1 cup blackberry
1 cup boiling water
1 pinch salt
1 grated lemon, rind of
1 lemon, juice of
1 orange, juice of
1/3 cup sugar
3 cups cold water

Steps:

  • Put boiling water over blackberries.
  • Add salt, grated rind, orange and lemon juices.
  • Let simmer slowly for 5 minutes.
  • Press through sieve, then add cold water and sugar.
  • Place in fridge until cold, several hours.

I first saw this prepared on Bobby Flay's Grill It! Show a few years ago. And I recently stumbled across the copy of the recipe that I printed immediately after watching that episode. In warmer weather when you're cooking outdoors more often, you can do as Bobby Flay did and put the sugared blackberries in a metal bowl and heat them right on your outdoor grill.

Number Of Ingredients 6

1 pint fresh blackberries
2 -4 tablespoons sugar (or more, depending on berry sweetness)
1 pint vanilla ice cream (1 1/2 pints for thicker shakes)
12 ounces pomegranate juice
1 cup milk
fresh blackberries (for garnish)

Steps:

  • Combine the pint of blackberries and sugar in a small saucepan and cook over high heat until the sugar has melted and the berries are soft and just starting to break down.
  • Put the cooked berries, ice cream, pomegranate juice and milk in a blender and puree until thick and creamy.
  • Pour into tall glasses and garnish each glass with a few berries.

  • Combine the blackberries, water, and sugar in a heavy bottomed sauce pan. Crush the berries with a potato masher then add the lemon juice to the pot. Bring the mixture to a boil over medium-high heat then reduce the heat to medium and simmer for 30 minutes, stirring occasionally until the liquid has reduced and the mixture has thickened.
  • Place a fine mesh strainer over a large bowl and pour the blackberry mixture into the strainer. Gently press on the solids with a spatula to extract all of the syrup then discard the solids. Allow the syrup to cool then store in the refrigerator for up to a week.
  • Fill a glass with ice, add the desired amount of syrup and fill to the top with club soda. Stir to combine and garnish with fresh berries.
  • To make a cocktail simply add 1 1/2 ounces of coconut rum or vodka to the glass before adding the club soda.
