1-1/2 cups sour cream

Steps:

Steps:

  • Place sliced cucumbers in a large mixing bowl. Add sliced shallots, radish, and fresh dill.
  • In a small bowl (or mason jar), combine the dressing ingredients (extra virgin olive oil, white wine vinegar, lemon juice, oregano, kosher salt and black pepper.) Whisk (or cover and shake the mason jar) until well combined.

1 small sweet onion, thinly sliced into rings
Kosher salt
1/2 cup sour cream
1/4 cup chopped fresh dill
2 tablespoons white vinegar
Freshly cracked black pepper

Steps:

  • Put a large colander in a large bowl. Add the cucumbers and onions to the colander, sprinkle with 1 tablespoon salt and toss until the salt is evenly distributed. Let stand at room temperature for at least 1 hour and up to 2 hours.

Steps:

  • Mix cucumbers, sweet onion, and sea salt together in a bowl. Cover bowl with plastic wrap and let sit for 30 minutes.
  • Turn cucumber mixture into a colander set over a bowl or in a sink; let drain, stirring occasionally, until most of the liquid has drained, about 30 minutes more. Transfer drained cucumber mixture to a large bowl.
  • Stir mayonnaise, vinegar, sugar, dill, garlic powder, and black pepper together in a bowl with a whisk until smooth; pour over the cucumber mixture and stir to coat vegetables with the dressing.

1 English (seedless) cucumber (about 1 pound)
1 tablespoon kosher salt
1 cup low-fat plain yogurt
2 teaspoons roughly chopped fresh dill, (about 2 fronds), plus more fronds for garnish
Pinch sugar
1/2 teaspoon finely grated orange zest
Pinch cayenne pepper
Freshly ground black pepper
1 1/2 pound center cut salmon, skinned
1/4 teaspoon ground turmeric
Kosher salt
Freshly ground black pepper

Steps:

  • For the salad: Quarter the cucumber, lengthwise, and remove the seeds, but leave on the skin. Thinly slice the cucumbers and mix with the salt in a colander. Set in the sink for about 1 hour to drain. Meanwhile, place the yogurt in a coffee filter-lined strainer and set over a bowl to drain, about 1 hour.
  • Rinse the cucumbers with cold, running water. Press down on the cucumbers to extract as much liquid as possible and pat dry. Toss the cucumbers with the drained yogurt, dill, sugar, orange zest, cayenne, and season with pepper, to taste.
  • Preheat the oven to 275 degrees F.
  • Cut the salmon lengthwise and then crosswise to make 4 equal squares of fish. Lightly sprinkle the salmon all over with a pinch of turmeric and rub in slightly to coat evenly. Season salmon with salt and pepper and place on a very lightly oiled oven-proof nonstick pan. Roast the salmon, turning the pieces carefully with a spatula after about 10 minutes, until just cooked through, about 20 minutes in all. (Slow-roasted salmon looks bright orange when done, and will be luscious in the center.) To serve, divide the cucumbers between 4 plates, top with the salmon and garnish with dill fronds.

I was surprised to see that, although quite a number of cucumber-dill recipes are available, nobody seems to have hit on the combination with feta cheese. Light and summery. Good for picknicks as well -- in that case bring the cheese separately and add just before serving. Good-quality olive oil is essential.

2 English cucumbers
salt
3 scallions
2 tablespoons olive oil
1 tablespoon white wine vinegar
fresh cracked pepper
1 bunch dill, chopped
50 g feta cheese

Steps:

  • Half the cucumbers length-wise. Remove the seeds. Slice into thin ribbons. Put in strainer with some salt and allow to drain for about 10 mins (the salt will draw out some of the moisture from the cucumber). Slice the white part of the scallions thinly. Cut the green part into very thin slivers.
  • Prepare a dressing from the oil, vinegar, salt and pepper to taste. Mix the cucumber, scallions, dill, and dressing. Crumble the feta cheese over the salad and add pepper to taste.

1 seedless English cucumber (long and skinny; or 2 Persian cucumbers)
3 tablespoons apple cider vinegar (or white vinegar )
1 tablespoon sugar (or to taste)
1/4 teaspoon salt
1/4 teaspoon black pepper (freshly ground)
1 small red onion (thinly sliced and broken into rings), optional
3 tablespoons fresh dill (chopped), optional

Steps:

  • Gather the ingredients.
  • Rinse and dry the cucumber. With unwaxed, seedless cucumbers, you can leave part or all of the skin on in strips, which looks attractive when you cut it and actually helps hold the slices together. Other varieties should be peeled and seeded first.
  • Using a mandoline , a food processor with the thin slicer attachment, or the slicer opening on a cheese grater, thinly slice the cucumber(s). They should be almost see-through. Set aside.
  • Make the dressing by placing the vinegar, sugar, salt, and pepper in a serving bowl and whisk until the sugar completely dissolves.
  • Add the sliced cucumber, red onion rings, and chopped dill (if using) and then toss well. Marinate for 5 or more minutes, toss again, and serve.

Slow-Roasted Salmon with Cucumber Dill Salad image

Delicious, easy-to-make salmon served with a refreshing homemade cucumber dill yogurt salad.

1 English (seedless) cucumber (about 1 lb)
1 Tbsp kosher salt
1 cup low-fat plain yogurt
2 tsp roughly chopped fresh dill (about 2 fronds), plus more fronds for garnish
1 pinch sugar
½ tsp finely grated orange zest
1 pinch cayenne pepper
Freshly ground black pepper
1 ½ lb(s) center-cut salmon, skinned
¼ tsp ground turmeric
Kosher salt
Freshly ground black pepper

Steps:

  • Quarter the cucumber, lengthwise, and remove the seeds, but leave on the skin. Thinly slice the cucumbers and mix with the salt in a colander. Set in the sink for about 1 hour to drain. Meanwhile, place the yogurt in a coffee filter-lined strainer and set over a bowl to drain, about 1 hour.
  • Rinse the cucumbers with cold, running water. Press down on the cucumbers to extract as much liquid as possible and pat dry. Toss the cucumbers with the drained yogurt, dill, sugar, orange zest, cayenne, and season with pepper, to taste.
  • Preheat the oven to 275ºF.
  • Cut the salmon lengthwise and then crosswise to make 4 equal squares of fish. Lightly sprinkle the salmon all over with a pinch of turmeric and rub in slightly to coat evenly. Season salmon with salt and pepper and place on a very lightly oiled oven-proof nonstick pan. Roast the salmon, turning the pieces carefully with a spatula after about 10 minutes, until just cooked through, about 20 minutes in all. (Slow-roasted salmon looks bright orange when done, and will be luscious in the center.) To serve, divide the cucumbers between 4 plates, top with the salmon and garnish with dill fronds.
