MY FAVORITE SESAME NOODLES

My Favorite Sesame Noodles image

This recipe for sesame noodles is one I've created through trial and error. It combines green onions, peanut butter and sesame oil for a wonderfully complex flavour.

Provided by kelcampbell

Categories     World Cuisine Recipes     Asian

Time 25m

Yield 1

Number Of Ingredients 10

½ (8 ounce) package spaghetti
2 tablespoons peanut butter
1 tablespoon honey
2 tablespoons tamari
1 teaspoon Thai chili sauce
1 teaspoon sesame oil
1 teaspoon ground ginger
1 clove garlic, minced
1 green onion, chopped
2 teaspoons sesame seeds

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the spaghetti, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 12 minutes. Drain well in a colander set in the sink.
  • Melt the peanut butter in a large microwave-safe glass or ceramic bowl, 15 to 20 seconds (depending on your microwave). Whisk the honey, tamari, and chili sauce into the peanut butter, then stir in the sesame oil and ginger. Mix in the garlic and green onions and toss with the spaghetti. Top with the sesame seeds.

  • In a medium-size bowl whisk together all ingredients for the sauce. Taste and adjust saltiness, sweetness, and acidity, as desired. Keep in mind that the sauce should be very flavorful because the noodles and vegetables will dilute the flavor significantly.

  • Peel and scrape out any seeds. Cut the cucumber in half lengthwise, then cut each half in quarters. Cut each quarter into 1 - 2-inch (2.5 - 5.5 cm) strips. Set aside
  • Bring a big pot of water to boil and cook the noodles according to the directions. Some noodles take 3 minutes to reach al dente, some take 10 minutes. If you are using the curly lo mien noodles stir with a fork to help separate the noodles without breaking them. Be careful not to burn your hand and overcook the noodles. Drain the noodles in a colander and rinse in cold running water to stop the cooking. Once the noodles are cooled, shake out any excess water and carefully dump the noodles on a clean flour sack towel, or other lint free kitchen towel. Carefully pat the noodles lightly dry.
  • In a medium mixing bowl add the toasted sesame oil, soy sauce, rice vinegar, sesame paste or tahini, peanut butter, brown sugar, chili garlic paste, black vinegar, minced garlic and minced ginger. With a wire whisk, whisk all the ingredients together until smooth and incorporated. Taste the sauce and correct the seasoning with using any of the sesame sauce ingredients you wish, if needed.

  • Bring a pot of salted water to a boil. Add the rice noodles and cook, stirring occasionally, to al dente, about 6 or 7 minutes. Drain well under cold water and set aside.
  • While the noodles are cooking, whisk together the tahini, minced garlic, and 1/2 to 3/4 cup cold water, until it's smooth and pourable. Season with pepper and about 1 teaspoon kosher salt, or to taste. PRO TIP: If you can find it, I like Soom-brand tehini. It's high quality, preferred by numerous chefs, and is a woman-owned business.
  • Heat a large skillet over medium-high heat. Add the oil. When the oil is hot and shimmering and moves quickly in the skillet, add the broccoli and season with salt and pepper. Cook, turning frequently, for about 5 to 7 minutes, until charred and just tender.
