs for 7 mins. Plunge into a bowl of cold water to stop them cooking and once cool, drain and halve.
  • Tip the rice into a container and chill for at least 1 hr, or up to two days. When you're ready to serve, scatter over the coriander and almonds, and top with the grated carrot, cucumber slices and eggs.

A touch of curry makes this salad interesting but not overpowered like some. This calls for roasting chicken (better flavor than poaching), but I prefer to use rotisserie chicken. It is so easy and flavorful, not to mention a time saver. I always season to taste, but the measurements should be about right. I toss the salad the night before to give the flavors time to meld.

5 chicken breasts, halved bone-in
1 tablespoon olive oil

seasoning, such as Mrs. Dash
1 3/4 cups diced celery
2 cups halved red grapes
1 1/4 cups mayonnaise

Steps:

  • Place chicken on rack inside a 9"x13" pan. Rub breasts with olive oil. Season with salt, pepper and Mrs. Dash (or similar seasoning).
  • Roast until no longer pink, about 45 minutes.
  • Cool until easy to handle. Remove skin and bones. Shred meat into bite-sized pieces. (Shredding instead of cubing allows the dressing to adhere to the chicken more easily.).
  • Meanwhile, combine dressing ingredients. Taste often to reach desired outcome.
  • Combine chicken, celery and grapes. Toss with enough dressing to coat, allowing for a little extra as the chicken will absorb some while melding in the refrigerator.
  • Best chilled overnight, but it is still great if you can't wait that long.
  • Serve alone or with rolls for sandwiches.

2 boneless skinless chicken breasts, about 1 pound
1 pound medium-size shrimp
2 tablespoons butter
1/2 cup chopped onion
1 teaspoon chopped garlic
1/2 cup chopped celery
2 tablespoons curry powder
2 small ripe plum tomatoes, cut into small cubes
1 small banana, cut into 1/2-inch cubes
1 cup peeled and cubed apples
1 bay leaf
2 cups fresh or canned chicken broth
Salt and freshly ground pepper to taste
1 cup seedless white grapes
4 tablespoons coarsely chopped fresh coriander

Steps:

  • Cut the chicken breasts into 8 to 10 strips about 1 1/2 inches long.
  • Shell and devein the shrimp. Rinse well and drain.
  • Heat 1 tablespoon of the butter in a small saucepan. Add the onion and garlic. Cook briefly and add the celery. Cook, stirring, for about 1 minute. Do not brown. Sprinkle with curry powder and stir. Add the tomatoes, banana, apples and bay leaf. Stir and add the broth, salt and pepper. Stir well to blend. Simmer 10 minutes.
  • Heat the remaining butter in a nonstick skillet and add the chicken, stirring. Cook for 3 minutes. Add the shrimp, salt and pepper. Cook, stirring, about 2 minutes. Meanwhile, remove the bay leaf and pour the curry mixture into the container of a food processor or blender. Blend to a fine texture. Add the grapes to the chicken mixture. Pour the curry sauce over it and stir to coat well. Bring to a simmer for about 2 minutes. Sprinkle with the coriander, stir and serve immediately.

  • In a large saucepan bring 4 quarts water to a boil, stir in the rice and the salt, stirring until the water returns to a boil, and boil the rice for 10 minutes. Drain the rice in a large sieve and rinse it. Set the sieve over a large saucepan of simmering water and steam the rice, covered with a folded kitchen towel and the lid, for 15 minutes, or until it is fluffy and dry. Transfer the rice to a very large bowl and let it cool to lukewarm.
  • In a small bowl whisk together 1 1/2 teaspoons of the curry powder, the vinegar, the oil, and salt to taste, add the vinaigrette to the rice, and toss the mixture well. Stir in the raisins and the cantaloupe. In a blender blend the yogurt, the chutney, and the remaining 1 teaspoon curry powder until the dressing is smooth, pour the dressing over the rice mixture, and toss the salad well. Chill the salad, covered, for 1 hour. The salad may be made 2 days in advance and kept covered and chilled. Serve the salad sprinkled with the peanuts.
