Steps:
- Preheat the oven to 180°C (350°F). Grease the sides of a 20-cm (8-inch) round cake pan with a bit of the butter, and line the bottom with parchment paper.
- Place the pears in a single layer at the bottom of the pan.
- In a medium mixing-bowl, beat the sugar and the eggs until the mixture pales slightly.
- In another bowl, combine the flour, salt, and baking powder. Add to the wet ingredients and blend well, but without overmixing. Pour in the butter, and blend again.
- Pour the batter evenly over the fruit, and bake for 40 minutes, until golden.
- Let the cake settle on a cooling rack for 10 minutes. Run a knife all around to loosen, and flip onto a serving plate.
- Let cool and serve, slightly warm or at room temperature.

- Preheat oven to 350°. Coat a 13x9-in. baking pan with cooking spray., In a large bowl, beat sugar, eggs, applesauce, oil and vanilla until well blended. - Preheat oven to 300°. Line bottom of a 10-in. springform pan or a 13x9-in. baking pan with parchment; grease parchment. In a bowl, whisk together flour and next 5 ingredients. In a large bowl, beat oil, sugar and eggs until pale and slightly thick, about 2 minutes. Beat in vanilla and lemon juice. Add dry ingredients; stir just until moistened. - Preheat oven to 350 degrees F (175 degrees C). Grease and flour a fluted tube pan (such as Bundt®).
- Sift flour, baking soda, cinnamon, and salt together in a bowl. Set aside.
- Mix sugar, egg, and oil together in another bowl. Stir in the flour mixture just until combined; fold in apple, walnuts, and raisins.

GRANDMA'S STYLE APPLE CAKE WITH VANILLA SAUCE

- Peel the apples and cut into thin slices. Toss slices in a bowl with 1 tablespoon of cinnamon and 1 tablespoon of sugar. Melt butter. Brush mold with butter. Cool the remaining butter to room temperature and add 1/2 cup of sugar and brown sugar. Whisk butter and sugars until fluffy. Add egg with milk and whisk. Stir in flour, baking powder and remaining 1 teaspoon cinnamon. Pour into the mold. Put the sliced apples on top and bake in a preheated 350-degree oven for 40 minutes.;
- Scrape the vanilla bean into scalded milk. Whisk yolks and sugar. Add a little hot milk to the yolk and sugar mixture. Pour back into the hot milk. Stir continuously with a wooden spoon over a low heat until it starts to thicken. Make sure it does not boil. Strain and let cool down.

- Preheat the oven to 350°F Melt the butter in a small saucepan or in a non-metallic bowl set in the microwave. Grease a nonstick 8-inch round cake pan (not springform) with 1 tablespoon of the butter using a pastry brush or paper towel.
- Combine the flour, baking powder, and salt in a small mixing bowl. Wash, peel, and core the apples. Cut them in eighths and arrange over the bottom of the pan.
- In a medium mixing bowl, whisk the sugar with the eggs until fluffy. Add the flour mixture and whisk until combined. Add the melted butter and whisk again until blended. Pour the batter evenly over the fruit and bake for 40 minutes, until the top is set and golden brown.
- Let the cake settle on a cooling rack for 10 minutes. Run a knife around the pan to loosen and flip the cake onto a plate; if any piece of fruit has stuck to the bottom of the pan, scrape it off carefully and place it back on the cake where it belongs. Flip the cake again onto a serving plate - work cautiously so as not to squish the cake between the two plates. Let cool and serve slightly warm or at room temperature.

- Mix the sugar, juice, eggs, oil and vanilla together in a mixer at medium speed for about 10 minutes, until smooth.
- Sift the flour, baking powder and salt together, and slowly add to the wet mixture, scraping down the sides of the bowl to mix thoroughly.
- Mix the apples, sugar and cinnamon in a separate bowl.
- Spray a bundt pan with non-stick spray.
- Pour half of the batter in the bundt pan, then top with half of the apple mixture.
- Alternate layers again to finish the batter, then the apples.
- Bake at 350 degrees F for about 70 minutes, or until done.
- Cool cake partially in pan, then invert cake onto a cooling rack to finish cooling.
- This also makes great muffins, but cut the baking time down to about 45-50 minutes for muffins.

- Preheat the oven to 350°F.
- Generously grease an 8-inch round cake pan (no need to grease if pan is nonstick).
- Melt the butter in a medium skillet over medium-high heat. Sauté the apples, tossing occasionally, until golden brown, 5 to 7 minutes. Stir in the Calvados, 1 tablespoon of the sugar, and the cinnamon. Set aside until needed.
- Whisk together the yogurt and the remaining sugar in a large bowl, until very smooth, about 2 minutes. Combine the flour and baking soda, then add the oil and eggs, whisking well after each addition. Stir the apple pieces into the batter.
- Pour the batter into the prepared pan, spreading it evenly. Set on a sturdy baking sheet and bake for 45 to 55 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool on a wire rack.
- Note: The cake is best made several hours before serving, or better yet, the night before.
GRANDMA'S FRESH APPLE CAKE
Moist cinnamon cake enfolding sliced fresh apples makes a delicious dessert or wholesome snack cake. This recipe came from my mother, Ann. I have cut the sugar down to 1 cup, as most modern apples are sweet enough to not need the original 2 cups called for. I like to replace 1 cup of all purpose flour with 1 cup whole wheat flour.

- Sprinkle sugar over apples in your largest mixing bowl. Sift dry ingredients together twice, then add to apples. Add remaining ingredients, and stir until well mixed. Batter will be very thick.
- Spread into a greased 9" X 13" cake pan or pyrex dish.
- Bake at 350 degrees F for 30 to 45 minutes, until cake springs bakc when touched lightly, and apples are tender when pierced with a skewer.
- Cool and serve. Cover leftovers tightly with foil to retain moisture.
GRANDMA'S APPLE CAKE
This was a massive hit when i was growing up. My grandma would make this weekly and as visitors called she would have orders to make her guests a cake for the following week. She served it with custard, vanilla ice cream or fresh cream and all were equally delicious! This was a great cake to eat during the winter served hot with custard. I have now started to add a handful of flaked almonds, sprinkled on top of the cake (just before it goes in the oven) The addition of the flaked almonds, seems to be an even bigger hit! Enjoy!
