TURKEY SAUSAGE CHEESE BALLS
Try this healthified version of a classic favorite using Bisquick Heart Smart® mix and turkey sausage.

Steps:
- Heat oven to 350°F. Lightly grease bottom and sides of 15x10x1-inch pan.
- In large bowl, stir together all ingredients except barbeque sauce, using hands or spoon. Shape mixture into 1-inch balls. Place in pan.
- Bake 20 to 25 minutes or until brown and thermometer inserted in center of ball reads at least 165°F. Immediately remove from pan. Serve warm with sauce for dipping.

Steps:
- Lightly coat a 10-inch skillet with cooking oil spray and set aside.
- Place 3 or 4 paper towles on a plate and set aside.
- In a medium bowl, combine onion, apples, egg white, oats, parsley and spices.
- Add the ground turkey and mix well.
- Shape mixture in eight 2-inch wide patties.
- Preheat the skillet over medium heat.
- Place patties in skillet and cook over medium heat for 10-12 minutes, turning once, until sausage is browned and completely done.
- Transfer patties to paper-towel-lined plate to pat off excess grease.
- Transfer to plates and enjoy with your pancakes or eggs.

HOMEMADE TURKEY BREAKFAST SAUSAGE
I cooked these this morniing and wanted to find ot the nutritional value. They are actually very tasty. After viewing some recipes that advise to cover and refrigerate before cooking, I will prepare again, using that method. My daughter and I enjoyed them. Hope you will too. And as with all of my recipes, there is no salt added. Unfortunately, the site does not recognikze Mrs. Dash, so the sodium levels are alway incorrect.

Steps:
- Combine ground meat with all ingredients, up to and including the nutmeg. Cover the bowl and refrigerate for at least 1 hour or overnight. Form the mixture into 8 patties or links if you prepfer. Two ounc each. When ready to cook. Spray a skillet with cooking spray and heat over med-high heat. Add the oil. When the pot is hot, add the patties and cook for about 4 minutes. Spray the top of the patties and flip, to cook the other side. Cook for an additional 4 minutes or until done. Transfer the patties to a plate lined with paper towel to drain. Serve and Enjoy. 1 serving equals to patties.

- Crumble turkey into a large bowl. Add the salt, sage, pepper and ginger. Shape into eight 2 inch patties. In a nonstick skillet coated with nonstick cooking spray, cook patties over medium heat for 6-8 minutes on each side or until no longer pink and cooked well.

Juicy turkey sausage? Impossible! But it's true - I've worked out a way to add moisture and keep turkey sausage nice and juicy. Try it and see. Just don't use the extra lean ground turkey - it's much too lean. Note: times do not include letting the sausage set overnight.

- Crumble ground turkey into a large mixing bowl.
- Tear bread into large pieces and place in food processor. Add onions and all seasonings. Pulse until everything is in uniform crumbs. Add chicken broth and pulse until combined. The amount of broth will depend on the dryness of your bread - it should have the consistency of oatmeal. (And yes, it looks pretty disgusting).
- Add bread mixture to the turkey in the bowl and combine thoroughly (I use my hands for this). Cover and refrigerate overnight to let flavors blend.
- Heat olive oil in skillet. Shape sausage into 16 patties and fry until cooked through.

I combined different spices to achieve what tastes almost as good, if not better than regular sausage. Be sure to use regular ground turkey (not ground turkey breast, which is too lean so it doesn't have enough moisture). UPDATE: After all the positive reviews, I decided to submit this to Taste of Home's Light & Tasty and they published it in the Dec/Jan 2008 issue. It's also in the Light & Tasty Annual Recipes 2008 Cookbook.

- Combine all ingredients (use less pepper if you don't want a spicy taste) and blend well.
- If time permits, refrigerate overnight to let the meat absorb the flavor of the spices.
- Form into patties and cook as needed, freezing leftovers.

HEART SMART® TURKEY BREAKFAST SAUSAGE
A wonderful low-fat alternative to traditional pork sausages. I've entered the recipe just as written but I prefer to up the oomph with double spices and herbs plus a dose of red pepper flakes. I've also added a smidge of fennel on occassion. I'm guessin' here but you could possibly use just poultry seasoning in place of the assortment of herbs and get a similar flavor. These can be quite dry if you use ground turkey breast (97% fat free). If you're OK with that, so be it. I prefer the 90% lean ground turkey. Still no gravy for those biscuits though ;-) NOTE: Chilling time IS included in prep time.
