ZUCCHINI BREAD
Steps:
- Preheat the oven to 325 degrees F. Grease two 5-by-9-inch loaf pans with cooking spray.
- In a mixing bowl, sift together the flour, baking soda, baking powder, cinnamon and salt. Mix the sugar, oil and beaten eggs in a separate bowl and add to the flour mixture. Stir in the grated zucchini, coconut, nuts and cherries.
- Pour the batter into the loaf pans and bake until a toothpick inserted into the center of the loaf comes out clean, about 1 hour. Cool for 10 minutes before removing the loaves from the pans. Turn the breads out onto wire racks to cool completely.

- Preheat oven to 300 degrees F (150 degrees C). Grease and flour two 9x5 inch loaf pans. Whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and pepper in a bowl until evenly combined; set aside.
- Beat the eggs, vanilla, sugar, and vegetable oil in a mixing bowl until smooth. Fold in the flour, dates, and zucchini until no dry spots remain. Divide the batter between the two prepared loaf pans.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 70 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

My grandmother always made this bread for the holidays, and it was always gone in a hurry. It's simple, and smells great as it bakes. She served warm, sliced it, and spread cream cheese on the slices. Yummy!

Steps:
- Preheat the oven to 350°F Grease a regular loaf pan.
- Combine the wet ingredients by hand in a medium bowl until well blended.
- In a separarate bowl, sift together the dry ingredients.
- Add the flour-mixture to the wet bowl.
- Stir just until everything is combined.
- You can let the dough sit overnight for the flavors to blend, or you can bake it immediately.
- Pour the batter into the prepared pan.
- Bake at 350 F for 1 hour, or until a toothpick inserted in the center comes out clean.
- Serve the loaf while it is warm with the cream cheese for rave reviews.
- Note: You can also add 1/2 cup of chopped nuts if you so desire; I recommend toasted walnuts or pecans for the best flavor.
