I created this Old World favorite from a dish I had during my travels. The flavorful entree is perfect for weeknights or special occasions. I like to serve this slow-cooker bratwurst with pasta. —Gerald Hetrick, Erie, Pennsylvania

4 pounds uncooked bratwurst links
3 bottles (12 ounces each) German-style beer or 4-1/2 cups reduced-sodium chicken broth
1 jar (32 ounces) sauerkraut, rinsed and well drained
4 medium Granny Smith apples (about 1-1/4 pounds), cut into wedges
1 medium onion, halved and thinly sliced
1-1/2 teaspoons caraway seeds
1/4 teaspoon pepper

Steps:

  • In batches, in a large nonstick skillet, brown bratwursts over medium-high heat. Transfer to a 7-qt. slow cooker. Add remaining ingredients., Cook, covered, on low 6-8 hours or until a thermometer inserted in sausage reads at least 160°.

6 cups German light ale
1 tablespoon caraway seeds
1 tablespoon coriander seeds
1 tablespoon mustard seeds
3 large onions, unpeeled, roughly chopped
2 whole cloves garlic, smashed
One 3-inch piece fresh ginger, peeled and chopped
3 pounds precooked bratwurst, pricked with a fork
2 tablespoons canola oil

Steps:

  • Preheat the grill for direct grilling, high heat.
  • Combine the beer, caraway, coriander, mustard seeds, onions, garlic and ginger in a large stockpot. Then, add the bratwurst. Place the pot on the grates of the grill and bring to a simmer. Simmer the sausages until half-cooked, about 5 minutes. Remove the pan from the grill and let the bratwurst sit in the liquid for 30 minutes. Transfer the brats to a platter or cutting board and strain the liquid into a bowl, discard the solids.
  • Brush the sausages with canola oil and grill until the casings are crisp and golden brown and the sausages are cooked through, 4 to 6 minutes per side. Keep warm until serving.

6 cups German light ale (about four 12-ounce beers)
1 tablespoon caraway seeds
1 tablespoon coriander seeds
1 tablespoon mustard seeds
3 large onions, unpeeled, roughly chopped

Steps:

Steps:

  • In 10-inch nonstick skillet, cook bratwurst over medium-high heat, turning frequently, just until outsides are brown. Place in 5- to 6-quart slow cooker.
  • Top with onion slices, garlic, butter, salt and pepper. Pour in beer.
  • Cover and cook on High heat setting 4 hours or Low heat setting 7 to 8 hours.
  • Serve with sauerkraut and mustard.

1 large onion, diced
10 bratwurst
2 teaspoons red pepper flakes
1 teaspoon garlic powder
1 teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Preheat an outdoor grill for medium-high heat. When hot, lightly oil grate.
  • Combine the beer and onions in a large pot; bring to a boil. Submerge the bratwurst in the beer; add the red pepper flakes, garlic powder, salt, and pepper. Reduce heat to medium and cook another 10 to 12 minutes. Remove the bratwurst from the beer mixture; reduce heat to low, and continue cooking the onions.

1 large sweet onion, sliced

1 tablespoon finely chopped onion
2 teaspoons sweet pickle relish
1 garlic clove, minced

  • In a large skillet, brown bratwurst in batches; drain. In a 5-qt. slow cooker, combine beer, sliced onion and sauerkraut; add bratwurst. 3 lbs uncooked sausages (, such as sweet or hot Italian sausages, bratwurst, or chorizo)
1 onion, thinly sliced
3 cups beer, as needed
1 tablespoon vegetable oil
mustard (for serving)

Steps:

  • Prick each sausage a half-dozen times with a needle or pin stuck in a cork.
  • Arrange the onion slices on the bottom of a saute pan just large enough to hold all the sausages.
  • Place the sausages on top and add beer and water to cover (the ratio should be 3 parts beer to 1 part water).
  • Place the pan over medium heat and gradually bring the liquid to a simmer, not a rapid boil.
  • Poach the sausages until half-cooked, 4 to 5 minutes.
  • Transfer the sausages to a rack on baking sheet to drain, or drain in a colander.
  • Separate the sausages into links.
  • Set up grill for direct grilling and preheat to medium-high.
  • When ready to cook, brush and oil the grill grate.
  • Lightly brush the sausages on all sides with oil and place on the hot grate.
  • Grill until the casings are crisp and nicely browned and the sausages are cooked through, 4 to 6 minutes per side.
  • You may want to rotate the sausages 90 degrees after 2 minutes on each side to create an attractive crosshatch of grill marks.
  • Should flare-ups arise, move the sausages to a different section of the grill.
  • Use a slender metal skewer to test for doneness.
  • Insert it into the center of one of the sausages: It should come out hot to the touch.
  • Transfer the sausages to plates or a platter and let rest for 3 minutes.
  • Serve with plenty of mustard.

2 1/2 lbs mettwurst or 2 1/2 lbs other suitable sausage
24 ounces bottled beer (German beer is good)
1 -2 large onion, coarsely chopped
2 tablespoons German mustard or 2 tablespoons yellow mustard
2 tablespoons prepared horseradish
10 -12 peppercorns (or a couple of grinds of black pepper)
1 whole dried hot red chili pepper (optional)
