- Preheat oven to 350°. In a large bowl, whisk flour, sugar, cocoa, baking soda and salt. Using a spoon, make 3 wells in the dry ingredients. Pour oil into the first, vinegar into another and vanilla into the third. Slowly pour water over all. Beat on low speed until thoroughly combined (batter will be thin). , Pour into a greased 8-in. square baking dish. Bake until a toothpick inserted in the center comes out clean, 30-35 minutes. Cool in pan on a wire rack. Dust with confectioners' sugar.

- Preheat oven to 350°F. Butter a 9- by 2-inch round cake pan and dust with flour, knocking out excess.
- Whisk together flour, cocoa, baking soda, and salt.
- Beat together butter and brown sugar with an electric mixer until pale and fluffy. Add eggs 1 at a time, beating well after each addition, then beat in vanilla.
- Add flour mixture and water alternately in batches, beginning and ending with flour and mixing just until combined.
- Pour batter into cake pan and bake in middle of oven until springy to the touch and a tester inserted in center comes out clean, 55 minutes to 1 hour. Cool in pan 1 hour. Invert onto a rack, then turn right side up and dust with confectioners sugar.

- In a large bowl, combine the first nine ingredients; beat on low speed for 30 seconds. Beat on medium for 2 minutes. Pour into two greased and floured 8-in. baking pans., Bake at 350° until a toothpick inserted in the center comes out clean, 38-43 minutes. Cool for 10 minutes before removing from pans to wire racks to cool completely., For frosting, in a microwave, melt chocolate; stir until smooth. Let cool to room temperature, 20-30 minutes. Meanwhile, dissolve cocoa in boiling water; cool., In a large bowl, beat butter and confectioners' sugar until fluffy. Add melted chocolate; beat on low speed until combined, scraping sides of the bowl as needed. Beat in cocoa mixture., Place one cake layer on a serving plate; spread with 1-1/2 cups frosting. Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8 inch square pan.
- In a large saucepan, melt together the shortening and cocoa. Remove from heat and stir in sugar and egg. Mix buttermilk with baking soda, salt and vanilla, then blend into chocolate mixture. Beat in flour. Stir in hot water. Pour into prepared pan.
- Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

MOM'S CHOCOLATE COCA-COLA CAKE & FROSTING
This is the recipe my mom used to make my birthday cake when I was a little girl, and the recipe for my son's cake when he requests chocolate. It is very similar to the other Chocolate Coca-Cola Cakes, but the main difference is the little bit of cinnamon that is in it. It is our favorite chocolate birthday cake. For a prettier cake, you can use double-boiler seven minute frosting....it's not chocolate, but it does make a very pretty cake! It is a nice white frosting...almost like a meringue type frosting. Cook time does not include the 7 minutes for the white icing!

- In a large bowl, mix together 2 cups flour, 1/2 tsp cinnamon, and 2 cups sugar.
- In a heavy saucepan combine 1/2 cup margarine or butter, 1/2 cup oil, 3 tbsp cocoa, and 1 cup coke. Bring to a boil. Pour over the dry ingredients mixed earlier. Mix until blended.
- In a small bowl, mix together 1/2 cup buttermilk and 1 tsp baking soda. Then add it to the mixture.
- Add 2 eggs and 1 tsp vanilla and beat inches Then fold in the marshmallows.
- Bake in a 13 x 9 x 2 inch pan for 30 to 35 minutes (or until a toothpick inserted in the middle comes out clean) in a 350 degree oven.
- For the frosting: Place 1/2 cup margarine or butter, 3 tbsp cocoa, and 5 tbsp coke in a saucepan and bring to a boil. Add the confectioners sugar and vanilla. Mix well. If it is too thick, and a drop or two more of coke.
- If you want the white 7 minute frosting: (These ingredients are not listed above!) In the top of a double boiler, combine 1 1/2 cups sugar, 1/4 cup + 1 tbsp cold water, 2 egg whites, 1 tbsp light corn syrup, and a dash of salt. Beat at a low speed of an electric mixer 30 seconds or just until blended. Place over boiling water; beat constantly on high speed 7 minutes or until stiff peaks form. Remove from heat. Add vanilla and beat 2 minutes or until frosting is thick enough to spread.

MOM'S ULTRA QUICK YELLOW CAKE AND CHOCOLATE " DIP"
My pop, well, let's just say he's one of those kinda guys who after the first bite of the main dish says "What's for dessert?" or at 10 pm says, "Mom, how about something sweet?" And the funny thing is, he's not a bit heavy. This cake is really easy, fast, and the "dip" is more of a chocolate sauce, but not like the stuff in a squeeze bottle. This is RICH and DELICIOUS and yes, I can eat it with a spoon. It is meant to be served on a piece of cake, split in two, as soon as it is done. If it cools, it kinda gets crunchy, which as a kid, was alright with me. It does reheat, but looses it's smoothness. Still satisfies me and POP though!

- CAKE: Preheat a 9x13 pan. In a bowl, stir together all ingredients. (No need to do the wet ingredients first then dry.).
- Pour into the pan and bake until a toothpick comes out clean, about 30 minutes.
- DIP: In a med. saucepan, begin to melt the butter. As it melts, add the remaining ingredients, stirring well to combine. Bring to a boil and boil one minute, stirring while it boils. Remove from heat.
- NOTE: It helps to wait until the cake is done to make the dip. The cake will still be warm. Cut that cake slice in half and smother it with the dip and enjoy!

- In a sauce pan, put 2 oleo, cocoa and water.
- Bring to a boil.
- Pour over sugar and flour.
- Mix well.
- Add eggs, buttermilk, cinnamon, baking soda, vanilla.

- FROSTING.
