2 pounds skinless, boneless chicken breast halves - cut into strips
2 eggs, beaten
½ cup milk
1 (12 ounce) package tortilla chips, crushed

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Mix egg beat and milk in a shallow dish or bowl; place crushed chips in a separate shallow dish or bowl. Dip chicken first in egg mixture, then in crushed chips to coat. Place coated chicken on an ungreased cookie sheet.
  • Bake in preheated oven for 10 minutes; turn sides and bake for another 10 minutes.

1/3 cup finely chopped honey-roasted peanuts*
1/2 teaspoon salt or garlic salt
3 boneless skinless chicken breast halves, cut crosswise into 1/2-inch strips
1 egg, slightly beaten
3 tablespoons butter or margarine, melted
1/4 cup honey or real maple syrup
1 1/2 tablespoons Dijon or yellow mustard
2 tablespoons honey
1/4 cup mayonnaise or sour cream

Steps:

  • Heat oven to 450°F. Line cookie sheet with foil; spray with cooking spray.
  • Mix Bisquick mix, peanuts and salt in 1-gallon resealable plastic food-storage bag. Dip half the chicken strips into egg; place in bag of Bisquick mixture. Seal bag; shake to coat. Place chicken on cookie sheet. Repeat with remaining chicken. Drizzle butter over chicken.
  • Bake 12 to 14 minutes, turning after 6 minutes with pancake turner, until no longer pink in center.
  • Meanwhile, in separate small bowls, mix Honey Mustard Dipping Sauce and Creamy Honey Dipping Sauce until each is well blended. Serve chicken fingers with dipping sauces.

Vegetable oil, for frying
1 cup all-purpose flour
Kosher salt and freshly ground black pepper
1 large egg, beaten
2 cups crunchy sweetened cereal, such as Cap'n Crunch
2 boneless, skinless chicken breasts, cut into 1-inch strips
1/2 cup ketchup
1/4 cup applesauce
2 dashes Worcestershire sauce

Steps:

  • Heat 1/4 inch of oil in a large skillet over medium-high heat.
  • Put the flour in a shallow bowl and add some salt and pepper. Put the egg in a second shallow bowl. Put the cereal in a resealable plastic bag and pound into crumbs with your hands until mostly broken up with some bigger pieces. Transfer the cereal to a third shallow bowl.
  • Dip the chicken strips first in the flour, then the egg and then the cereal. Cook the strips in batches until golden brown and cooked through, 5 to 7 minutes. Drain on paper towels.
  • Stir together the ketchup, applesauce and Worcestershire sauce in a small bowl. Serve as a dip with the chicken fingers.

1/2 cup all-purpose flour
1/4 cup milk
1 pinch cayenne pepper
4 large eggs
Kosher salt and freshly ground black pepper
2 cups panko breadcrumbs
Vegetable oil, for shallow frying
Honey mustard, spicy ketchup and/or ranch dressing, for serving

Steps:

  • Cut the chicken lengthwise into 3/4-inch-wide strips. Put the flour in a shallow dish. Whisk the milk, cayenne, eggs and a pinch of salt and pepper in another shallow dish until combined. Put the breadcrumbs in a third shallow dish.
  • Dredge the chicken fingers in the flour, shaking off the excess, then dip into the egg mixture, and finally coat with the panko breadcrumbs, pressing to help adhere well. Set aside on a piece of wax paper or a baking sheet.
  • Heat about 1/2 inch of oil in a large skillet over medium-high heat. Working in batches, fry the chicken fingers, turning occasionally, until golden brown and cooked through, about 3 minutes. Transfer the chicken fingers to a paper towel-lined plate to drain and season with salt. Serve with honey mustard, spicy ketchup and/or ranch dressing for dipping.

1/2 cup Dijon mustard
1/4 cup honey
1/2 teaspoon salt
1/4 teaspoon pepper
40 -50 Ritz crackers, crushed

Steps:

  • Preheat oven to 350°F.
  • Pound chicken breasts until they are thin.
  • Stir together mustard, honey, salt and pepper.
  • Spread or paint dijon mixture generously on chicken breasts.
  • Crush Ritz crackers into fine crumbs.
  • Press crumbs onto mustard coated chicken until chicken is thoroughly coated with crumbs.
  • Place chicken on a baking sheet or jellyroll pan and bake at 350F for 30-40 minutes or until crispy, turning chicken once during cooking, if desired.
