Your basic lamb curry, very easy to throw together and perfect for the slow cooker. Serve over basmati rice with warmed pitas.

2 tablespoons vegetable oil, or as needed
2 pounds cubed lamb stew meat
2 tablespoons vegetable oil
1 onion, chopped
2 tablespoons ground coriander
1 ½ teaspoons ground cumin
1 tablespoon ground cardamom
1 teaspoon ground ginger
1 teaspoon ground turmeric
½ teaspoon garlic powder
¼ teaspoon ground black pepper
¼ teaspoon cayenne pepper, or to taste
2 cups beef stock
salt to taste
¼ cup plain yogurt
1 teaspoon lemon juice

Steps:

  • Heat 2 tablespoons of vegetable oil in a Dutch oven over medium-high heat. Cook the lamb meat in batches until browned on all sides, using additional oil as necessary, about 3 minutes per batch. Set aside. Heat the remaining 2 tablespoons of vegetable oil in the Dutch oven over medium heat. Stir in the onions; cook until tender and golden brown, about 10 minutes. Add the coriander, cumin, cardamom, ginger, turmeric, garlic powder, black pepper, and cayenne pepper; cook and stir until the spices are fragrant, about 1 minute.
  • Return the lamb to the Dutch oven; pour in the beef stock and season with salt to taste. Bring to a boil over high heat, then reduce heat to low, cover, and simmer until the lamb is very tender, about 1 hour.
  • Once the lamb is very tender, remove the lid, and cook until the sauce thickens slightly, about 20 minutes. Stir in the yogurt and lemon juice before serving.

We don't have lamb for dinner very often - usually when we do, it's a traditional leg of lamb when my mother is visiting. This, however, is a nice, simple, and easily-made variation for when you find less expensive cuts of lamb.

1/3 cup dried onion (dried minced onion)
1/4 cup water
3 tablespoons vegetable oil
2 tablespoons coriander, ground
1 1/2 teaspoons cumin, ground
1 tablespoon cardamom, ground
1 teaspoon ginger, ground
1 teaspoon turmeric
1/2 teaspoon garlic powder
1/4 teaspoon pepper, freshly ground black pepper
1/8 teaspoon red pepper, ground (cayenne, to taste)
2 lbs lamb stew meat (in 1" cubes)
2 cups beef stock
salt
1/4 cup plain yogurt
1 teaspoon fresh lemon juice
rice, hot freshly-cooked

Steps:

  • Soak onion in water until soft about 5 minutes.
  • Heat oil in large skillet over medium high heat, and add the onion and saute until golden about 4 minutes.
  • Reduce heat to low, then add coriander, cumin, cardamom, ginger, tumeric, garlic powder, freshly ground black pepper, and ground red pepper (cayenne), and stir 1 minute.
  • Add the cubed lamb meat to skillet, then increase the temperature to medium-high and cook, stirring frequently, until meat is evenly browned, about 10 to 15 minutes.
  • Add stock and salt, reduce temperature to medium, cover, and simmer until meat is tender, about 20 minutes.
  • Uncover and simmer an additional approx 20 minutes until the sauce is thickened to desired consistency.
  • Stir in yogurt and lemon juice and serve immediately over cooked rice.

2 lbs ground lamb
1/2 medium onion, grated
2 garlic cloves, minced
2 whole eggs or 1/2 cup egg substitute
1 teaspoon cayenne pepper, as desired, divided
2 teaspoons curry powder
1/2 cup plain breadcrumbs, as needed to bind
2 teaspoons soy sauce
1 tablespoon packed brown sugar
1 (14 1/2 ounce) can diced tomatoes
1/2 teaspoon Worcestershire sauce

Steps:

  • Combine lamb with onion, garlic, eggs, curry, 1/2 tsp cayenne, salt and breadcrumbs.
  • Shape into a loaf, and place in a 9x12-inch Pyrex baking dish.
  • Combine tomatoes with Worcestershire, reserved cayenne, soy sauce, and brown sugar.
  • Pour this over the loaf, and bake in a preheated 400ºF oven for 45 minutes to one hour.
  • Serve with chutney and cooked basmati rice.

4 pounds lamb stew meat (patted dry)
2 tablespoons butter
2 medium onions, diced
1 bunch scallions, chopped
1/4 cup jalapeno, chopped seeds and all
2 tablespoons ginger, chopped
2 tablespoons garlic, chopped
4 tablespoons curry powder, recipe follows
2 cups tomatoes, diced no seeds
1 cup water, beef or chicken stock
2 cups Japanese rice, cooked
1/4 cup cilantro, chopped
1 1/2 tablespoons coriander seeds
2 tablespoons ground turmeric
1 1/2 tablespoons cumin seeds
1 teaspoon fennel seeds
1 teaspoon anise seeds
6 whole cloves
1 stick cinnamon
1 tablespoon ginger
Cayenne pepper to taste

Steps:

  • Heat pressure cooker over medium heat and brown lamb piece in batches, set aside. Drain off oil and add butter and onions to the pan and saute until translucent. Now add scallions, jalapenos, ginger and saute for a few minutes more then add garlic and curry powder. Saute until you smell the curry then add tomatoes, lamb and water. Bring this to a simmer. Put lid in place and bring up to high pressure, lower heat to maintain pressure. When time is up (15 minutes) take lid off and bring stew back to a simmer to reduce juice. Season with salt and pepper to taste. Serve over rice and garnish with cilantro.
  • Grind all spices in a mortar and pestle or in a spice grinder. Store in an airtight container.

2 lbs very lean ground lamb
2 slices white bread
1 cup milk
3 tablespoons unsalted butter
2 yellow onions, coarsely chopped
2 cloves garlic, finely chopped
2 tablespoons curry powder
1/2 cup dark seedless raisins
2 tablespoons slivered almonds
2 tablespoons fresh lemon juice
1 tablespoon mango chutney, large pieces chopped
1/2 teaspoon salt
1/4 teaspoon black pepper
2 eggs
6 bay leaves

Steps:

  • In large skillet, saute the ground lamb, working in batches if necessary to avoid crowding the skillet, until lamb is no longer pink, 3 to 4 minutes per batch.
  • As it browns, remove lamb to a colander to drain excess water and fat.
  • In a small bowl, soak the bread in 1/4 cup milk for 20 minutes, turning it over occasionally.
  • Squeeze excess milk out of bread and then tear it into pieces.
  • Heat oven to 375ºF.
  • Lightly butter a 13-by-9-by-2-inch glass baking dish.
  • In a large skillet, heat the butter.
  • Add the onions and saute until softened, about 5 to 8 minutes.
  • Add the garlic and curry powder and saute 1 minute.
  • Remove from heat.
  • In a large bowl, mix together the lamb, onion mixture, raisins, almonds, lemon juice, chutney, salt, pepper and 1 egg, slightly beaten, until all ingredients are evenly distributed.
  • Spoon into prepared baking dish.
  • Tuck the bay leaves into lamb mixture.
  • Bake at 375ºF.
  • for 30 minutes.
  • In a glass measuring cup, stir together the remaining egg and remaining 3/4 cup milk.
  • Pour over lamb mixture.
  • Bake until egg mixture is set, about 10 to 15 minutes.
  • Remove and discard bay leaves before serving.

1 cup coarse fresh bread crumbs (from 2 slices firm white sandwich bread)
1 1/2 cups whole milk
2 medium onions, finely chopped (2 cups)
1 Granny Smith apple, peeled, cored, and finely chopped (1 1/2 cups)
1 3/4 teaspoons salt
3 tablespoons unsalted butter
1/3 cup raisins (1 1/2 ounce)
1/4 cup slivered blanched almonds (1 ounce)
2 tablespoons curry powder (preferably Madras)
1 teaspoon sugar
3 large eggs
2 lb ground lamb or beef (not lean)
2 tablespoons fresh lemon juice
1/2 teaspoon finely grated fresh lemon zest
1/4 teaspoon black pepper
Accompaniment: cooked white rice; mango or cilantro chutney (preferably Swad brand*)

a 9- by 9- by 2-inch baking dish (3-qt capacity)

Steps:

  • Soak bread crumbs in milk in a small bowl until very soft, about 15 minutes, then drain in a sieve set over a bowl, lightly pressing to remove excess milk. Reserve milk.
  • Put oven rack in middle position and preheat oven to 350°F. Butter baking dish.
  • Cook onions, apple, and 1/4 teaspoon salt in butter in a 12-inch heavy skillet over moderately low heat, stirring occasionally, until onions and apple are softened, about 12 minutes (do not brown). Add raisins, almonds, curry powder, and sugar and cook, stirring, 1 minute, then remove from heat. Lightly beat 1 egg in a large bowl, then add bread crumbs, lamb or beef, raisin mixture, lemon juice and zest, 1 1/4 teaspoons salt, and pepper and blend with your hands until combined well; do not overmix. Spread meat mixture evenly in baking dish and bake 30 minutes.
  • While meatloaf bakes, whisk together remaining 2 eggs, reserved milk, and remaining 1/4 teaspoon salt.

WEST INDIAN LAMB CURRY



West Indian Lamb Curry image

Curried goat is a popular dish in the West Indies, but lamb makes a fine substitute here in the United States, where goat meat is hard to find. This version, by the chef Martin Maginley from the Round Hill resort in Jamaica, is deeply flavored with allspice and Scotch bonnet peppers, but not overwhelming spicy. If you have time to make it the day before, it gets better as it sits, and gives you a chance to scoop some of the fat off the top of the stew before reheating over a low flame. And if you can procure goat, use it here in place of the lamb.

3 pounds boneless lamb (or goat) stew meat, cut into 2-inch chunks
1 tablespoon plus 2 teaspoons curry powder
1 tablespoon kosher salt, more to taste
1 teaspoon ground ginger
1 teaspoon black pepper
1 large white onion, coarsely chopped
2 scallions, coarsely chopped
4 garlic cloves, smashed and peeled
1/2 inch fresh ginger, peeled if desired and coarsely chopped
4 whole allspice berries
2 thyme sprigs, leaves stripped
4 tablespoons extra-virgin olive oil, more as needed
1 1/2 cups diced potato
1 cup diced carrots
1 to 2 small Scotch bonnet peppers, seeded and chopped
Cooked white rice or coconut rice, for serving (see note)
Lime wedges, for serving
Mango chutney or mango pickle, for serving
Fresh cilantro leaves, for serving

Steps:

  • Pat lamb dry with paper towels and place in a large bowl. In a small bowl, combine 1 tablespoon curry powder, the salt, the ground ginger and the black pepper. Add spice mix to large bowl and toss with lamb.
  • Combine onion, scallion, garlic, fresh ginger, allspice, thyme leaves and 2 tablespoons oil in a blender; purée until smooth. Scrape mixture over lamb and toss to combine. Cover with plastic wrap and refrigerate at least 2 hours or overnight.
  • Heat 2 tablespoons oil in a large Dutch oven over medium-high heat. Stir in 2 teaspoons curry powder and heat until fragrant, about 30 seconds. Working in batches to avoid overcrowding the pot, brown the meat on all sides. Drizzle in additional oil, if needed, to prevent meat from sticking to the bottom of the pot. Transfer browned meat to a plate as it browns.
  • Once all the meat has been browned, return it to the pot, along with any juices on the plate. Add enough water to just cover meat. Bring liquid to a simmer, covered, then uncover the pot and cook gently for 45 minutes.
  • Stir potato, carrot and pepper into pot. Simmer until vegetables are fork tender and meat is cooked through, about 30 to 45 minutes longer.
  • Using a slotted spoon, transfer meat and vegetables to a bowl. Simmer cooking liquid until it has reduced and thickened to a saucy consistency (to taste), about 15 minutes. Taste sauce and add more salt if needed. Pour sauce over meat. Serve over rice, topped with a squeeze of lime, a dollop of mango chutney or pickle and fresh cilantro.

  • In a bowl, combine cornstarch, broth, soy sauce and curry powder; stir until smooth. set aside. In a large skillet or wok, saute lamb, onion and garlic in 1 tablespoon oil until meat is browned. Remove and keep warm. In the same skillet, stir-fry apple, green pepper, celery, water chestnuts, peas and ginger in remaining oil until crisp-tender. Add lamb mixture. Breast of lamb is a fatty meat that can be made many ways. I found this to be the simplest and tastiest. It's a dish best served the day after it's prepared. Congealed fat can be tossed and the flavor improves.

1 -1 1/2 lb lamb breast (usually)
1 tablespoon vinegar
2 tablespoons curry powder
3 tablespoons instant minced onion
water

Steps:

  • Rinse lamb breast under running water.
  • Cover lamb breast with cold water& 1 T vinegar inside your cooking pan& soak for about 20 minutes.
  • Pour off water.
  • Heat oven to 350.
  • Place lamb breast in pan with fat side up.
  • Spread the curry powder and dried chopped onions on top.
  • Cover the pan and cook for a total of 2 hours.
  • After 1 hour, remove the pan from oven, and pour off the fatty gravy into a glass container.
  • Place the glass container into the freezer so the fat will freeze on top, then remove from freezer and throw away congealed fat and put gravy on meat.
  • Put the lamb breast back in the oven, covered.
  • After the 2nd hour (or when it just smells done), remove from oven.
  • Wait 10-15 minutes for the meat to rest.
  • Slice the lamb breast between the bones.
  • Serve about 2-3 lamb breast ribs each to make a dinner portion.

  • In a large resealable plastic bag, combine 3 garlic cloves, 1 tablespoon curry powder, 1 tablespoon ginger, 1 teaspoon garam masala, chili powder, paprika and thyme, 1/2 teaspoon coriander, 1/2 teaspoon salt, 1/2 teaspoon pepper, cumin and olive oil. 1 egg

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9x5-inch loaf pan with oil.
  • Place bread and milk in a small bowl. Press bread with a fork to soak up the milk.
  • Combine lamb, egg, garlic, thyme, Worcestershire sauce, lemon zest, coriander, basil, rosemary, salt, and pepper in a medium bowl. Add soaked bread; discard the leftover milk. Mix with hands until well combined. Transfer meatloaf to the prepared pan.
  • Combine tomato sauce and mint; spread evenly over the meatloaf. Drizzle with balsamic vinegar.
  • Bake in the preheated oven until no longer pink in the center, about 35 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Remove and let cool for 5 minutes before serving.

1 tablespoon minced garlic
2 pounds lamb sirloin, cut into cubes
2 cups water
1 cup uncooked rice
1 tablespoon vegetable oil
1 large onion, grated
½ teaspoon ground cloves
½ teaspoon ground ginger
½ teaspoon ground cumin
¾ teaspoon ground cayenne pepper
3 tablespoons curry powder
⅔ cup slivered almonds, toasted
1 cup currants
8 cups vegetable broth

Steps:

  • In a medium bowl, combine yogurt and garlic. Stir in the lamb cubes until coated. Cover, and refrigerate overnight.
  • In a saucepan bring water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes. Remove from heat, and set aside.
  • Heat oil in a large skillet over medium high heat. Saute onions until tender. Stir in marinated lamb mixture. Season with cloves, ginger, cumin, cayenne and curry powder. Stir in raisins, reduce heat, and simmer for 2 hours. Stir in cooked rice and vegetable stock. return to a simmer, and cook 5 more minutes.

3/4 cup long-grain rice
8 ounces boneless leg of lamb
12 ounces whole onion, or 11 ounces chopped ready-cut onion (2 1/4 to 2 1/2 cups)
1 teaspoon canola oil
1 medium head cauliflower, or 16 ounces cauliflower florets (6 cups)
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon fennel seeds
1/2 teaspoon turmeric
1/8 to 1/4 teaspoon hot-pepper flakes
1 cup frozen peas
5 sprigs cilantro (1 tablespoon chopped)
1/8 teaspoon salt
Freshly ground black pepper

Steps:

  • Combine rice with 1 1/2 cups water, and bring to boil in heavy-bottomed pot. Reduce heat, cover and simmer for 17 minutes.
  • Trim fat from meat, wash and dry. Cut into bite-size pieces. Chop whole onion.
  • Heat large nonstick pan until it is very hot. Reduce heat to medium-high, and heat oil. Add lamb and onion, and saute until meat is brown on all sides and onion begins to soften.
  • Wash cauliflower, and trim and discard core if using whole cauliflower. Break into bite-size pieces, and add to pan along with cumin, coriander, fennel seeds, turmeric and hot-pepper flakes. Stir to mix thoroughly. Add 1/4 cup water, cover and simmer for 3 or 4 minutes, until cauliflower is almost tender.
  • Add the peas, and cook another minute or two.
  • Wash, dry and chop cilantro.
  • Season with salt and pepper, top with cilantro and serve with the rice.

We eat this a lot, sometimes using beef or chicken, and find this an easy dish when we want a quick curry fix. You can add a couple of peeled, diced pootatoes and about 2 cups of water for the final 30 minutes of cooking.

1 1/2 kg boned and diced lamb shoulder
2 tablespoons oil
3 large onions, chopped
3 garlic cloves, chopped
1 tablespoon finely chopped fresh ginger
2 tablespoons curry powder
3 teaspoons salt
2 tablespoons vinegar or 2 tablespoons lemon juice
3 large ripe tomatoes
2 fresh red chilies or 2 green chilies
2 tablespoons chopped of fresh mint
1 teaspoon garam masala
1 tablespoon chopped fresh coriander or 1 tablespoon mint

Steps:

  • Heat the oil in a large saucepan, and gently fry the onion, garlic and ginger until soft and golden.
  • Add the curry powder, salt and vinegar and stir thoroughly.
  • Add the lamb and cook, stirring constantly until the lamb is coated with the spice mixture.
  • Add the tomatoes, chillies and mint.
  • Cover and cook over a very low heat for 1 1/4 hours or until the lamb is tender, stirring occasionally.
  • Add the garam masala and chopped coriander in the last 5 minutes of cooking.
  • *note-the tomatoes should provide enough liquid for the meat to cook in, but if necessary, add a little hot water, (approximately 1/2 a cup) just enough to stop the meat sticking to the saucepan.

3 tablespoons extra-virgin olive oil
3 medium onions, finely chopped
2 tablespoons minced fresh ginger (1 1/2-inch piece)
Coarse salt and freshly ground pepper
1 teaspoon ground turmeric
3/4 teaspoon ground cumin
1/2 teaspoon ground coriander
1/4 teaspoon cayenne pepper
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cardamom
1/4 teaspoon ground ginger
2 pounds ground lamb
1/2 cup slivered almonds (1 ounce), toasted
4 slices white bread, crusts removed
1 3/4 cups whole milk
2 tablespoons apricot preserves
1 tablespoon plus 2 teaspoons fresh lemon juice
4 large eggs
1/8 teaspoon ground nutmeg
1 teaspoon finely grated lemon zest
4 fresh or dried bay leaves
Accompaniments, such as cilantro sprigs, lemon or lime wedges, mango chutney, sliced banana, and unsweetened coconut flakes
Cooked rice, for serving

Steps:

  • Preheat oven to 325 degrees. Heat a large saute pan over medium-high heat. Add oil, then onions and fresh ginger, and season with salt. Cook, stirring occasionally, until onions are golden brown and tender, about 15 minutes. (Reduce heat if vegetables brown too quickly.) Mix turmeric, cumin, coriander, cayenne, cinnamon, cardamom, and ground ginger in a small bowl, then stir into onions. Add lamb, and cook, breaking up large pieces with a wooden spoon, until cooked through, about 10 minutes. Stir in almonds, and cook for 2 minutes more.
  • Tear bread into large pieces, and place in a small bowl. Add 1/4 cup milk and 3/4 teaspoon salt, and let stand until milk is absorbed. Add bread mixture to lamb, and cook, stirring frequently, until bottom of pan begins to brown, 1 to 2 minutes. Stir in apricot preserves and lemon juice, scraping up browned bits from bottom. Remove from heat, and season with salt and pepper.
  • Spoon lamb into a 6-cup baking dish. Whisk eggs, nutmeg, lemon zest, and remaining 1 1/2 cups milk in a medium bowl. Pour over lamb. Place bay leaves in dish, pressing into filling. Bake until custard is set around edges and center is no longer runny, 25 to 30 minutes. Let stand for 15 minutes before serving. Serve with desired accompaniments and rice.

1 1/2 pounds lean ground lamb
Salt to taste, if desired
Freshly ground pepper to taste
2 tablespoons butter
1 cup plus 2 tablespoons finely chopped onion
1/2 teaspoon finely minced garlic
1/3 cup fine fresh bread crumbs
1 egg, lightly beaten
1/2 cup coarsely chopped blanched almonds
1 tablespoon corn, peanut or vegetable oil
1 tablespoon curry powder
1/2 cup chicken broth
1/2 cup heavy cream
2 cups white seedless grapes

Steps:

  • Put the lamb in a mixing bowl. Sprinkle with salt and pepper to taste.
  • Melt half of the butter in a saucepan and add one cup of the chopped onion and the garlic. Cook, stirring, until wilted. Let cool briefly and add to the lamb.
  • Add the bread crumbs, egg and almonds and blend well.
  • Divide the mixture into eight portions and shape each into a round ball. Flatten the balls into round patties, each about one inch thick.
  • Heat the oil in a heavy skillet large enough to hold the patties in one layer. Add the patties and cook three minutes or until golden brown. Turn the patties and continue cooking three or four minutes on the second side. Transfer the patties to a warm platter.
  • Meanwhile, heat the remaining butter in a saucepan and add the remaining two tablespoons of chopped onion and the curry powder. Cook, stirring, until the onion is wilted. Add the broth and cook until the broth is cooked down by half. Add the cream and grapes and cook down about one minute. Pour the grape sauce over the meat patties and serve.
