1/2 large onion, finely diced
1 clove garlic, minced
1 egg
1/2 cup dry Italian bread crumbs
1 tablespoon Worcestershire sauce
salt and pepper, as desired
2 cups water
2 teaspoons beef base or beef bouillon cubes
1/2 large onion, sliced
1/4 pound sliced fresh mushrooms

Steps:

  • Combine the ground beef, diced onion, garlic, egg, bread crumbs, Worcestershire sauce, salt, and pepper in a bowl. Mix well but do not overwork the meat. Form the meat into oblong patties. Bring the water to a boil in a saucepan over high heat. Remove the boiling water from the heat and stir in the beef base. Carefully pour the mixture into the crock pot. Heat a non-stick skillet over medium-high heat. Place the hamburger patties in the skillet and cook, turning as needed, until browned on both sides. Transfer the patties to the crock pot, leaving any juices and drippings in the skillet. Add the sliced onion and mushrooms to the skillet and cook until just beginning to soften. Transfer them and any pan juices to the crock pot. Cover the crock pot and cook on high heat for 2-3 hours or until the salisbury steaks are cooked through. If desired, you can remove the salisbury steaks from the crock pot and thicken the juices with cornstarch for a thicker gravy.

2 pounds stew meat, cut into 1/2-inch cubes
Kosher salt and freshly ground black pepper, to taste
4 cups beef broth
1 tablespoon tomato paste
1 tablespoon Worcestershire sauce
2 teaspoons red wine vinegar, optional
1/2 teaspoon dried thyme
1 onion, diced
3 cloves garlic, minced
3 tablespoons cornstarch
8 ounce cremini mushrooms, halved
2 tablespoons chopped fresh parsley leaves

Steps:

  • Heat olive oil in a large skillet over medium heat. Season beef with salt and pepper, to taste. Add beef to the skillet and cook until evenly browned, about 2-3 minutes; set aside. Whisk together beef broth, tomato paste, Worcestershire, red wine vinegar and thyme in a 4-qt slow cooker; season with salt and pepper, to taste. Stir in beef, onion and garlic. Cover and cook on low heat for 7-8 hours or high heat for 3-4 hours. In a small bowl, whisk together cornstarch and 1/4 cup water. Stir in mixture and mushrooms into the slow cooker. Cover and cook on high heat for an additional 30 minutes, or until the sauce has thickened. Serve immediately, garnished with parsley, if desired.

Slow Cooker Pork Shoulder Steaks with Mushrooms, Potatoes and Gravy image

Pork steaks are browned and then slowly cooked until tender. They are served alongside a mushroom gravy and sliced potatoes. A good old fashioned dinner!

1 Tbsp vegetable or canola oil
2 1/2 pounds pork shoulder steaks
1 yellow onion
4 garlic cloves
2 cups chicken broth (or 2 cups of water and 2 tsp better than bouillon chicken base*)
1/2 pound (8 oz) mushrooms
2 Tbsp dijon mustard
2 Tbsp lemon juice
2 tsp dried tarragon
1 3/4 pound russet potatoes (about 4 medium potatoes)
1/4 cup half and half or cream, warmed
Cornstarch and water
Salt and pepper

Steps:

  • Trim your pork steaks of excess fat. Generously salt and pepper your pork steaks. Heat a large pan over medium heat on your stove top. Add in the oil and let it heat for a minute. Arrange each of the pork steaks on the bottom of the pan so they are all in contact with the bottom of the pan (you may need to work in batches). Let the steaks brown for 5 minutes. Do not move the steaks or turn them over for the full 5 minutes. You'll be tempted to move them or mess around with them, but don't.
  • While the meat is browning prepare your vegetables. Dice the onion, mince the garlic and peel the potatoes. Slice the potatoes into quarter inch rounds. Slice the mushrooms.
  • When the 5 minutes is up remove the pork steaks and place them into the slow cooker. I only browned one side of the steaks for sake of time but if you want you can brown both sides. Add the onion into the hot pan and saute for 3 minutes. Add in the garlic and saute for 1 more minute. Pour the chicken broth in and deglaze the pan. Add the mixture into the slow cooker.
  • Stir the mushrooms, mustard, lemon juice and tarragon into the slow cooker.
  • Place the potatoes in a oven safe dish that will fit inside your slow cooker. You can use a pyrex,* corningware* or cake pan*. Salt and pepper the potatoes and toss. Cover the dish with foil. Lower the dish into the slow cooker on top of the pork.
  • Cover the slow cooker and cook on low for 8 hours.
  • Carefully remove the dish of potatoes and set aside. Pour the half and half into the sauce. Turn the slow cooker to the high setting. Stir 3 Tbsp of cornstarch and 3 Tbsp of cold water together in a small bowl until smooth. Stir the cornstarch slurry into the pot and let the sauce thicken without the lid for about 30 minutes.
  • Once sauce is thickened salt and pepper to taste. Serve sauce, mushrooms and pork over the top of the potatoes.

1.5 lbs lean ground beef
1 egg, large
1 oz onion soup mix
1/4 cup milk
20 Ritz crackers
1 tbsp olive oil
1 cup diced yellow onions
21 oz condensed cream of mushroom soup ( 2 x 10.5 oz cans)
0.87 oz brown gravy mix
1 cup beef broth
1/4 cup water
2 tbsp corn starch

Steps:

  • Dump the lean ground beef into a large mixing bowl.
  • Add the egg, onion soup mix and milk to the bowl.
  • Place the Ritz crackers in a ziploc bag and crush them with a rolling pin or heavy bottomed pot.
  • Pour the cracker crumbs into the bowl with the ground beef.
  • Use your hands to combine all of the ingredients well.
  • Divide the meat mixture into four evenly sized balls.
  • Flatten the balls into patties.
  • Heat the olive oil in a large saute pan over medium-high heat.
  • Add the ground beef patties to the heated pan.
  • Cook until the bottoms of the patties are browned. About 3 minutes.
  • Flip the patties and continue cooking until the other side is browned. About 3 minutes.
  • Remove the pan from the heat.
  • Spray the inside of the crock pot with cooking spray.
  • Pour the diced onions into the bottom of the crock pot.
  • Place the browned ground beef patties in a single layer on top of the diced onions. The patties may have to overlap slightly.
  • Dump the cream of mushroom soup into a large mixing bowl.
  • Add the brown gravy mix and beef broth to the bowl.
  • Whisk all of the ingredients together well.
  • Pour the mixture over the ground beef patties in the crock pot.
  • Place the lid on the crock pot and set it to cook on LOW.

1/4 cup flour
1 small red onions, thinly sliced or 8 green onions, white part only, thinly sliced
1/4 cup condensed beef broth, undiluted
1/4 cup dark beer or 1/4 cup beef broth
1 tablespoon olive oil
3 portabella mushrooms (may add more)
2 tablespoons balsamic vinegar or 2 tablespoons red wine vinegar
soft fresh goat cheese, crumbled (optional)

Steps:

  • Season the meat with salt and pepper and rub each side with flour. Place in bottom of slow cooker. Lay onions over top and pour in beef broth and port.
  • Brush mushrooms with olive oil and lay evenly over meat. Sprinkle with vinegar. Cover and cook on low for 8-10 hours or on high for 4-5 hours.
  • When ready to serve, transfer steak with mushrooms to a deep platter. Stir in goat cheese, if using and pour gravy over meat.
