Steps:

  • Combine all ingredients in a slow cooker. Cover and cook on low for 6 to 8 hours or on high for 4 to 5 hours. Remove bay leaves and season with salt and black pepper before serving.

4 cups low-sodium chicken broth
2 tablespoons apple cider vinegar
1 yellow onion, chopped
1 green bell pepper, chopped
2 cloves garlic, minced
1 bay leaf
2 teaspoons ground cumin
1/2 teaspoon dried oregano
Kosher salt and freshly ground pepper
2 fully cooked (not dried) smoked chorizo sausages (about 6 ounces), halved lengthwise and sliced 1/2 inch thick
Hot sauce, chopped red onions, cubed avocado, pico de gallo and/or crumbled Cotija cheese and chopped fresh cilantro, for topping

Steps:

  • Combine 2 cups water, the beans, chicken broth, vinegar, onion, bell pepper, garlic, bay leaf, cumin, oregano, 1 1/2 teaspoons salt and a few grinds of pepper in a 6- to 8-quart slow cooker. Cover and cook on low until the beans are tender, about 8 hours.
  • Discard the bay leaf. Working in small batches, puree about half of the soup in a blender. Stir the pureed soup back into the slow cooker. Season with salt and pepper.
  • Cook the chorizo in a small nonstick skillet over medium heat, stirring occasionally, until lightly browned, about 5 minutes. Top each serving of soup with the chorizo and toppings.

I like to serve this soup steaming hot with plenty of fresh, dark bread, coleslaw and sliced Cheddar cheese. It makes a great winter meal.

2 cups yellow split peas, soaked, drained and rinsed (See TIPS, below)
2 onions, diced
4 stalks celery, peeled and thinly sliced
3 carrots, peeled and diced
2 potatoes, peeled and diced
1 smoked ham hock
1 tablespoon cumin seed
1 teaspoon salt
1/2 teaspoon cracked black peppercorns
1/4 cup fresh lemon juice
1/4 cup finely chopped parsley

Steps:

  • In slow cooker stoneware, combine all ingredients except lemon juice and parsley.
  • Cover and cook on Low for 12 hours or on High for 6 hours, until vegetables are tender and broth is well flavoured.
  • Remove ham hock and stir in lemon juice.
  • Ladle into bowls an garnish with parsley.
  • TIPS: Traditionally, yellow split peas are not soaked before cooking, but I have found that they can be tough unless they are pre-soaked.
  • To be safe, I suggest the following: Bring the peas and 6 cups water to boil.
  • Boil rapidly for 1 minute, then let sit while you prepare the rest of the ingredients.
  • Drain and rinse before adding to the recipe.
  • Smoked ham hocks are available from butchers and can often be found in the meat section of well-stocked supermarkets.
  • They are wonderful flavour enhancers, particularly for legumes.
  • VARIATION: South-western-Style Split Pea Soup: In a heatproof bowl, soak 2 New Mexico chillies in 2 cups boiling water for 30 minutes.
  • Drain and discard liquid and stems.
  • Chop finely.
  • Add to soup along with onions and other ingredients.
  • For a spicier version, add 1 finely chopped jalapeno pepper along with the reconstituted chillies.
  • To serve, top with sour cream and garnish with finely chopped cilantro instead of parsley.

1/2 teaspoon dried thyme
1 bay leaf
3 carrots, halved lengthwise and sliced thin crosswise

  • In a heavy kettle brown the chorizo over moderate heat, stirring, transfer it with slotted spoon to paper towels to drain, and pour off all but 1 tablespoon of the fat. In the fat remaining in the kettle cook the onion, the celery, and the garlic over moderately low heat, stirring, until the celery is softened, add the split peas, the broth, the water, the thyme, and the bay leaf, and simmer the mixture, covered, stirring occasionally, for 1 1/4 hours, Stir in the carrots and simmer the soup, covered for 30 to 35 minutes, or until the carrots are tender. Discard the bay leaf, season the soup with salt and pepper, and serve it with the croutons.

The recipe starts off simply--sliced Spanish-style chorizo sauteed with onions and garlic until fragrant. Then you add some rinsed canned chickpeas, tomatoes, a few spices, and chicken broth, and let the whole thing simmer for about half an hour or so. And that's really it! Serve it up right away or divide into batches for lunch tomorrow. This thing can be heated and reheated half a dozen times, and it always tastes fantastic. A chunk of crusty bread is optional, but definitely recommended.
