SIMPLE SESAME NOODLES

Steps:
- Bring a large pot of water to a boil. Cook the noodles according to the package instructions.
- Meanwhile, whisk together the soy sauce, canola oil, sesame oil, sugar, vinegar, chili oil and garlic in a bowl. Taste and adjust the ingredients as needed.
- Drain the noodles. Pour the sauce over the warm noodles and toss to coat. Sprinkle with the green onions and toss. Serve in a bowl with chopsticks. Yummy!
MY FAVORITE SESAME NOODLES
This recipe for sesame noodles is one I've created through trial and error. It combines green onions, peanut butter and sesame oil for a wonderfully complex flavour.

Steps:
- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the spaghetti, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 12 minutes. Drain well in a colander set in the sink.
- Melt the peanut butter in a large microwave-safe glass or ceramic bowl, 15 to 20 seconds (depending on your microwave). Whisk the honey, tamari, and chili sauce into the peanut butter, then stir in the sesame oil and ginger. Mix in the garlic and green onions and toss with the spaghetti. Top with the sesame seeds.

- Cook noodles according to instructions on the package.
- In a small mixing bowl, combinerice wine vinegar, soy sauce, sesame oil, garlic, and ginger. Stir until combined.
- Once noodles are done, drain and rinse with cold water until noodles have cooled. Place in a large bowl and add in green onions, sesame seeds, and the sauce. Toss until well combined and serve.

MY THAI SESAME NOODLES
After tinkering with a few different recipes, this is my family's favorite version! Sooooo good, I could eat the whole bowl! You can easily add cooked chicken and make it a main dish! The honey is an optional ingredient; leave it out if you don't like the noodles sweet.

- In a large bowl whisk together softened peanut butter, soy sauce, vinegar, sesame oil, sambal oelek and honey (if using).

- Cook pasta al dente according to package instructions in a large stockpot of generously-salted water.
- Meanwhile, as the pasta is cooking, whisk together the soy sauce, rice vinegar, sesame oil, ground ginger, chili garlic sauce, garlic powder and black pepper together in a bowl until combined.
- Once the pasta is ready, drain it. Then immediately toss the pasta with the sauce and green onions until combined.
- Serve warm or cold, sprinkled with your desired toppings. Or transfer to a sealed container and refrigerate for up to 4 days.
