PINEAPPLE VODKA
Steps:
- Peel the pineapple and cut it into chunks. Put the pineapple into a glass vessel or anything that holds liquid with a tight fitting lid.
- Fill the vessel with the vodka. Cover and put it off to the side for at least 2 weeks to let the flavors infuse. You can let it sit up to 6 weeks if you can wait that long!
- Use it to make your favorite pineapple drinks.

VODKA PUNCH

- Add the vodka, cranberry juice, pineapple juice and orange liqueur to a pitcher and stir to combine. Pour in the ginger ale.
- Fill 4 highball glasses with the Berry-Lemonade Ice Cubes and pour the punch evenly among the glasses. Serve topped with club soda and an orange slice. (Alternatively, pour the vodka punch into mason jars with lids and store, covered, in the refrigerator, adding ice and garnishes before serving.)
- Make the ice cubes the night before: Sprinkle the berries into an ice cube tray. Top with the lemonade or limeade and place in the freezer until frozen, at least 4 hours. Pop the ice out of the tray and store in a resealable plastic bag. Makes about 16 ice cubes.
PINEAPPLE INFUSED VODKA AND GRAND MARNIER

- To infuse the vodka. Place an entire ripe pineapple, peeled, cored, and sliced, in a glass container and cover with a bottle of vodka. Refrigerate pineapple for at least 48 hours. To assemble the drink. Pour 2 1/2 ounces of pineapple infused vodka and 3/4 ounces of Grand Marnier in cocktail shaker filled with ice. Shake vigorously and strain into a chilled martini glass. Garnish with orange peel.
PINEAPPLE COCKTAIL

- Chill a martini glass in the freezer. Fill a cocktail shaker with ice. Add the pineapple juice, vodka, orange liqueur, and lime juice. Cover and shake vigorously, until combined and chilled, about 30 seconds. (In general, by the time the shaker mists up the drink is ready.)
- Scatter some turbinado sugar onto a small plate, wet the rim of the glass and dip into sugar. Strain the drink into the chilled glass. Skewer the pineapple and cherry and drop into the cocktail. Cheers.
PINEAPPLE GINGER VANILLA VODKA
Steps:
- Combine the sugar, water, ginger and vanilla bean and seeds in a small saucepan over medium heat and bring to a boil. Cook the mixture until the sugar is completely dissolved, about 1 minute. Cool at room temperature and strain.
- Combine the pineapple juice, 1 cup of pineapple cubes, the simple syrup and vodka in a blender and blend until smooth. Pour into glasses filled with pineapple cubes, if desired, and garnish with mint and pineapple slices.
PINEAPPLE-INFUSED VODKA
This infused vodka will keep for approximately 2 weeks in the fridge after it is strained. Serve shaken in a martini glass and enjoy!

- Stack pineapple slices in a circle around the edges of a large glass jar, leaving the center open. Pour vodka into jar, completely covering pineapple. Seal jar and store in a cool, dark place for 10 days.

Steps:
- Place pineapple chunks in a large jar or resealable container. Pour in vodka and store in the refrigerator for 7 days.
- Place the sugar and water in a small saucepan and bring to a boil until the sugar has completely dissolved. Set aside to cool and then refrigerate until ready to use.
- Strain the vodka from the pineapple into a clean jar, pressing down on the fruit to extract every bit of juice. (Dare you to try a piece!).
- Pour in the syrup and refrigerate for up to 30 days.
