PULLED PORK IN A CROCK POT

Pulled Pork in a Crock Pot image

This simple pulled pork recipe for your slow cooker doesn't include any highly processed ingredients like refined brown sugar, corn syrup, or ketchup. Make this for your next outdoor bbq or cookout!

Provided by Lisa Leake

Categories     Dinner

Time 7h5m

Number Of Ingredients 11

3 tablespoons paprika
1 tablespoon kosher salt
2 teaspoons pepper
1/2 teaspoon cayenne pepper
1 teaspoon garlic powder
½ teaspoon thyme (dried)
½ cup honey
¼ cup red wine vinegar
3 tablespoons olive oil
1 onion (peeled and cut in half)
3-5 pounds pork shoulder (cut in half)

Steps:

  • In a medium size mixing bowl, mix together the first six ingredients (all of the spices) with a fork.
  • Pour in the honey, vinegar, and olive oil and stir to form a paste.
  • Place the onion in the bottom of the slow cooker. Top it with the 2 pieces of pork and then pour the honey paste over all sides of the pork pieces. It's okay if some of it (or a lot of it) just drips down to the bottom.
  • Turn the slow cooker on to low and cook for 7 to 8 hours or until the meat is tender enough to be easily shredded with a fork.
  • Serve the shredded pork warm with fixings like homemade coleslaw and cornbread. My husband also likes his dipped in a little hot sauce. Refrigerate or freeze the leftovers.

2 kg / 4 lb pork shoulder (pork butt) (, skinless, boneless (5lb/2.5kg bone in) (Note 1))
2 1/2 tsp salt
1 tsp black pepper
1 onion (, chopped)
1 jalapeno (, deseeded, chopped)

Steps:

  • Rinse and dry the pork shoulder, rub all over with salt and pepper.

  • Place the pork in a slow cooker (fat cap up), top with the onion, jalapeño, minced garlic (don't worry about spreading it) and squeeze over the juice of the oranges.
  • Slow Cook on low for 10 hours or on high for 7 hours. (Note 2 for other cook methods)
  • Pork should be tender enough to shred. Remove from slow cooker and let cool slightly. Then shred using two forks.

CROCK POT PULLED PORK

Crock Pot Pulled Pork image

This may be one of the best Crock Pot pulled pork recipes we've had. It's a little bit of the process if you do the brine, but worth the extra step. Cooking the pork shoulder in the Crock Pot makes it extremely tender. The meat is sweet, a bit smoky, and has a little kick to it. You can serve this in its own juices - no BBQ sauce...

  • Trim off any large pieces of fat from the surface of the pork. Sprinkle the salt, sugar, and pepper evenly over all sides of the pork, then pat the seasonings into the meat. If not cooking immediately, place in a large bowl, cover with plastic wrap, and refrigerate overnight.
  • When ready to cook, place the pork shoulder (and any accumulated juices if seasoned overnight) in a 6-quart or larger slow cooker. Pour the water, around, but not on top of, the pork. Scatter the garlic and onion around the pork.
  • Cover and cook on the LOW setting until the meat is tender and can be easily shredded, 10 to 12 hours. Transfer the pork to a clean cutting board or rimmed baking sheet. When it is cool enough to handle, use 2 forks or your fingers to shred the meat into bite-sized pieces. Discard the bone (if present) and any large pieces of fat.
  • Pour the cooking liquid through a fine-mesh strainer into a measuring cup or bowl and discard the solids. Skim the fat from the surface of the cooking liquid. Reserve the cooking liquid to keep leftovers moist. Transfer to a serving bowl if serving as-is. If serving as tacos or barbecue sandwiches, transfer back to the slow cooker for seasoning.

  • Remove as much fat as possible from the pork roast and pierce it all over with a small, pointy knife. Place the pork in the bottom of a large slow cooker. In a small bowl, mix together the garlic, lime juice, chipotle chile powder, cumin, Mexican oregano, salt, and pepper. Pour the mixture over the pork roast and rub it into the meat, turning evenly to coat. Cover and cook on LOW for 8 to 10 hours (or HIGH for 4 to 6 hours) until the pork is extremely tender.
  • Transfer the pork to a cutting board. Remove and discard the fat and use two forks to pull the pork into chunks. Use a large spoon to skim the fat from the surface of the liquids in the slow cooker. Turn the slow cooker to HIGH and stir in the honey. In a small bowl, stir the cornstarch into the water until dissolved, and then whisk this cornstarch slurry into the liquids in the slow cooker. Add the pulled pork back to the slow cooker and stir to combine, then taste and adjust the seasonings, adding more salt, pepper, and/or chipotle chile powder as desired. Cover and cook on HIGH for 30 minutes, which will mellow the flavor of the honey and allow the pork to absorb the sauce.
  • To serve, pile pulled pork onto warm flour tortillas and top with red cabbage, carrots, avocado, cotija cheese, cilantro, and a squeeze of lime.
