1 lime
2 tablespoons flaky sea salt
1/2 teaspoon ancho chile powder
2 oranges, sliced into 1/4-inch rounds, rounds halved
5 mini seedless cucumbers, cut into 1/2-inch spears
1 bunch of radishes (preferably breakfast), halved
1 large jicama, peeled, cut into 1/4-inch-thick slices, half of slices cut into half moons, half moons cut into triangles

Steps:

  • Finely grate lime zest into a small bowl. Stir in salt and chile powder. Cut lime into wedges.
  • Arrange crudités on a platter. Squeeze lime juice over, then sprinkle with some spiced salt mixture. Serve remaining spiced salt mixture alongside.

This simple and refreshing salad is packed with flavor and great to serve along with simple grilled or roasted foods, or enjoy it by itself as a fruit cup. If you like, you can garnish it with chopped fresh mint.

2 limes, zest of
1 teaspoon chili powder
1/2 teaspoon kosher salt
Large pinch powdered ancho chile pepper or cayenne

Steps:

  • Place mangoes on a plate or in a shallow bowl.
  • In a small bowl, combine lime zest, chili powder, salt and powdered ancho chile pepper.
  • Sprinkle the mixture over the mangoes and serve.

1/2 cup flaky sea salt
zest of one lime (about 1 tbsp)

Steps:

  • Preheat oven or dehydrator to 220F.
  • Zest one lime.
  • Place 1/2 cup flaky sea salt into a mortar and add in the zest.
  • With a pestle, grind the lime zest into the salt. Don't be shy, really work the zest into the salt.
  • Line a baking sheet with parchment paper and pour the salt onto the baking sheet.
  • Cook for 80 minutes. The lime zest should crumble in your fingers when rubbed in between them.
  • Allow to fully cool and store in a container in a cool dry place.
  • Use with a years time.

Adding additional sugar or sugar substitute is up to you, according to taste or to how ripe the fruit is. Any fruit would work well in this, but I've mentioned the ones listed in the recipe. From a special issue of Saveur, The Best of Tex-Mex. I have not tried this yet.

  • Place the crudités around the small bowl, sticking them into the crushed ice. Serve immediately.
