PIZZA SAUCE
Our rich tomato pizza sauce is achieved by cooking it over a low heat until thickened and glossy. It's easy to make and is perfect for pizza night.

Steps:
- Heat the oil in a saucepan over a low heat, then add the onion along with a generous pinch of salt. Fry gently for 12-15 mins or until the onion has softened and is turning translucent. Add the garlic and fry for a further min. Tip in the tomatoes and purée along with the bay, oregano and sugar. Bring to the boil and lower the heat. Simmer, uncovered, for 30-35 mins or until thickened and reduced. Season. For a really smooth sauce, blitz with a stick blender, otherwise leave as is.
- Stir the basil into the sauce. The sauce will cover 4-6 large pizza bases. Keeps well in the fridge for 1 week or stored in a container in the freezer.

WHITE CLAM PIZZA
This recipe is from the April 2008 edition of Everyday with Rachael Ray. This is a nice change from the traditional red sauce pizza and also incorporates seafood...yum.

Steps:
- Position a rack in the bottom of the oven and place an inverted baking sheet on top.
- preheat oven to 500 degrees Fahrenheit.
- IN a small bowl, combine the olive oil, garlic and 2 pinches salt.
- Lightly flour a baking sheet, place one piece of pizza dough on top and stretch to fit the dimensions of the baking sheet.
- Drizzle 2 1/2 tablespoons garlic oil on top.
- Sprinkle half of the clams on top and season with 2 teaspoons Parmesan, 1 1/2 teaspoons thyme and salt and pepper.
- Set the baking sheet on the hot baking sheet in the oven.
- Bake until crisp and golden, about 20 minutes.
- Repeat with the remaining ingredients to make another pizza.

HOMEMADE PIZZA SAUCE
For years, I had trouble finding a pizza sauce recipe my family liked, so I started making my own. The evening I served it to company and they asked for my recipe, I knew I'd finally got it right! - In a large saucepan over medium heat, combine tomato sauce and paste. Add remaining ingredients; mix well. Bring to a boil, stirring constantly. Reduce heat; cover and simmer for 1 hour, stirring occasionally. Cool. , Pour into jars or freezer containers, leaving 1/2-in. headspace. Freeze up to 12 months. Thaw frozen sauce in refrigerator before serving.

I am not a big fan of red sauce and I usually enjoy white pizza over pizza with red sauce.... until this recipe. I was actually tasting it off the spoon and enjoying it! This recipe makes enough for 2 store bought pizza crusts. Hope you like it too! Buon appetito!

EASY RED AND WHITE PIZZA SAUCE WITH A KICK
There was a little pizza place in a town I used to live in that offered red sauce, white sauce or a combo. The combo was excellent. This is my version. The color ends up like the color of thousand island dressing but don't let that scare you, try it, it's yummy and different. Adjust amounts based on the size of pizza you will be making. GRILLED CHICKEN PIZZA WITH ALABAMA WHITE SAUCE

Steps:
- Mix together all the ingredients for the sauce until well combined; set aside.
- Preheat grill to 400 degrees F.
- Brush olive oil on both sides of the pizza crust. Place the crust top side down on the grill and grill for 2-3 minutes. The crust should just start to brown. Carefully remove from grill and flip over.
- Spread the sauce on the cooked side of the crust and top with chicken, tomatoes and then cheese.
- Place back on the grill and grill for 2-3 minutes. Move pizza to indirect heat and finish grilling another 4-5 minutes or until the cheese has melted and is nice and bubbly. Carefully remove from grill and allow to cool. Add chopped basil, slice and serve. Enjoy!
