1 envelope bearnaise sauce
1 pound fresh asparagus, trimmed
1/4 pound fresh crabmeat
2 tablespoons butter
1/2 teaspoon minced garlic
1 tablespoon lemon juice
4 beef tenderloin steaks (1 inch thick and 3 ounces each)
1/8 teaspoon paprika

Steps:

  • Prepare bearnaise sauce according to package directions. Meanwhile, place asparagus in a steamer basket; place in a large saucepan over 1 in. of water. Bring to a boil; cover and steam for 8-10 minutes or until crisp-tender. , In a large skillet, saute crab in butter for 3-4 minutes or until heated through. Add garlic; cook 1 minute longer. Stir in lemon juice; keep warm., Grill steaks, covered, over medium heat or broil 4 in. from the heat for 6-8 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Top with crab mixture, asparagus and bearnaise sauce. Sprinkle with paprika.

2 tablespoons olive oil
3 (8-ounce) New York strip steaks
1 tablespoon steak seasoning (recommended: Montreal Steak Seasoning)
3 tablespoons Herb Butter, recipe follows
Sugar Grilled Asparagus, recipe follows
1 pound salted butter, softened
1 tablespoon diced garlic
2 tablespoon chopped fresh rosemary leaves
2 tablespoons chopped fresh marjoram leaves
2 tablespoons chopped fresh thyme leaves
1 bundle asparagus, about 20 spears
1/4 cup olive oil
1/2 cup sugar
1 teaspoons kosher salt
1/2 orange, zested

Steps:

  • Preheat the grill to medium-high heat.
  • Cut the cedar shingles down to size, about 10 by 5-inches, large enough for a steak to sit on it as a cooking surface. Spay shingles with water, so shingles are moist but not saturated. Oil the steaks and season with steak seasoning. Place each steak on a moist cedar shingle and place on grill. Close grill and let shingles smoke under steaks. If you don't have a covered grill, use a metal bowl to cover steak. Be careful, bowl will get burning hot. Cook steak until desired temperature and top each with 1 tablespoon Herb Butter. Serve on the cedar shingle with Sugar Grilled Asparagus.
  • Mix garlic and herbs into the softened butter. Put in refrigerator for later use.
  • Preheat grill to medium-high heat.
  • Cut the tough ends off asparagus, roll in oil and coat with sugar and salt. Place asparagus on the grill and cook for approximately 10 to 15 minutes. Turn asparagus to ensure even cooking. You know the asparagus are done when sugar is caramelized and asparagus are starting to look burnt. Sprinkle orange zest over asparagus before serving.

12 asparagus spears
1 tbsp extra virgin olive oil
1 tbsp lemon juice
4 slices of prosciutto
60g (¼ cup) ricotta cheese

  • 1. Break the ends off the asparagus spears and cut the spears in half crossways. Place in a steamer and cover with a lid. Sit the steamer over a saucepan or wok of boiling water and steam for 5 -7 minutes, or until tender. 2. Transfer the asparagus to a small bowl and toss with the olive oil, lemon juice and some salt and pepper. Wrap bundles of six asparagus pieces (three of each end) in each slice of prosciutto and place on a grill tray. 3. Mix together the ricotta and parmesan and spread the mixture over the prosciutto. Place the tray under a preheated medium grill for 10 minutes, or until the cheese starts to turn golden. Serve immediately.

1 tablespoon soy sauce
1 teaspoon minced ginger
1/4 teaspoon garlic chile sauce, such as sambal

8 to 10 asparagus, trimmed
1 tablespoon toasted sesame oil
1 teaspoon sesame seeds

Steps:

  • Place the steak in the freezer for 45 minutes. This will make it easier to slice.
  • Thinly slice the steak, about five 4-inch-long strips. In a medium bowl, mix the mirin, soy sauce, ginger, chile sauce, lime zest and lime juice. Add the steak and marinate, covered, for at least 2 hours.
  • Toss the asparagus in the sesame oil. Remove the steak from the marinade. Wrap 2 pieces of asparagus with a single piece of steak. Heat a grill pan set over high heat until smoking. Grill each bundle, turning, until all sides are cooked and the asparagus begins to wilt, about 5 minutes. Sprinkle with the sesame seeds, and then serve.

1 tablespoon Montreal steak seasoning
½ pound thin asparagus spears, trimmed

  • Preheat the oven to 400 degrees F. Divide the asparagus spears into 12 bundles. Carefully wrap 1 piece of bacon around each bundle, starting about 1/2 inch from the bottom of the tips. Secure the bacon-wrapped spears with a toothpick. Lay the bundles in a low-sided casserole dish. In a medium saucepan, combine the brown sugar, butter, soy sauce, garlic salt and pepper. I got this recipe a long time ago from a Land O Lakes cooking mag. This is excellent for summer BBQ's as a steak or burger alternative. You can also use different types of cheese as well. You can also broil this dish in the oven at 400 degrees for 30 minutes, then turn over and cook for 20 minutes. You will need to half cook the bacon first if you broil this dish!

4 (12 ounce) whole boneless skinless chicken breasts, halved
8 ounces cheddar cheese, chunks
16 slices bacon
1/4 cup barbecue sauce

Steps:

  • Prepare grill: place coals to one side.
  • Heat until coals are ash white.
  • Prepare aluminum foil drip pan, place opposite coals.
  • Make slit in each chicken breast half to form a pocket.
  • Place 1 chunk of cheese in each pocket.
  • Roll each chicken piece into a bundle, and wrap bacon criss cross (2 slices) around chicken.
  • Secure bacon with wooden picks.
  • Place bundles on grill over drip pan.
  • Grill, turning every 15 minutes, for 30 to 45 minutes, or until chicken is fork tender.
  • Baste with barbecue sauce during the last 10 minutes of grilling.
  • If crisp bacon is desired, place bacon over direct heat, turning 2-3 times during the last 10 minutes.

4 hard-cooked eggs, yolks only
1 tablespoon finely chopped fresh tarragon leaves

1 1/4 cups extra-virgin olive oil
1/4 cup white wine vinegar

  • Preheat the grill to medium. Brush the asparagus with oil and season with salt and pepper, to taste. Grill for 2 to 3 minutes on each side, or until just cooked through. Remove from the grill and place on a serving platter.
  • Place the cooked egg yolks, tarragon, capers, cornichons, salt, and pepper in the work bowl of a food processor and pulse until just combined.   • Stir together first 5 ingredients in a small bowl until blended. Shape into a 4-inch log; wrap in plastic wrap, and chill until firm.

½ jarred roasted red pepper, cut into six 1/2-inch strips
6 toothpicks
1 tablespoon grated Parmesan cheese, or to taste

Steps:

  • Butterfly or pound steak with a meat mallet to 1/4-inch thickness. Cut into 6 strips, each approximately 2 inches wide by 5 inches long. Season both sides with Montreal steak seasoning and place in the refrigerator.
  • Preheat a Panasonic Countertop Induction Oven to medium-high on the "Grill" setting.
  • Place asparagus in a shallow dish; drizzle olive oil on top. Season with salt and pepper.
  • Grill asparagus for 2 minutes, turning after 1 minute. Transfer to a plate.

3 tablespoons plain nonfat greek yogurt
3 tablespoons mayonnaise
1/4 cup stone ground mustard (we like Inglehoffer's!)
1 bunch (of 30) asparagus spears
10 slices center cut bacon
olive oil spray
kosher salt
black pepper (coarse freshly ground )

Steps:

  • Preheat your oven to 450°. Place an oven-safe wire rack into a rimmed baking sheet and spray with olive oil.
  • In a medium bowl, combine the yogurt, mayo and stone ground mustard. Cover and refrigerate until ready to serve.
  • Trimmed the tough ends off the asparagus.
  • Wrap a piece of bacon around 3 asparagus spears and secure the bacon with a toothpick. Place each bundle onto the wrack and repeat with the remaining asparagus and bacon.
  • Spray the bundles lightly with olive oil. Season the asparagus with kosher salt and the bacon with coarse black pepper.
  • Bake on the middle rack of your oven for 16 to 18 minutes or until the bacon is crisp and the asparagus is tender. They may need longer if the asparagus is thicker.
  • Serve on a platter with a bowl of the creamy mustard dip.
