1 lb thin skinned, mild (non bitter) cucumbers, such as Persian, Armenian, or English cucumbers.
1/4 red onion, thinly sliced
2 or 3 red radishes, thinly sliced
10 young mint leaves, thinly sliced
2 teaspoons white wine vinegar
1 1/2 Tbsp olive oil
1/2 teaspoon kosher salt (more to taste)
1/8 teaspoon freshly ground black pepper (more to taste)
1/3 cup crumbled feta cheese

Steps:

  • In a medium sized bowl, gently toss together the sliced cucumbers, red onion, radishes, and mint leaves. Sprinkle with vinegar and toss to coat.

1 cup crumbled feta cheese
1/2 cup chopped mint leaf
6 tablespoons olive oil

Steps:

  • Wash and dry the cucumber and cut it into very thin crosswise slices. Place the slices in a salad bowl, sprinkle with feta cheese and mint.
  • In a small whisk the oil and lemon juice with the salt and pepper to make a vinaigrette made with lemon juice. Pour over the salad and toss thoroughly. Serve immediately.

2 pita breads, cut iinto 1-inch squares
3 tablespoons white wine vinegar
1/4 cup extra virgin olive oil, good quality
coarse salt, to taste
3 stalks celery, diced to 1/2 inch
1/2 English cucumber, cut into 1/2 inch dice
1 bunch of fresh mint, trimmed and leaves thinly sliced
1/2 bunch watercress, trimmed
6 ounces feta cheese, crumbled (1 1/2 cups approx)
fresh ground black pepper, to taste

Steps:

  • First preheat your oven to 350 degress F.
  • Spread your pita squares in a single layer on a baking sheet and bake until they are nice and crisp, approx 20 minutes.
  • Remove from oven.
  • In a small bowl, whisk together your vinegar, oil, and salt.
  • In a medium salad bowl, combine your pita, celery, and cucumber, and then add vinegar mixture and toss well to combine.
  • Just before serving, add mint and watercress and gently toss.
