SPICY CHICKEN EMPANADAS



Spicy Chicken Empanadas image

2 1/2 kilograms (5.51 pounds) all-purpose flour
5 large eggs
2 ounces salt
1/2 cup milk
1 1/2 cups water
8 ounces (2 sticks) unsalted butter
10 pounds boneless skinless chicken breast
1 cup canola oil
5 1/2 pounds chopped onions
1 pound green bell peppers, chopped in food processor
1 pound red bell peppers, chopped in food processor
2 ounces salt
2 ounces freshly ground black pepper
1 ounce paprika
1 ounce garlic powder
1 ounce crushed red pepper flakes
1 ounce dried oregano
1 ounce basil
400 milliliters chipotle sauce
1 liter tomato
Large eggs, whisked with 1 tablespoon water per egg, for the egg wash

Steps:

  • For the empanada dough: Mix all empanada ingredients in a mixer. Let dough rest in the refrigerator for at least 3 hours.
  • For the filling: Bake the chicken breast until fully cooked. Put breast meat in a food processor and pulse until chopped (you don't want very small pieces). Heat a large skillet over medium-high heat. Add oil. Add onions, green and red bell peppers, salt, black pepper, paprika, garlic powder, red pepper, oregano and basil. Cook until onions are soft, about 10 minutes. Pour in chipotle sauce and stir. Finally add tomato sauce. Allow filling to cool.
  • To form the empanadas, knead the dough. Roll the dough out by hand or with a commercial sheeter. Cut out circles of dough. Place a dough circle in an empanada mold if you have one, but it's not necessary; fill with chicken mixture. Wet the edges of the dough with your fingers. Close the mold to seal, or fold dough over filling and use the tines of a fork to seal the edges. Repeat with remaining dough and filling. Use a pastry brush to paint empanadas with an even coat of egg wash.
  • Preheat a convection oven to 450 degrees F, or regular oven to 400 degrees F. Place empanadas on greased baking sheets. Bake for 3 minutes in convection oven or 10 to 15 minutes in regular oven.

A light, flaky killer crust envelopes these spicy pulled pork empanadas. The filling is a mixture of pork, vegetables, cheese, fresh herbs and Mexican chiles and spices. These flavorful stuffed pastry pies are served with a light sauce, salsa, sour cream and lime wedges.

3-1/4 cups all-purpose flour
3/4 teaspoon sea salt
1-1/2 cubes butter, (6 ounces) cut into small pieces
1 egg
1/2 cup ice-cold water
2 tablespoons vinegar
4 tablespoons butter
3 tablespoons flour
2 cups beef broth
1 teaspoon cumin powder
1/2 teaspoon garlic powder
Salt and pepper to taste
2 tablespoons olive or vegetable oil
1 medium onion, chopped
2 cloves garlic, finely chopped
1 (7-ounce) can diced green chiles, drained
3-4 canned chipotles, seeds and stem removed and chopped
1 teaspoons cumin
2 tablespoons finely chopped fresh oregano
1/2 teaspoon salt
3 cups shredded pork, about 1 pound
2-3 tablespoons beef sauce (from above)
4 ounces Pepper Jack cheese, cut into small cubes
1 egg
2 teaspoons water

Steps:

  • Add the flour, salt, and butter to a food processor and pulse to combine until crumbly and small pieces of butter are still visible. In a small dish, whisk the egg, water, and vinegar together and sprinkle over the flour mixture. Pulse the mixture until it begins to clump into a ball.
  • Turn the pastry onto a lightly dusted work surface and gently shape together. Divide in half and flatten into each section into a round disc. Wrap in plastic wrap and refrigerate for 2 hours.
  • Melt butter over medium-low heat, add flour, cook and stir for one minute to cook the flour. Whisk in the beef broth, cumin, and garlic powders. Continue to whisk for another 2-3 minutes until the sauce thickens. This will be a light sauce. Remove from heat, cover and reserve.
  • In a large skillet set over medium heat, add the oil and when it is hot add the onions, cook and stir for 2 minutes, add the garlic, drained green chilies, chopped chipotles, cumin, oregano and salt. Add the shredded pork and toss the mixture together with 2-3 tablespoons of the reserved beef sauce. Remove from the heat and allow to cool.
  • Preheat the oven to 400°F and line a baking sheet with parchment paper
  • Remove the pastry from the refrigerator. On a lightly floured work surface, roll out one portion to a thickness of 1/8-inch. Cut into 6-inch circles. We used a 6-inch bowl as a guide. Place the circles of pastry on a sheet of parchment as you cut them. Continue with the second pastry disc, then gather the pastry scraps and lightly press into a disc, roll and cut. You should have 8 completed circles of pastry.
  • In a small dish, prepare the egg wash by whisking the egg and water together.
  • Pre-heat the oven to 400°F.
  • Working with one pastry circle at a time, brush the edge with some of the egg wash. Pick it up in your hand as shown in the photo and add 3 or 4 tablespoons of the meat mixture inside (about 2 1/2 ounces). Add a few cubes of the cheese, then pinch the pastry closed around the edges. Lay the closed empanada on the work surface and lightly press the edges together with a fork. Place the filled empanada on the prepared baking sheet and proceed with filling the remaining pastry circles.
  • Brush the filled empanadas with egg wash and bake in the preheated oven for 20-25 minutes.
  • Reheat the beef sauce and serve with the empanadas

These bite-sized empenadas and pork are a delicious hors d'oeuvre that can be served with a salsa verde.

1 tablespoon black peppercorns
1 teaspoon dried oregano
1 teaspoon cumin seeds
1/2 teaspoon whole cloves
1 small cinnamon stick
2 cloves garlic, minced
1 5-pound pork butt
1 tablespoon vegetable oil
2 small onions, finely diced
Salsa Verde for Empanadas
2 teaspoons salt
1/4 teaspoon freshly ground black pepper
1/2 cup Homemade Chicken Stock, or canned low-sodium chicken broth, skimmed of fat
8 cups all-purpose flour
1 cup vegetable shortening
2 tablespoons baking powder
2 1/2 cups warm water (100° to 110°)
1/2 cup unsalted butter, melted

Steps:

  • Toast spices in small, heavy skillet over medium-high heat, shaking pan often, 2 to 3 minutes. Be careful not to scorch spices. Let cool, finely grind, and combine with garlic.
  • Heat oven to 425 degrees. Bring pork to room temperature; rub with spice mixture. Roast in a heavy roasting pan until pork is very well done and falling off the bone, about 2 1/2 hours. Let stand until cool enough to handle. Trim fat and remove pork from bone. Dice into small pieces, cover, and set aside.
  • Heat oil in large skillet over medium heat. Add onions; saute, stirring, until soft, about 5 minutes. Add pork, 2 cups salsa verde, 1 1/2 teaspoons salt, pepper, and stock. Simmer until liquid starts to thicken, 5 to 8 minutes.
  • Whisk together flour, shortening, remaining 1/2 teaspoon salt, and baking powder in bowl. Add 2 1/2 cups warm water; knead dough until smooth. Cover; let stand 10 minutes. Divide into 60 1 1/2-inch balls; cover with plastic.
  • Lightly flour work surface; roll out each dough ball to 3 1/2-inch disk. Place 1 heaping tablespoon pork filling in center of each; fold dough to enclose filling and form a half moon. Seal edges by crimping with fork.
  • Preheat oven to 425 degrees. Arrange empanadas on parchment-lined baking sheets; generously brush with butter. Bake 2 pans (meanwhile, refrigerate others) until light brown, 20 to 25 minutes; rotate pans between racks halfway through. Let cool slightly; bake remaining pans. Serve with remaining salsa verde.

INSTANT POT PORK EMPANADAS



Instant Pot Pork Empanadas image

This is one of my favorite ways to cook shredded or pulled pork. The fall-apart tender and juicy meat is great on its own, but it's also one of my favorite empanada fillings. The fresh acidity of guasacaca, a creamy avocado-based Venezuelan sauce, is the perfect complement.

1 tablespoon ground annatto, optional
1 tablespoon ground cumin
1 tablespoon garlic powder
1 tablespoon onion powder
3/4 teaspoon curry powder
3 to 5 chiles de arbol
10 cloves garlic, smashed
1/4 cup Abuela Chabe's Seasoning (see Cook's Note)
Kosher salt
2 1/2 pounds boneless pork shoulder, cut into 4 equal pieces
Two 14-ounce packages frozen empanada wrappers, thawed in the refrigerator (20 wrappers)
1 large egg, beaten
Nonstick cooking spray
1/2 cup white vinegar
3 cloves garlic
1 to 2 jalapeños, quartered and seeded, optional
1 avocado, seeded, peeled and cut into eighths
1 small bunch fresh cilantro, chopped (about 1 cup packed)
1/2 white onion, chopped
Pinch sugar, honey or agave
Kosher salt

Steps:

  • For Abuela Chabe's Seasoning: Stir together the annatto (if using), cumin, garlic powder, onion powder and curry powder in a small bowl (see Cook's Note).
  • For the empanadas: Put the chiles de arbol, garlic and 1 cup water in a 6- or 8-quart Instant Pot® multi-cooker and set to high saute (see Cook's Note). Stir 2 tablespoons salt into Abuela Chabe's Seasoning, then roll the pork into the mixture, packing it into all the crevices. Set the Instant Pot® trivet in the bottom of the multi-cooker and place the pork on top. Set to pressure cook on high for 1 hour. After the pressure cook cycle is complete, follow the manufacturer's guide for natural release and wait until the natural release cycle is complete, about 10 minutes. Be careful of any remaining steam and unlock and remove the lid.
  • Preheat the oven to 350 degrees F.
  • Transfer the pork to a cutting board and cut against the grain into 1/2-inch slices. Transfer the slices to a medium bowl. Remove the trivet from the Instant Pot® and transfer the garlic cloves to the bowl with the pork. Discard the chiles and set the liquid aside. Shred the pork and garlic, then add 3/4 cup of the liquid and stir to combine. Taste, adding more liquid if necessary. Let the pulled pork cool to room temperature.
  • Spray 2 baking sheets with nonstick cooking spray. Brush the bottom half edge of an empanada disc with beaten egg, then place 1/4 cup pulled pork in the center. Bring together the bottom and top edges of the disc to form a half moon shape, then place the empanada on a flat surface. Use a fork to press and seal the edges closed, then brush the top with beaten egg. Repeat with the remaining empanada discs and pulled pork and transfer to the prepared baking sheets. Bake until the empanadas are dark golden brown, 17 to 20 minutes.
  • For the guasacaca: Put the vinegar, garlic, jalapeños, avocado, cilantro, onions, sugar and a pinch of salt in a blender and process until smooth. Taste for seasoning and add more salt or sugar, if necessary. The guasacaca can be refrigerated in an airtight container for up to 5 days. Makes 1 3/4 cups (see Cook's Note).
  • Serve the empanadas with the guasacaca if desired.

Steps:

  • Blend all the cashew cream ingredients in a blender until smooth. Set aside.
  • Fry onion and garlic for a few minutes, then add the ground pork and the ground beef, seasoned with salt and pepper. Continue stirring and browning the meat until cooked through, about 3-5 minutes.
  • Add all the fruit, raisins, almonds, and pine nuts, stir to combine, then remove from heat and chill.
  • Poach the poblano pepper, remove the skin. Open and remove the seeds and veins, then cut into strips. Set aside.
  • Preheat oven to 500˚F (250˚C) (or as high as your oven will go).
  • For the empanada dough, mix flour, butter, salt and milk, kneading into a dough. Add egg, then knead until firm.
  • Pinch off a bit of dough and flatten into a circle, adding two strips of chile poblano and the meat filling.
  • Put a bit of water on your finger and wet the edge of half the empanada. Close the empanada and use a fork to seal the edges.
  • Brush with an egg wash before putting on a baking sheet.
  • Bake 20-25 minutes or until golden brown.
  • Top the empanadas with cashew cream and garnish with pomegranate and cilantro.

Tender pork turnovers. Filling can be used for almost anything else, such as taco filling. Can be frozen baked or unbaked. The pork and the empanada dough can be made ahead of time.

2 pounds pork butt roast
1 onion, quartered
2 cloves garlic
½ teaspoon salt
1 teaspoon dried oregano
1 teaspoon ground cumin
2 bay leaves
1 ½ cups all-purpose flour
¾ cup masa harina
1 teaspoon baking powder
¼ teaspoon salt
½ cup lard
1 egg, beaten
½ cup milk
1 cup chipotle salsa

Steps:

  • To make the filling: Place pork in a large pot and cover with water. Add onion, garlic, salt, oregano, cumin and bay leaves. Bring to a boil, reduce heat and simmer for 1 1/2 hours. While pork is cooking, prepare dough.
  • To make the dough: Sift together the flour, masa harina, baking powder and salt. Add the shortening to the dry ingredients and mix well. In a separate bowl, beat together the egg and 1/2 cup milk. Make a well in the center of the dry ingredients. Add the egg mixture and stir with a fork until the dough comes together in a ball. Divide the dough into 16 even pieces and roll each piece into a ball. Place in a container, cover, and refrigerate.
  • Preheat oven to 375 degrees F (190 degrees C).
  • After the pork has simmered for 1 1/2 hours, remove from liquid. Place pork in a baking dish and bake for 1 hour or until meat shreds easily with fork. Remove from oven (keep oven turned on) and shred into small pieces. Add salsa to shredded pork.
  • Lightly grease a baking sheet.
  • On lightly floured surface, flatten a piece of dough with the palm of your hand. With a rolling pin, roll out the dough to make a 5-inch circle about 1/8-inch thick. Place 2 to 3 tablespoons of filling in the center of the dough circle. Brush edges of dough with milk. Fold dough over filling. Pinch edges together. Crimp with fork to seal.
  • Place on prepared baking sheet and repeat with remaining empanada dough. Leftover filling can be frozen or used in tacos, tamales, or burritos.
  • Bake in preheated oven until golden, about 20 minutes. Remove to rack and cool for about 5 minutes. Serve warm.

2 bunches Swiss Chard, washed, ends trimmed, leaves cut in small pieces, stems cut in 1/2-inch dice
1 large white onion, peeled and diced
3/4 cup grated Cotija cheese (or aged Romano or Parmesan)
1/4 cup grated melting cheese (Asadero, Manchego, Panela, Jack)
1 egg beaten, for egg wash
1/2 teaspoon salt (or to taste depending on the saltiness of the cheeses)
1/2 teaspoon freshly ground black pepper
Squeeze of lime
2 cups flour
1/2 teaspoon salt
1/2 cup chilled lard (or substitute 2 tablespoons olive oil unsalted butter)
1 1/2 tablespoons unsalted butter chilled
About 1/3 cup iced water

Steps:

  • To make dough: In a large bowl combine flour, salt, lard, and butter. Mix lightly with your fingers until the dough forms pea-sized pieces. Stir in iced water and lightly knead until dough forms a ball. Wrap in plastic wrap and refrigerate for 1-2 hours or overnight.
  • To make filling: Heat olive oil in a frying pan and add diced onion, salt and pepper. Cook over moderate heat until onions are soft and begin to turn lightly golden. Add chard stems and cook a minute or two then add the chard leaves and cook until tender, about 3-4 minutes. Remove from heat and cool. Mix cooled cooked chard with grated cheeses and taste, adjust seasoning.:
  • To assemble empanadas: On a lightly floured board, roll the dough out to 1/8 inch thickness and cut 6 circles about 5 inches each or 12 smaller circles. Place filling onto half of circle of dough leaving a border and wet the edges of the dough with the egg wash, then fold the dough over to enclose the filling. Seal the edges by pressing the top to the bottom with the tines of a fork. Chill at least 30 minutes before baking.
  • Preheat oven to 350 degrees. Place empanadas on a baking sheet and brush tops with egg wash and sprinkle with freshly cracked pepper. With a sharp knife, cut small slits in the top of each empanada to allow steam to escape. Bake 30 minutes or until dough is golden. Transfer to a cooling rack to cool slightly. Serve warm or at room temperature.

A dash or two of garlic powder
2 tablespoons of crushed red peppers
2 cups of water
1 cup of spicy V-8 or bloody mary mix
Tabasco to taste

  • Combine all ingredients in a large pot. Cook on medium/high for about 30 minutes and then on simmer for 30 minutes.

1/2 cup grated Parmesan
1 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon crushed red pepper flakes
2 1/4 cups pizza sauce
Kosher salt and freshly ground black pepper
1 1/2 cups grated mozzarella
8 ounces spaghetti, cooked and cooled
1 tablespoon olive oil
1 cup cooked, crumbled sausage
5 thinly sliced green bell pepper rings
1/4 cup sliced red onions
1/4 cup sliced black olives
Basil leaves or arugula, for garnish

Steps:

  • Preheat the oven to 400 degrees F.
  • Whisk together the eggs, Parmesan, garlic powder, oregano, red pepper flakes and 1/4 cup of the pizza sauce in a large bowl. Sprinkle with salt and pepper. Add 1/2 cup of the mozzarella and the spaghetti, then toss well to coat the pasta.
  • Heat the olive oil in a 12-inch ovenproof nonstick skillet over medium heat. When the oil is hot, add the spaghetti mixture and spread it evenly over the bottom of the pan. Turn the heat to low and cook just until the edges are beginning to set, about 3 minutes.
  • Pour the remaining 2 cups pizza sauce evenly over the top and spread evenly.
  • Top with the remaining 1 cup mozzarella, sausage, green peppers, onions and black olives. Transfer to the oven and cook until the spaghetti mixture is fully set and the cheese is bubbly, about 12 minutes.
  • Remove from the oven and let sit for 5 minutes. Using a spatula, slide out of the pan. Top with basil. Cut into wedges and serve.

1/4 cup chopped cilantro
3 tablespoons vegetable oil

2 tablespoons fish sauce
1 teaspoon palm sugar or brown sugar
1/2 cup chicken stock
1/3 cup thinly sliced basil leaves

Steps:

  • Combine the chiles, garlic and cilantro in a small bowl and mix well. Heat the oil in a wok, swirling to coat the surface, add the chili mixture and stir-fry until garlic is aromatic, about 1 minute. Add the pork and stir fry, stirring often, until meat is cooked, about 5 minutes. Add the oyster sauce, fish sauce, sugar and chicken stock, toss and stir to combine and heat thoroughly. Stir in the basil leaves and immediately serve over rice.

8 ounces leeks, sliced
1 lb lean boneless pork, cut into 1-inch cubes
5 fluid ounces milk
2 1/2 fluid ounces table cream
2 eggs, lightly beaten
8 ounces frozen puff pastry, thawed according to package directions

Steps:

  • Preheat oven to 400F degrees.
  • Par-boil the leeks for about 5 minutes.
  • Drain well.
  • Fill a pie dish with the leeks and pork and pour in the milk.
  • Cover with foil and bake for about 1 hour (don't worry if it looks curdled).
  • Stir the cream into the eggs, and then pour into the dish.
  • Allow the pie to cool.
  • Increase oven heat to 425F degrees.
  • Roll out the pastry on a lightly floured surface to 2 inches wider than the dish.
  • Cut a 1-inch strip from the outer edge and use this to line the dampened rim of the pie dish.
  • Dampen the pastry rim with water, cover with the pastry lid and seal the edges well.
