1 3/4 pounds oranges, 4 to 5 medium
1 lemon, zest finely grated and juiced
6 cups water
3 pounds plus 12 ounces sugar

Steps:

  • Wash the oranges and lemon thoroughly. Cut the oranges into 1/8-inch slices using a mandoline, removing the seeds as you go. Stack the orange slices and cut them into quarters. Place the oranges into an 8-quart stainless steel pot. Add the lemon zest and juice and the water to the pot, set over high heat and bring to a boil, approximately 10 minutes. Once boiling, reduce the heat to maintain a rapid simmer and cook, stirring frequently, for 40 minutes or until the fruit is very soft.
  • While the fruit is cooking, fill a large pot (at least 12-quart) 3/4 full with water, set over high heat and bring to a boil. Place 10 (8-ounce) jars and rings, canning funnel, ladle, and tongs into the boiling water and make sure the water covers the jars by at least an inch. Boil for 10 minutes. Turn off the heat, add the lids and leave everything in the pot until the marmalade is ready.
  • Meanwhile, place a small plate in the freezer. Increase the heat under the orange mixture to return to full boil. Add the sugar and stir the mixture continually, until it reaches 222 to 223 degrees F on a deep-fry or candy thermometer, and darkens in color, approximately 15 to 20 minutes. You may need to adjust the heat in order to prevent boil over. Test the readiness of the marmalade by placing a teaspoon of the mixture onto the chilled plate and allowing it to sit for 30 seconds. Tilt the plate. The mixture should be a soft gel that moves slightly. If mixture is thin and runs easily, it is not ready.
  • Remove jars from the water and drain on a clean towel. Place a canning funnel onto the top of 1 of the jars and ladle in the marmalade just to below the bottom of the threads of the jar. Repeat until all of the mixture has been used. The amount of marmalade may vary by 1 to 2 jars. Wipe the rims and threads of the jars with a moist paper towel and top each with a lid. Place a ring on each jar and tighten.
  • Return the jars to the pot with boiling water, being certain that they don't touch the bottom of the pot or each other. (If you don't have a jar rack, try a round cake rack, or metal mesh basket. Even a folded kitchen towel on the pot bottom will do in a pinch.) Add additional water if necessary to cover the jars by at least an inch. Boil for 10 minutes. Using canning tongs, carefully remove the jars from the water, place in a cool dry place and allow to sit at room temperature for at least 24 hours before opening. Once open, store in the refrigerator. Unopened marmalade will last for up to 6 months.

2 sticks (1 cup) salted butter, cut into small cubes, plus more for buttering the pan
2 cups all-purpose flour
1/2 cup granulated sugar
1/4 teaspoon kosher salt
3/4 cup granulated sugar
1/4 cup all-purpose flour
4 large eggs
Zest and juice of 4 oranges (making about 1 cup of juice)
Powdered sugar, for sifting

Steps:

  • For the crust: Preheat the oven to 350 degrees F. Grease a 9-by-13-inch pan with butter.
  • Stir together the flour, granulated sugar and salt in a bowl. Add the butter to the bowl and use a pastry cutter to cut it all together until the mixture resembles fine crumbs. Press into the prepared pan and bake until golden around the edges, about 20 minutes.
  • For the filling: Stir together the granulated sugar and flour in a bowl. Crack in the eggs and whisk to combine. Add the orange zest and juice and mix until combined. Pour over the crust and bake until the filling is set, about 20 minutes.
  • Allow to cool in the fridge for a minimum of 2 hours, then sift powdered sugar over the top before cutting into 16 pieces.

200g self-raising flour
1 tsp mixed spice
100g golden caster sugar
zest 1 orange
zest ½ lemon
100g mixed dried fruit
140g butter
5 tbsp marmalade
125ml milk
1 tsp white wine vinegar
2 tbsp icing sugar
1 tbsp demerara sugar

Steps:

  • Heat oven to 160C/140C fan/gas 3. Line a 900g/ 2lb loaf tin with greaseproof paper. Place the flour, mixed spice, caster sugar, zests, dried fruit and a pinch of salt into a large bowl.
  • Melt the butter and 2 tbsp marmalade in a saucepan, then stir in the milk. Pour liquid into the dry ingredients, add the white wine vinegar and mix well.
  • Pour the cake mixture into the lined loaf tin and bake for 1 hr, or until an inserted skewer comes out clean.
  • Meanwhile, make the glaze by heating the remaining marmalade with 2 tbsp water and the icing sugar until bubbling and syrupy. When the cake is cooked remove it from the oven, pour over the marmalade glaze, then sprinkle with demerara sugar. Leave to coolin the tin.

4 cups rolled oats
4 cups crisp rice cereal
1 cup craisins
3/4 cup orange marmalade
1/2 cup raisins
1/2 cup brown sugar, packed
1/2 cup sunflower seeds
1/2 cup almonds, sliced
1/4 cup honey
1/4 cup wheat germ
2 tablespoons sesame seeds
2 teaspoons cinnamon
1/2 teaspoon baking soda
2 egg whites
1/2 cup sugar

Steps:

  • Line a 12" x 17" pan with parchment paper. Preheat oven to 350 degrees.
  • In a large mixing bowl, combine all ingredients except egg whites and white sugar.
  • In a separate bowl, beat egg whites while slowly adding sugar until foamy white. Combine egg white mixture with other ingredients and stir until thoroughly mixed.
  • Pour granola batter onto pan and spread evenly.
  • Place in oven for 20-25 minutes or until browned. After baking, allow to cool for at least 45 minutes before cutting. Cut into 20 rectangular bars.

1 cup all-purpose flour
2 tablespoons all-purpose flour
1/2 cup sugar
1/8 teaspoon salt
1/4 cup chilled butter or 1/4 cup margarine, cut into small pieces
1 (1 1/2 ounce) english toffee-flavored candy bars, chopped (such as Skor)
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 cup plain fat-free yogurt
1 tablespoon nonfat milk
1 teaspoon grated orange rind
1 teaspoon vanilla extract
2 large egg whites
cooking spray
1/4 cup orange marmalade

Steps:

  • Preheat oven to 350°.
  • Lightly spoon flour into dry measuring cups, and level with a knife. Combine flour, sugar, and salt in a bowl; cut in butter with a pastry blender or 2 knives until mixture resembles coarse meal. Combine 1/3 cup flour mixture and candy bar for topping; set aside.
  • Stir baking powder and baking soda into remaining flour mixture in bowl; add yogurt, milk, rind, vanilla, and egg whites. Beat at medium speed of a mixer until blended.
  • Spoon batter into an 8-inch round cake pan coated with cooking spray. Drop marmalade by teaspoonfuls onto batter; swirl together using the tip of a knife. Sprinkle topping over batter.
  • Bake at 350° for 35 minutes or until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack.
