2 cloves garlic, finely chopped
1 pound boneless, skinless chicken thighs (5 thighs), cut into 3/4-inch pieces
1 medium fennel bulb, chopped
1 can (19 ounces) cannellini beans, rinsed and drained
1/2 teaspoon salt
1/4 teaspoon pepper
1 can (14 ounces) chicken broth
2 cups water
1 package (9 ounces) refrigerated cheese-filled tortellini
1 cup firmly packed fresh baby spinach leaves
2 medium green onions, sliced (2 tablespoons)
1 teaspoon dried basil leaves
2 tablespoons shredded fresh Parmesan cheese

Steps:

  • Layer carrots, garlic, chicken, fennel and beans in 3 1/2- to 4-quart slow cooker. Sprinkle with salt and pepper. Pour broth and water over ingredients.
  • Cover and cook on low heat setting 6 to 8 hours or until chicken is no longer pink in center.
  • About 20 minutes before serving, stir tortellini, spinach, onions and basil into chicken mixture. Cover and cook on high heat setting 15 to 20 minutes or until tortellini are tender. Sprinkle individual servings with Parmesan cheese.

2 to 2 1/2 lbs. boneless chicken breasts
15 oz jar of creamy Alfredo sauce (I used Bertolli's Creamy Basil Alfredo Sauce)
19 oz package of frozen cheese tortellini
1 cup shredded mozzarella cheese

Steps:

  • Place the chicken breasts into a crock pot in a single layer . I used my favorite Crock Pot Casserole Slow Cooker.
  • Pour half the jar of Alfredo sauce over the chicken breasts.
  • Cover the crock pot and cook on low for 4-5 hours or high for 3-4 hours. Cooking time will depend on the thickness of the chicken pieces. Occasionally check for done-ness.
  • When the chicken is cooked through use two forks to shred the chicken pieces.
  • Cook the tortellini following the directions on the package. I followed the microwave cooking directions and the tortellini was cooked perfectly in just 5 minutes.
  • Add the cooked tortellini, the remaining Alfredo sauce and shredded cheese to the crock pot.
  • Mix well and recover the crock pot. Allow the cheese to melt and the tortellini and Alfredo sauce to come to the same temperature.
  • Serve with a bit of fresh grated Parmesan cheese if desired.
  • Makes 4-6 servings.

1 tablespoon olive oil
2 pounds boneless skinless chicken thighs (cut into 1 1/2 inch pieces)
salt and pepper to taste
1 onion (diced)
3 carrots (halved and sliced into 3/4 inch chunks)
1/2 cup celery (sliced)
2 teaspoons minced garlic
1/4 cup butter
1/4 cup flour
5 cups chicken broth
3/4 pound small yellow potatoes (halved or quartered)
1 teaspoon dried Italian seasoning
3 sprigs fresh thyme
1 bay leaf
1/2 cup frozen peas
1/2 cup frozen cut green beans
2 tablespoons chopped parsley

Steps:

  • Heat the olive oil in a large pot over medium high heat. Season the chicken generously with salt and pepper.
  • Cook the chicken in a single layer for 4-5 minutes on each side or until golden brown. You may need to cook in batches.
  • Remove the chicken from the pot; cover to keep warm.
  • Add the onions, carrots and celery to the pot. Cook for 4-5 minutes or until vegetables are softened.
  • Add the garlic to the pot; cook for 30 seconds. Remove the vegetables from the pot.
  • Melt the butter in the pot. Add the flour and whisk until combined. Cook for 1 minute.
  • Slowly pour the broth into the pot, whisking constantly.
  • Add the chicken and vegetables to the pot of broth along with the potatoes, Italian seasoning, thyme sprigs and bay leaf. Season the stew with salt and pepper to taste.

1 teaspoon dried basil

red pepper flakes, to spice it up

Steps:

  • Next sprinkle half the basil, oregano, sugar, parsley, salt and pepper on the veggies.
  • Dot with half of the tomato paste.
  • Repeat layering process with remaining vegetables, spices and tomato paste.
  • Drizzle with olive oil.

2 medium to large pieces of boneless chicken. I used about 2 pounds boneless white meat.
4 to 6 medium red potatoes (peeled, rinsed, and cubed. Keep in cold water to prevent browning until ready to use.)
14.5 oz can diced tomatoes in sauce
4 medium carrots (1/2 cups sliced carrots)
1 cup sliced celery
1 medium onion diced
2 tablespoons minced garlic
1 teaspoon ground black pepper
1 teaspoon table salt or Himalayan pink salt (I used the pink)
1 teaspoon dried parsley flakes
1 teaspoon dried thyme
1 large dried bay leaf
4 cups chicken broth
2 cups finely shredded Parmesan cheese
3 tablespoons corn starch mixed with 3 tablespoons cool water

Steps:

  • Place the boneless chicken into an 8-quart crock pot.
  • Add the cubed potatoes, diced tomatoes, sliced carrots, sliced celery, diced onion, and minced garlic to the crock pot.
  • Next, add the spices. You can use fresh parsley and thyme instead of dried parsley and thyme if you have it. Add the ground pepper and salt to the slow cooker. Add a dried bay leaf to the crock pot.
  • Fill the crock pot with the chicken broth. Place the lid on the crock pot and cook for 4 hours on high. Or 6 to 8 hours on low or until the chicken meat is cooked through and the potatoes are tender.
  • Once the meat and the potatoes have finished cooking (after about 4 hours depending on how large the chicken pieces are). Remove the chicken from the slow cooker and shred with two forks.
  • Return the shredded chicken meat to the slow cooker. Add the shredded parmesan cheese and the corn starch and water to the slow cooker. Stir to combine.
  • Recover the slow cooker and continue to cook until the cheese has melted and the stew has thickened about 15 minutes.
  • Serve the chicken stew with a crusty loaf of bread or crackers.
  • Makes 6 to 8 servings.
