EASY BREAKFAST CASSEROLE WITH SAUSAGE, HASHBROWNS, AND EGGS

Steps:
- Heat oven to 375.
- Add the sausage to a medium saute pan. Cook over medium-heat until browned, crumbling the sausage with a spoon as it cooks.
- Remove sausage with a slotted spoon and transfer to a large mixing bowl.
- Reserve about 1 tablespoon of sausage grease in the saute pan, discarding the rest.
- Add the onion and red pepper to the saute pan and saute for 5 minutes until cooked.
- Add the garlic and saute for an additional 2 minutes or until fragrant.
- Pour the vegetable mixture into the mixing bowl with the sausage. Add the hash browns and 1 1/2 cups cheese to the mixing bowl with the sausage and vegetables. Stir to combine.
- In a separate bowl, whisk together the eggs, milk, and black pepper until combined.
- Then add them to the hash brown mixture and stir to combine. Pour the mixture into a baking dish, and top with the remaining 1/2 cup of shredded cheese. Cover with aluminum foil and bake for 20 minutes.
- Then remove the aluminum foil and bake for an additional 10 to 15 minutes and the top of the potatoes begin to slightly brown. Remove and let the casserole rest for 5 minutes. Sprinkle with green onions and serve.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch dish with cooking spray.

I came up with this one day after trying out other recipes on my children that they rejected. I have one son who doesn't eat eggs, so it makes hit hard to make a breakfast casserole everyone will eat. I finally did it with this one!

Steps:
- Crumble and cook sausage in a large frying pan until no longer pink.
- (do not drain).
- Add 2 tablespoons flour and stir into sausage mixture, let it cook for one minute.
- Slowly add milk and bring to a boil.
- Let cook for 10 minutes until thickened to desired consistency.
- Add salt and pepper to taste.
- Meanwhile put both packages of thawed hashbrowns into a 9 x 13 glass dish.
- Add shredded cheese.
- Top with sausage gravy mixture.
- Cook at 350 degrees for 30 minutes.
- Garnish with green onions if desired.
- You can make this with a variety of cheeses.
- I find that using either sharp cheddar or pepper jack work the best.

- Preheat oven to 325 degrees F (165 degrees C). Grease an 8x11-inch baking dish.
- Cook and stir breakfast sausage in a skillet over medium heat until browned and crumbly, about 10 minutes; drain excess grease. Mix green onion into sausage and spread mixture over bottom of the prepared baking dish. Spread hash brown potatoes in a layer over sausage; top with Cheddar cheese.
- Whisk eggs, milk, and gravy mix together in a bowl until smooth; pour over casserole. Season with paprika.

- Cook sausages in large skillet over med-high heat -- stirring until crumbled and done. Drain well.
- Prepare hash browns according to pkg directions, using 1/tsp salt and pepper.*.
- Stir together hash browns, sausage, cheese, onions and chili peppers. Pour into lightly greased 13 x 9 inch baking dish.
- Whisk together eggs, milk and remaining 1 tsp salt*. Pour evenly over potato mixture.

This is my family's recipe that has been handed down through the years. We've always used the maple flavored pork sausage but any kind is good. This casserole is a nice and cozy breakfast or brunch meal that everyone will enjoy. It's got the perfect taste with lots of cheese. Yum! Be sure to use a baking dish that is deep enough to cover with aluminum foil.

- In a large skillet, cook the sausage over medium heat, crumbling it with a sturdy spatula, until no pink remains. Remove all but 3 Tablespoons of the grease from the pan. If the sausage doesn't render that must grease, add enough butter to make 3 Tablespoons.
- Add the flour to the pan and stir until dissolved into the sausage and grease. Slowly add the milk, stirring to combine. Cook, whisking often, until the gravy thickens. This will take 4-7 minutes, so just be patient. It will thicken! Once the gravy is thickened, remove from heat. Taste and season with salt and pepper to taste. You can store this gravy overnight in the fridge. The following day, reheat it in a sauce pan, whisking often (the grease may separate overnight). If needed, add an additional splash or two of milk to thin.
- In a large non stick skillet, heat the vegetable oil over medium high heat. Add the onions, peppers, and mushrooms, and cook until just starting to soften, about 2 minutes. Add the half bag of hash browns. Toss them with the vegetables, then press them into the bottom of the skillet with your spatula. Leave them to cook for 6-7 minutes or until golden. Flip in sections, then cook the other side for an additional 4 minutes. Sprinkle with salt and pepper.
