Panackelty - My Grandma's Baked Corned Beef and Potatoes image

My grandma's recipe, an easy and tasty way mid-week meal made with corned beef, potatoes and onions - simple and packed with flavour. Panackelty is a corruption of the word Pan Haggerty; Panackelty is a baked dish consisting of meat, usually corned beef, bacon or lamb chops, and root vegetables (mainly potatoes and onions) which is left to bake throughout the day in a pot on low heat. Originating in the Sunderland area of North East England, the dish was a favourite of working-class families and was traditionally eaten on Monday as the leftover meat and vegetables from the previous day's meal could be used. A local version of the popular dish of Shepherd's Pie or Cottage Pie. I have a vegetarian recipe for this recipe, Recipe #423399. Historical Note: The families of miners and shipyard workers would often prepare this meal as it could be slow cooked by a housewife during the day while she continued with other household tasks. A hungry worker coming home would also be especially satisfied with the high in fat and carbohydrate content of the dish. There are endless interpretations of the dish, with different families using different ingredients. Other popular panackelty concoctions will include bacon, sausages, black pudding, beef stock, and occasionally pork or lamb chops and additional vegetables such as carrots. The vegetarian version is called Pan Haggerty, and it is thought that the meat version is a corruption of that word.

1 large onion, peeled and thinly sliced
3 -4 large potatoes, peeled and thinly sliced
2 beef bouillon cubes (dissolved in 3/4 pint of water)

Steps:

  • Layer onions, corned beef and potatoes in an ovenproof dish, finishing with a top layer of potatoes, seasoning with salt and pepper between each layer. (My grandma used an old oval enamel dish). Pour over the oxo stock and cover with a lid or foil.
  • Cook in the pre-heated oven, (Gas mark 5/190C/380F) for an hour, removing the lid/foil for the last quarter of an hour, continue baking until the potatoes are browned and cooked.
  • Serve hot with fresh green vegetables.

1 1/2 c caraway rye bread crumbs
1 large egg
1/2 c chopped onion
1/4 c sweet pickle relish
1/4 c creamy russian dressing
1 Tbsp worcestershire sauce
1/4 tsp pepper
32 jar(s) sauerkraut, drained and rinsed
1 1/2 c grated swiss cheese

Steps:

  • 1. Combine the first 8 ingredients. In a sprayed 9x13-inch baking pan, spread 1/2 the mixture . Now evenly spread 1/2 the sauerkraut, 1/2 the cheese, then remainder of corned beef mixture and remaining cheese. Bake at 325^ for 45 minutes.

5 large baking potatoes, peeled, and cut into cubes
1/3 cup sour cream (low-fat is okay)
1/4 cup milk (1% is okay)

5 cups green cabbage, sliced

1/2 teaspoon caraway seed (or to taste)
1/3 cup thousand island dressing

Steps:

  • Set oven to 350 degrees.
  • Grease an 11" x 7" baking pan.
  • Place the potatoes in a saucepan; add water to cover, and bring to a boil; cover, reduce the heat, and simmer for around 20 minutes, or until tender; drain well.
  • In a bowl, combine the cooked potato, sour cream, milk and salt and pepper; beat at medium speed with an electric mixer for 2 minutes, or until smooth; set aside.
  • Heat a skillet (with 2 Tbsp oil) until hot.
  • Add in the cabbage, corned beef, caraway seeds; saute for 4 minutes, or until the cabbage wilts; remove from heat, stir in the salad dressing; set aside.
  • Spread half of the potato mixture into the bottom of the prepared baking dish; top with the cabbage/corned beef mixture, and sprinkle with 1-1/2 cups Swiss cheese.
  • Spread with the remaining half of the potato mixture over the cheese; top with the remaining 1-1/2 cups Swiss cheese.
  • Sprinkle with paprika.
  • Bake (350 degrees) for 35-40 minutes, or until golden.

Steps:

  • Heat oven to 350ºF.
  • Cut 4 bread slices into 1/2-inch cubes; spread onto bottom of 13x9-inch baking dish sprayed with cooking spray. Cover with half the corned beef. Top with layers of sauerkraut, pickles and 1 cup cheese; cover with remaining corned beef and cheese.

1/2 lb corned beef, chopped
1/2 cup thousand island dressing

miniature party rye rounds

Steps:

  • Preheat oven to 400 degrees.
  • Rinse and drain sauerkraut. Place in the bottom of a greased 1 1/2 quart casserole.
  • Mix together dressing and mayonnaise.

  • Bake until it starts to bubble.

1 large onion (minced)
3/4 tsp caraway seeds
2 1/2 c swiss cheese (shredded)
5/8 c thousand island dressing
1 lb corned beef (cooked and sliced very thin)
5 slice dark rye bread (cubed in 1-inch pieces)
1/2 c melted butter
1 tsp deli style brown mustard

Steps:

  • 1. Preheat oven to 375 degrees. Butter a baking 10 inch baking dish. Put about half of the corned beef over the bottom of the baking dish.
  • 2. In a bowl, combine caraway, sauerkraut and onion, mix well. Pour into the baking dish over the corned beef layer, spreading evenly. Put half of the cheese over the mixture in pan. Distribute evenly half of the thousand island dressing over the cheese layer.
  • 3. Put remaining corned beef over dressing layer. Top with remaining cheese, then dressing.
  • 4. Mix the mustard in with the butter, toss the bread cubes in with it to coat as evenly as possible. Put this mixture on top of casserole evenly.

  • Cook your potatoes with a pinch of salt and once cooked mash well. If for children remember no lumps!!! I leave the skins on, not in laziness (Honest). Don't underestimate the skins. When mashed mix in some butter, seasoning and a splash of milk.
  • Fry the finely chopped onion on a medium heat with the butter, fry for about 5 minutes or when they are turning a golden colour and softening. Meanwhile, open the corned beef tin. I don't get on well with corned beef tins, my key always snaps off!! Chop the corned beef roughly and crumble into the dish. When the onion is ready pour over the top of the corned beef.
  • Then pour the tin of baked beans over the top, a squirt of marmite or ketchup or even both and mix thoroughly. Once evenly mixed give a quick flatten with the back of your spoon and dollop the mash potato on top! with a fork spread the potato and add texture, presentation is not important! The grate a generous portion of cheese on top, we are a marmite mad family (well I am) so we tend to streak a small amount on top of the cheese at this point!
  • Bake on the middle shelf for roughly half an hour until the top has started to crisp. Serve with more baked beans, or some beetroot or a salad. Or wait until it is cold and just take it as a packed lunch! It is so easy that you can make it with the kids!

4 cups coarsely shredded cabbage

  • Heat oven to 375°F. Prepare Horseradish Butter; set aside. Melt 2 teaspoons butter in large nonstick skillet over medium heat. Meanwhile, coat bottom and sides of 9-inch glass pie plate with remaining 1 teaspoon butter; set aside.
  • Arrange 1/2 of potato wedges in single layer over bottom of pie plate; stick remaining potato wedges upright around the edge of the pie plate. Combine cheeses in small bowl. Sprinkle potatoes with 1/2 of cheese mixture. Top with corned beef mixture and remaining cheese mixture. Press firmly with spatula to compact layers; cover with aluminum foil.
  • Bake in 375°F oven 25 to 30 minutes or until heated through. Uncover; continue baking 3 to 5 minutes or until cheese is melted and edges begin to brown. Let stand 5 minutes. Cut into wedges.
