TORTELLINI WITH TOMATO SPINACH CREAM SAUCE

Steps:
- In a large skillet, heat oil over medium-high heat. Add onion; cook and stir until tender, 2-3 minutes. Add garlic; cook 1 minute longer. Add tomatoes, spinach and seasonings. Cook and stir over medium heat until liquid is absorbed, about 3 minutes., Stir in cream; bring to a boil. Reduce heat; simmer, uncovered, until thickened, about 10 minutes. Meanwhile, cook tortellini according to package directions; drain. Stir into sauce. Sprinkle with cheese.

- Melt the butter in a large saucepan over medium heat. Add the garlic and cook for one minute.
- Whisk in the flour. Gradually add the half and half, whisking constantly.
- Bring the sauce to a gentle boil, then reduce heat to low.
- Slowly sprinkle in the cheeses, continuing to whisk. It will continue to thicken as it simmers.
- Bring a pot of water to a boil and add the broccoli. Cook for 2 minutes.
- Add the tortellini and cook for 4 minutes. (Confirm cooking time on package.)
- Drain the tortellini and broccoli and add to the Alfredo sauce, stir to combine.
- Garnish with parsley and serve!

- Drop the spinach tortellini into the boiling water and cook pasta for 2 minutes less than the package directions.
- While the tortellini boils, start on the creamy sauce. Over medium heat, melt the butter in a large skillet. Stir in the garlic red pepper flakes, and cook until fragrant., about 1 minute.
- Whisk in the flour and keep stirring until it's absorbed and becomes pasty and smells nutty.
- Slowly whisk in the cream until it is smooth. Add 1/2 cup chicken broth and whisk until combined.
- Add the salt and Parmesan cheese. Allow it to simmer until thickened. About 2-3 minutes. If it seems too thick add another 1/4 cup chicken broth to the tortellini sauce.
- Stir in the spinach and sun-dried tomatoes. Transfer the drained tortellini to the skillet and gently stir to coat the pasta with the sauce. Serve immediately.
- Top with fresh basil if desired.

- Bring a large pot of water to a boil. Add the tortellini, and cook until tender, about 10 minutes.

This is my family's favorite dish that I make. And it is sooo easy! It is enough for 6 adults. Or 2 adults and 2 kids, with more than enough to have for dinner the next night, and then lunch for 2 kids the next day. It's also good if you leave out the chicken.

- Thaw spinach completely in a colander lined with a few paper towels.
- This may take a few hours.
- Squeeze spinach completely dry.
- Set aside.
- Cut up chicken into bite size pieces.
- Brown in a skillet.
- Keep warm.
- Cook penne according to package.
- Meanwhile, in a medium sauce pan, add both jars of sauce, tomato and spinach.
- Bring to a simmer on low heat, stirring occasionally.
- Continue simmering for 10 minutes or so.
- When pasta is done, drain and place in a large serving bowl.
- Add chicken and stir.
- Add Alfredo mixture and stir again.
- Serve right away with garlic bread.
