These grilled boneless chicken thighs are juicy, tender and full of flavor. Their easy prep makes them perfect for outdoor entertaining. Serve them with anything you like!

2 tablespoons Paprika ((see note 1))
4 Garlic Cloves (, crushed)
4 tablespoons Fresh Flat-Leaf Parsley (, finely chopped (see note 2))
1½ teaspoons Salt
½ teaspoon Ground Black Pepper
⅓ cup Olive Oil
1.5-1.7 pounds Boneless Chicken Thighs ((800 grams))

Steps:

  • In a mixing bowl (or a Ziploc bag), combine paprika, crushed garlic cloves, finely chopped parsley, salt, pepper and olive oil. Give everything a good mix.
  • Add the chicken thighs and coat each one of them with the mixture. Make sure they are all well coated before covering the bowl with cling film (or locking the Ziploc bag). Refrigerate them for at least 30 minutes before grilling.
  • Grill on both sides until they are nice brown and cooked through (see note 4).
  • Best served right away!

1 1/2 Tbsp olive oil or vegetable oil
1/2 tsp garlic powder
1/2 tsp onion powder
1 Tbsp ground paprika
3/4 tsp sea salt
1/2 tsp black pepper
1/2 tsp oregano

Steps:

  • Preheat grill to medium high - ~400F.
  • Make spice mix: In a small bowl mix together all dry ingredients.
  • Add chicken to a large bowl and add olive oil. Toss oil to evenly coat chicken. Add spice mix and toss again to coat. Sit at room temperature ~ 15 minutes.
  • Grill ~ 5-6 minutes on each side or until internal temperature of chicken reaches 165F and juices run clear. Add sea salt to taste. Happy Eating! Beckie

2 tablespoons fresh lemon juice
3 tablespoons extra-virgin olive oil
1 large clove garlic, minced
1 cup lightly packed mixed fresh herbs, such as parsley, cilantro, dill, mint, and chervil, finely chopped
6 boneless, skinless chicken thighs (about 1 3/4 pounds), pounded to make even (optional)
Coarse salt and freshly ground pepper

Steps:

  • Preheat grill to medium-high. Combine lemon juice, oil, garlic, and herbs in a baking dish.
  • Season chicken with salt and pepper and grill, turning frequently, until cooked through, about 10 minutes. Transfer to baking dish and turn to coat with marinade. Serve immediately, or refrigerate chicken in marinade up to 1 day, turning to coat a few times.

This is my first recipe - please be kind! My kids love it and when I take it to a BBQ everyone wants the recipe. It is a variation on one I found in epicurious a while ago. It is very easy and very yummy!!

12 boneless skinless chicken thighs
1/3 cup chopped fresh basil
1/3 cup chopped fresh coriander (cilantro)
1 tablespoon minced ginger
1 tablespoon minced garlic
1 tablespoon minced chili
1 1/2 tablespoons soy sauce
1 1/2 tablespoons fish sauce
1 1/2 tablespoons olive oil
1 1/2 tablespoons brown sugar

Steps:

  • Combine all ingredients except chicken in a bowl.
  • Mix thoroughly.
  • Add chicken and leave to marinate at least one hour, preferably longer.
  • Grill chicken on the BBQ, hotplate or in the griller until golden brown and cooked through.
  • Ususlly you would expect 12 thigh fillets to feed 4 to 6 people- in my family the kids eat 4 each so this recipe serves 3.
