Steps:
- Finely grate lime zest into a small bowl. Stir in salt and chile powder. Cut lime into wedges.
- Arrange crudités on a platter. Squeeze lime juice over, then sprinkle with some spiced salt mixture. Serve remaining spiced salt mixture alongside.
MANGO SALAD WITH CHILE-LIME SALT
This simple and refreshing salad is packed with flavor and great to serve along with simple grilled or roasted foods, or enjoy it by itself as a fruit cup. If you like, you can garnish it with chopped fresh mint.

- Place mangoes on a plate or in a shallow bowl.
- In a small bowl, combine lime zest, chili powder, salt and powdered ancho chile pepper.

HOW TO MAKE AN INFUSED LIME SALT RECIPE

Steps:
- Preheat oven or dehydrator to 220F.
- Zest one lime.
- Place 1/2 cup flaky sea salt into a mortar and add in the zest.
- With a pestle, grind the lime zest into the salt. Don't be shy, really work the zest into the salt.
- Line a baking sheet with parchment paper and pour the salt onto the baking sheet.
- Cook for 80 minutes. The lime zest should crumble in your fingers when rubbed in between them.
- Allow to fully cool and store in a container in a cool dry place.
- Use with a years time.
FRUIT WITH LIME AND CHILES
Submitted for Zaar World Tour 2005. Fruiterias, Mexican fruit stands, serve fruit spiked with chile powder, lime and salt to enhance the flavors. Adding additional sugar or sugar substitute is up to you, according to taste or to how ripe the fruit is. Any fruit would work well in this, but I've mentioned the ones listed in the recipe. From a special issue of Saveur, The Best of Tex-Mex. I have not tried this yet.

- To make the avocado dip, combine the avocados, lime zest, lime juice, garlic, and chili in a mortar. Gently pound with the pestle until just mixed. Add the olive oil, yogurt, pepitas, and a pinch of salt and pound and stir until almost smooth but still somewhat chunky. Alternatively, pulse all the ingredients in a food processor. Season with salt.
- Place crushed ice in a large bowl and nest a small bowl in the middle. Fill the small bowl with the avocado dip and top with the cilantro.
- Place the crudités around the small bowl, sticking them into the crushed ice. Serve immediately.
