FRENCH ONION DIP WITH GRUYERE TOASTS
Sweet caramelized onions and plenty of fresh thyme add bold flavor to brighten this hearty dip, inspired by French onion soup. Serve with cheesy baguette as the traditional soup garnish, and endive for some pleasantly bitter contrast to the richness.

- Preheat the oven to 400 degrees F. Heat the oil over medium heat in a large skillet. Add the onions and thyme and cook, stirring occasionally, until onions are very soft and browned, about 15 minutes.
- Meanwhile, stir together the sour cream, mayonnaise and Worcestershire sauce; season with salt and pepper. Fold in the onion mixture until well combined. Cover and chill for at least 1 hour or up to overnight. Mixture can be stored in an airtight container for up to 3 days.
- Arrange the bread in an even layer on a baking sheet. Sprinkle each slice with about 1 tablespoon cheese. Bake until the bread is golden brown and crisp and the cheese is melted, 6 to 8 minutes. Serve dip with the cheese toasts and endive leaves.

- slice some bland cheese
- when bread has turned into toast (check for a hard toasted surface to the bread) thickly spread some of the butter on it
- whack the cheese on top and throw it under the grill for a while
- withdraw from under the grill when the cheese has started to melt and bubble a little and eat whilst watching the football on TV with a can of Stella

This is better than garlic bread! Looks great on a buffet table and goes with anything. Can be prepared the day before if wrapped in foil, if they get a little saturated over night, it's ok, makes them even better!

- Saute the carrot and onion in the butter for 15 minutes.
- Use low heat you do not want to brown the veggies.
- Add flour and curry.
- Stir and heat to a smooth paste.
- Gradually add all the remaining ingredients starting with the consomme, stirring all the while to prevent any lumps.
- Simmer approx 8 minutes. Keep hot while you are poaching the eggs.
- Poach the eggs (or use hard boiled eggs cut in half lengthwise).
- Place eggs on toast and pour over the sauce.
- Garnish with fresh parsley and dust with paprika (optional).

- Heat the oil and butter in a large saucepan or flameproof casserole dish over a medium heat, and fry the onion, celery and a large pinch of salt for 10 mins until the veg is soft and starting to caramelise. Stir in the ginger and garlic and cook for 1 min more. Add the cumin, ground coriander, turmeric and curry powder. Fry for 1 min more. Stir in the swede and stock. Bring to a simmer. Cover and simmer for 1 hr 15 mins more until the swede is soft. Season. Blitz using a hand blender until smooth. Stir in the cream.
- For the toasties, mix the cheddar with the spring onions, nigella seeds and coriander. Butter one side of each bread slice. Divide the cheese mix between two slices on the unbuttered side, add the chutney, and sandwich with the other slices, butter-side-out. Heat a medium pan over a medium-low heat, add the sandwiches, and weigh them down with another pan. Fry on each side for 4 mins until golden and the cheese has melted. Cut in half. Serve the soup in bowls topped with some yogurt and chilli flakes, with the cheese on toast on the side.

- Cook pasta to al dente according to package directions in salty water (like the sea). Drain and set aside.
- Meanwhile, in a large skillet set over medium heat, add the ghee/butter/olive oil (whichever fat you’re using), along with the ginger and garlic. Cook, stirring, for about a minute. Sprinkle the flour over top and cook, stirring, for another minute. Add the curry paste and stir to blend it in. Season with salt and pepper to taste.
- Add/whisk in the coconut milk and allow things to come up to a gentle bubble. Stir well to combine. Stir in the cup of milk. Turn off the heat and stir in all of the grated/shredded cheeses until nice and creamy/smooth. Taste the sauce and season to your liking. Add the pasta into the sauce pan and stir to coat.
- Serve the mac and cheese with some chopped cilantro, scallions and/or Thai basil on top and, if you like, some chopped peanuts. Enjoy right away.
