CLASSIC POTATO PANCAKES



Classic Potato Pancakes image

This is the classic latke, made with little more than grated potatoes and onions, with egg and flour for binding.

Yield Makes about 24 pancakes

Number Of Ingredients 7

1 medium onion, peeled
4 large russet or Idaho potatoes (about 3 1/2 pounds), peeled
2 large eggs
2 tablespoons all-purpose flour
6 tablespoons vegetable oil
6 tablespoons unsalted butter
Applesauce and/or sour cream, for serving

Steps:

  • Preheat oven to 200°F. Place 2 nonstick baking sheets in oven.
  • Using box grater or food processor fitted with grating disc, coarsely grate onion and place in colander set in sink. Coarsely grate potatoes, add to colander, and set aside to drain.
  • In large mixing bowl, lightly beat eggs, then whisk in flour.
  • Press potatoes and onion to extract as much liquid as possible, then add to egg/flour mixture. Season with salt and freshly ground black pepper. Using wooden spoon or hands, mix well, but do not overwork.
  • In heavy-bottomed, 12-inch skillet over moderately high heat, heat 1 tablespoon oil and 1 tablespoon butter until hot but not smoking. Drop 4 scant 1/4-cup portions of potato mixture into pan and flatten with spatula to form four 3-inch pancakes.
  • Fry until bottoms are golden-brown, 4 to 5 minutes, then turn over and fry until golden-brown and crisp, an additional 4 to 5 minutes. Transfer to paper towels to drain; season immediately with salt and pepper. Keep warm on baking sheets in oven while making remaining pancakes.
  • Using paper towels, carefully wipe out pan. Add 1 tablespoon oil and 1 tablespoon butter and fry 4 more pancakes. Repeat with remaining batter, wiping out pan and adding 1 tablespoon oil and 1 tablespoon butter before each batch.
  • Serve pancakes hot with applesauce and/or sour cream.

Crisp Potato Pancakes with Goat Cheese on Mixed Greens image

An elegant appetizer from Fleur de Lys in San Francisco.

Number Of Ingredients 13

1 tablespoon Sherry vinegar or balsamic vinegar
1/2 teaspoon Dijon mustard
3 tablespoons olive oil
2 tablespoons finely chopped fresh chives
1 tablespoon finely chopped shallot
1 garlic clove, finely chopped
4 cups mixed baby greens
2 russet potatoes, peeled, grated
1/2 teaspoon salt
1/4 teaspoon pepper
1 1/2 tablespoons olive oil
4 ounces soft fresh goat cheese (such at Montrachet), crumbled
4 teaspoons finely chopped fresh chives

Steps:

  • Whisk vinegar and mustard in small bowl. Gradually whisk in oil. Mix in chives, shallot and garlic. Season to taste with salt and pepper. Place greens in large bowl. Set aside.
  • Place potatoes in dry kitchen towel and squeeze to remove as much moisture as possible. Transfer potatoes to large bowl. Add salt and pepper and toss to combine.
  • Heat 1 tablespoon oil in heavy large skillet over medium heat. Mound 1/3 cup potatoes in skillet. using spatula, flatten to 3-inch round. Repeat 3 times, forming 4 pancakes. Top each cake with 1/4 of goat cheese. Sprinkle each with 1 teaspoon chives. Cover each with another 1/3 cup potatoes; press to adhere, enclosing cheese completely and flattening slightly. Cook until bottoms are golden, about 6 minutes. Add 1/2 tablespoon oil to skillet. Turn pancakes over; cook until golden, about 6 minutes.
  • Toss greens with enough dressing to coat. Divide salad among plates. Arrange 1 pancake atop each salad.

ARTICHOKE PANCAKES WITH GOAT CHEESE

3 fresh artichokes
2 lemons, cut in half
Large bowl of ice water
3 large eggs
1/4 cup water
1 teaspoon kosher salt
1/2 teaspoon black pepper
1/3 cup all purpose white flour
2 egg whites
1 tablespoon olive oil
3 tablespoons goat cheese
1 tablespoon sour cream

Steps:

  • Preheat oven to 350 degrees. To prepare the artichokes, place them in a large pot and cover them with cold water. Squeeze the lemons and add the juice and the lemon to the pot and bring to a boil over a high heat. Reduce the heat to medium and cook until they are tender, about 25 minutes. Use the tines of a fork to check for tenderness. Transfer the artichokes to the ice water. When they are cool enough to handle, remove the leaves and the choke (the fine fibrous clump on top of the bottom, in the middle). Trim the edges of the bottoms. Place the artichoke bottoms, eggs and water in a blender or a food processor fitted with a steel blade and blend until creamy. Pour into a mixing bowl and add salt, pepper and flour and combine until pasty. Whip the egg whites in a dry copper or stainless steel bowl until they are creamy and hold stiff peaks. Gently stir into the artichoke mixture. Place a cast iron skillet over a medium high flame and when it is hot, add the oil. Drop dollops (about the size of 2 tablespoons) of batter, a few at a time. When the edges begin to stiffen, turn the pancakes over. Combine the goat cheese and sour cream in a small mixing bowl. Place the pancakes on an oven proof plate and top each one with a large dollop of the goat cheese mixture and place in the oven until the cheese just begins to melt, about 2 minutes.

Steps:

  • Preheat oven to 400°F. Generously butter 11x7x2-inch glass baking dish. Whisk first 7 ingredients in medium bowl to blend. Arrange 1/3 of potatoes in bottom of prepared dish, overlapping slightly and covering completely. Pour 1/3 of cream mixture over. Repeat layering potatoes and cream mixture 2 more times. Bake uncovered until potatoes are tender and top is golden brown in spots, about 1 hour 15 minutes. Serve hot.

4 russet potatoes, peeled and grated
2 eggs
½ cup milk
1 cup all-purpose flour
½ cup grated Parmesan cheese
½ cup shredded Cheddar cheese
¼ cup real bacon bits
1 teaspoon onion salt
1 teaspoon baking powder
1 teaspoon salt
½ teaspoon ground black pepper
¼ cup corn oil
2 tablespoons butter

Steps:

  • Mix together potatoes, eggs, and milk in a large bowl.
  • Stir flour, Parmesan cheese, Cheddar cheese, bacon bits, onion salt, baking powder, salt, and black pepper into potato mixture using a fork.
  • Heat corn oil and butter in a large skillet over medium heat.
  • Spoon about 2 tablespoons potato mixture into per patty into skillet. Cook patties until golden brown, about 4 minutes per side.
  • Drain cooked pancakes on paper towel-lined plate.

Steps:

  • Finely grate potatoes; drain any liquid. Place potatoes in a large bowl.
