SPICY MOLASSES COOKIES

A wonderfully full-flavored cookie that is covered in sugar. I usually chill overnight and the dough does not get rock hard. I use tablespoonfuls of dough and get about 28 or 29 cookies.

3/4 cup shortening
1 cup brown sugar, packed
1 egg
1/4 cup molasses
1 teaspoon cinnamon
2 1/4 cups flour
2 teaspoons baking soda
1 teaspoon ginger
1/2 teaspoon ground cloves
1/4 teaspoon salt
white sugar, for dipping

Steps:

  • Mix together shortening, brown sugar, egg and molasses.
  • In separate bowl, stir together remaining dry ingredients except white sugar. Then mix dry ingredients into shortening mixture.
  • Chill dough 2 hours or overnight.
  • Roll dough into balls the size of large walnuts and dip tops in sugar. Place on lightly greased baking sheet about 3 inches apart, sugared side up.
  • Bake in a 375º oven about 10 to 12 minutes until just set but not hard.
  • Cool on wire rack.

1 1/2 sticks (3/4 cup) unsalted butter, softened
1/2 cup sugar
1/3 cup unsulfured molasses
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoon ground ginger
3/4 teaspoon cinnamon
1/4 teaspoon ground cloves
1/2 cup dried currants, soaked in boiling water to cover for 5 minutes, drained, and patted dry

Steps:

  • In a bowl with an electric mixer cream the butter with the sugar until the mixture is light and fluffy and beat in the molasses. Into the bowl sift together the flour, the baking soda, the salt, and the spices, beat the dough until it is combined well, and stir in the currants. Halve the dough and on a sheet of wax paper form each half into an 8-inch log, using the wax paper as a guide. Chill the logs, wrapped in the wax paper, for at least 4 hours or overnight.
  • Preheat the oven to 350°F. Cut the logs into 1/4-inch-thick slices with a sharp knife and arrange the slices 2 inches apart on lightly buttered baking sheets. Bake the cookies in batches in the middle of the oven for 10 to 12 minutes, or until they are pale golden. Transfer the cookies to racks and let them cool.

1 cup shortening
1 cup packed brown sugar
1 cup molasses
2 large eggs, room temperature
4 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
2 teaspoons ground ginger
1 teaspoon salt
1/2 cup water

Steps:

  • In a large bowl, cream shortening and brown sugar until light and fluffy. Beat in molasses and eggs. Combine the dry ingredients; add to the creamed mixture alternately with water. Refrigerate for at least 8 hours. , Drop dough by tablespoonfuls 2 in. apart onto greased baking sheets. Bake at 350° for 10-12 minutes or until lightly browned. Remove to wire racks to cool.

1 ½ cups white sugar
1 cup butter
2 eggs
1 ½ teaspoons ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon ground cloves
4 cups all-purpose flour
1 cup dried currants
1 ½ teaspoons baking soda
1 cup milk, or as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease 2 baking sheets.
  • Combine sugar, butter, eggs, cinnamon, nutmeg, and cloves in a bowl; beat with an electric mixer until creamy. Combine flour, currants, and baking soda in a separate bowl. Stir into the butter mixture alternately with tablespoons of milk until the flour is fully incorporated.
  • Drop spoonfuls of batter onto the prepared baking sheets. Press down lightly with a fork. Dip fork in sugar or water if it sticks.
  • Bake in the preheated oven until golden brown, 10 to 15 minutes. Let stand on the baking sheets for 1 minute before removing to a wire rack to cool completely.

3/4 cup shortening
1 cup packed brown sugar
1 egg
1/4 cup molasses
2-1/4 cup all-purpose flour
2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
Sugar

Steps:

  • In a large bowl, cream shortening and brown sugar until light and fluffy. Beat in egg and molasses. Combine the flour, baking soda, salt, ginger, cinnamon and cloves. Gradually add to the creamed mixture and mix well., Shape into 1-in. balls; roll in sugar. Place 2 in. apart on greased baking sheets. Bake at 375° for 10-12 minutes or until the tops crack. Remove cookies to wire racks to cool.

Another healthy cookie from my files of healthy, and sometimes odd, cookies. This one has lots of options for adaptations (i.e., different flours so that those who are intolerant to wheat gluten can still make them and eat them).

1/4 cup oil, natural
1/2 cup maple syrup or 1/2 cup other liquid sweetener
1/4 cup brown date sugar ("or" barley malt powder "or" other natural powdered "or" granulated sweetener)
3/4 cup spelt flour or 3/4 cup millet flour
1/2 cup unbleached white flour or 1/2 cup tapioca flour
3/4-1 cup pecans, chopped
1/2 cup currants or 1/2 cup chopped dates
1 teaspoon anise seed
1/2-1 teaspoon cinnamon
1/8 teaspoon sea salt
1 dash nutmeg
1 dash ginger
1 dash clove
1/4-1/2 cup unsweetened coconut, shredded

Steps:

  • Preheat the oven to 400°F.
  • Mix the oil and sweeteners together well. In a separate bowl, mix the remaining ingredients, then slowly stir them into the liquid mixture.
  • For each cookie, drop 1-2 Tbs of the dough onto lightly oiled cookie sheets, about 2"-3" apart.
  • Bake for 9-12 minutes, until lightly browned but still soft. Cool on wire racks. The cookies will get crispy as they cool.

1 cup butter, softened
½ cup brown sugar
1 egg
¾ cup molasses
3 cups all-purpose flour
2 teaspoons baking soda
½ teaspoon ground cinnamon
1 teaspoon ground ginger

Steps:

  • In a large bowl, cream together the butter, brown sugar and egg until well blended. Stir in the molasses. Combine the flour, baking soda, cinnamon and ginger; stir into the molasses mixture. Cover the dough and chill for at least 1 hour.
  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets. Roll the dough into walnut sized balls. Place the cookies 2 inches apart onto the prepared cookie sheet.
  • Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
