AUTHENTIC RUSSIAN SALAD 'OLIVYE'

Authentic Russian Salad 'Olivye' image

This is a recipe my mom and grandmother use every time there's a family gathering or a special occasion. To make this a vegetarian dish just leave out the ham. Potatoes, carrots, and eggs do not have to be chilled completely after boiling. Dill can be substituted for parsley if desired.

RUSSIAN POTATO SALAD (SALAT OLIVIER)

Russian Potato Salad (Salat Olivier) image

This very flexible salad is great with meats, on picnics, with all sorts of things. It is fine in the fridge for a few days. Vary the ingredients and seasonings to taste (and convenience). The finer the chopping, the more "gourmet" it is to Russians. The technique here is easy; it just takes a lot of chopping, so give yourself enough time.

RUSSIAN POTATO SALAD OLIVIER (FROM SOUTH RUSSIA)

Russian Potato Salad Olivier (From South Russia) image

There are so many versions of this salad. This is one of the simplest Russian salads. I do not think I know anybody who didn't like this salad after they tried it. I believe every Russian lady knows how to cook this one in her own way. Here is my version of this traditional Russian salad.

Provided by Yaneya

Categories     Potato

Time 1h

Yield 4-10 serving(s)

Number Of Ingredients 10

4 medium idaho potatoes
5 hard-boiled eggs
1 medium pickle
1/2 English cucumber
16 ounces canned peas, drained
1 green apple
1 (16 ounce) package bologna (I prefer chicken bologna)
1/2 cup mayonnaise (more or less depending on your taste)
1/4 teaspoon salt (optional)
1/4 teaspoon pepper (optional)

Steps:

  • Boil potatoes and eggs, let cool.
  • Shred potatoes and eggs using hand grinder or cut into 1/4-inch dice.
  • Dice bologna, cucumbers and/or pickles as well as apple. (pill apple beforehand).
  • Drain the can of peas.
  • Combine all ingredients in a large bowl and mix well adding salt, pepper and mayonnaise as needed.
  • Move well mixed salad into a large serving bowl.
  • Note: if you prefer creamier salad, shred your ingredients, if you prefer to taste each ingredient in your salad cut them. I prefer shredding, I think it tastes better and takes less time to prepare. You can also add shredded fresh or cooked carrots, as well as diced of azalea onion. I usually cook my potatoes and eggs a day before and let them stand in refrigerator. Also, if you short on time, you can make this salad a day before, but do not put mayonnaise until ready to serve.

RUSSIAN POTATO SALAD

Russian Potato Salad image

This salad was first served in Moscow in the 1860s, by Chef Lucien Olivier, and the recipe was a closely guarded secret. It is also called "Salade Olivier", "Russian Salad" or "Sour Russian Potato Salad". This classic dish has many variations. Here's mine. I use the pickles found in recipe #408712, but dill pickles will do. The garnish includes the tomatoes found in the same recipe, but fresh will do just as well.

SALAD OLIVIER - RUSSIAN POTATO SALAD

Salad Olivier - Russian Potato Salad image

One of the most traditional Russian salads, it was originally created by the French Chef, M. Olivier, but claimed by the Russians as one of their dishes. It is certainly become a big part of the Russian life and everyone knows how delicious this salad can be. Ironically, there are many different recipes. You can choose to add meat to it or serve it meatless. This recipe uses boiled chicken but some people use bologna as well. This salad is delicious when served fresh but even better when it has been refrigerated for a few hours or even overnight.
